TRIPLE CHOCOLATE MINT COOKIES
These Triple Chocolate Mint Cookies are rich and fudgy, with three kinds of chocolate and a double dose of mint in the batter and the chocolate mint chips! Perfect flavors for winter, or any time of year!

- Preheat oven to 350°F. Line two baking sheets with parchment paper or Silpat mats.
- In the bowl of a stand mixer fitted with the paddle attachment (or a large bowl if using a hand mixer) cream together the butter and sugars. Add the eggs, vanilla and mint extracts, and mix until smooth.
- In a separate bowl whisk together the flour, cocoa, baking soda, baking powder, and salt. Slowly pour the flour mixture into the sugar mixture and mix on low until just combined. Stir in the chocolate and mint chips and then refrigerate the dough for about 15 minutes.
- Use a medium cookie scoop or tablespoon to scoop the dough onto the prepared baking sheets, about 2 inches apart. Bake for 8-10 minutes until edges are firm and center is still slightly soft. If you wish to decorate with chocolate mint candies, put them on while the cookies are still warm.
- Allow to cool on the pans for about 5 minutes before moving to wire rack to cool completely (or eat them while they're warm and ooey gooey delicious!)

- Preheat oven to 375°. Cream together butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In a separate bowl, whisk flour, cocoa, salt and baking soda; gradually beat into creamed mixture. Stir in semisweet and bittersweet chocolate chips. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake until set, 8-10 minutes. Cool 2 minutes before removing to wire racks to cool completely. , For frosting, melt white baking chips in a microwave; stir until smooth. In another bowl, beat cream cheese and confectioners' sugar until smooth. Beat in melted chips. Add enough milk to reach desired consistency. Frost cookies; sprinkle with peppermint candies.

- Whisk the flour, baking powder, salt, baking soda, and cloves together in a medium bowl. Melt the butter in a saucepan over medium heat. Remove pan from the heat, add the bittersweet chocolate, then set aside until melted.
- Whisk the eggs, brown sugar, and vanilla together in a medium bowl, then slowly whisk in chocolate. Stir in the flour mixture to make a loose dough. Don't overwork the dough. Fold in the chips. Cover with plastic wrap and refrigerate until firm, about 2 hours.
- Preheat oven to 350 degrees F (or 325 if convection option is available).
- Line a baking sheet with parchment paper. Form dough into balls, about 2 inches or 1 1/2 ounces each, and put on the prepared baking sheets, leaving a couple inches between the cookies. Bake until outside is crackly, but the center is still moist, about 13 to 15 minutes, or 12 in convection. Cool on a rack.

I received this recipe through a cookie exchange years ago, and it has become a favorite of family and friends.

Steps:
- In a saucepan over medium heat, cook the sugar, butter and water, stirring occasionally until melted. Remove from heat, stir in the chocolate chips until melted and set aside to cool for 10 minutes.
- Pour the chocolate mixture into a large bowl, and beat in the eggs, one at a time. Combine the flour, baking soda and salt, stir into the chocolate mixture. Cover and refrigerate dough for at least 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll cookie dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, be careful not to overbake. When cookies come out of the oven, Press one mint wafer into the top of each cookie and let sit for 1 minute. When the mint is softened, swirl with the back of a spoon or toothpick to make a pattern with the green filling of the mint wafer. For smaller cookies, break mints in half.
