TRES LECHES PANCAKES
I wanted to suprise the boys with these for the weekend, but the suprise was on me. ..I couldn't wait, fluffy and moist, they are so good!! Cook time: about 4 minutes each side, but watch them carefully.

Steps:
- 1. Prepare the pancake batter by mixing the cake mix with 1&1/3 cup of milk, 3 eggs, and 3 tablespoons of vegetable oil, set aside.
- 2. In a mixing bowl make the tres Leches by combining the condensed milk, the evaporated milk, and the half and half.
- 3. Heat the oil on the griddle over very low heat. Ladle 1/3 cup of the batter onto the griddle. Let cook 3-4 minutes or until golden brown.
- 4. Check after 2 minutes because the pancakes brown quickly, flip and cook until brown on the other side, transfer to a plate. Butter if desired, spoon tres Leches mixture over each one garnish with fruit and serve.

- Mix milk and vinegar in a medium bowl and allow to sour for 5 minutes.

- Pour ¼ cup of batter onto the skillet and cook until surface is bubbly.
- Flip with spatula and cook until browned on other side.
- Serve with maple syrup (if using) and butter.

- Add the egg mixture to the dry mixture and whisk until combined and no flour streaks remain. Do not overmix. The batter will be lumpy and thick.
- Let the batter rest for about 5 minutes while you preheat your skillet to medium heat (about 350 degrees F).

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
- Sift flour and baking powder together and set aside.
- Cream butter or margarine and the 1 cup sugar together until fluffy. Add eggs and the 1/2 teaspoon vanilla extract; beat well.
- Add the flour mixture to the butter mixture 2 tablespoons at a time; mix until well blended. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Pierce cake several times with a fork.
- Combine the whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
- Whip whipping cream, the remaining 1 cup of the sugar, and the remaining 1 teaspoon vanilla together until thick. Spread over the top of cake. Be sure and keep cake refrigerated, enjoy!
