I wanted to suprise the boys with these for the weekend, but the suprise was on me. ..I couldn't wait, fluffy and moist, they are so good!! Cook time: about 4 minutes each side, but watch them carefully.

1 box french vanilla cake mix
3 eggs
1& 1/ 3 c milk
3 Tbsp vegetable oil
1 can(s) sweetened condensed milk
1 can(s) evaporated milk
1 / 2 c half and half
fresh strawberries, or fruit of your choice

Steps:

  • 1. Prepare the pancake batter by mixing the cake mix with 1&1/3 cup of milk, 3 eggs, and 3 tablespoons of vegetable oil, set aside.
  • 2. In a mixing bowl make the tres Leches by combining the condensed milk, the evaporated milk, and the half and half.
  • 3. Heat the oil on the griddle over very low heat. Ladle 1/3 cup of the batter onto the griddle. Let cook 3-4 minutes or until golden brown.
  • 4. Check after 2 minutes because the pancakes brown quickly, flip and cook until brown on the other side, transfer to a plate. Butter if desired, spoon tres Leches mixture over each one garnish with fruit and serve.

2½ cups milk
3 tbsp white vinegar
1 cup all-purpose flour
2 tbsp white sugar
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 whole egg
2 tbsp melted butter
cooking spray
or any pancake syrup maple syrup

Steps:

  • Mix milk and vinegar in a medium bowl and allow to sour for 5 minutes.
  • Sift together flour, sugar, baking powder, salt and baking soda in large mixing bowl.
  • Whisk egg and butter into soured milk.
  • Fold flour mixture into soured milk and whisk until clumps are gone. Do not overmix.
  • Allow batter to rest in a chilled area for at least 4 hours, preferably overnight.
  • Heat large skillet over medium heat and coat with cooking spray.
  • Pour ¼ cup of batter onto the skillet and cook until surface is bubbly.
  • Flip with spatula and cook until browned on other side.
  • Serve with maple syrup (if using) and butter.

2 teaspoons baking powder (($0.04))
1/4 teaspoon salt (($0.02))
1/2 teaspoon baking soda (($0.01))
1 large egg, slightly beaten (($0.08))
3 tablespoons canola oil (vegetable oil works too) (($0.09))
1 1/2 cups buttermilk (($1.18))

Steps:

  • In a large mixing bowl, combine the flour, sugar, baking powder, salt, and baking soda until well mixed.
  • In another bowl whisk together the egg, oil, and buttermilk until blended.
  • Add the egg mixture to the dry mixture and whisk until combined and no flour streaks remain. Do not overmix. The batter will be lumpy and thick.
  • Let the batter rest for about 5 minutes while you preheat your skillet to medium heat (about 350 degrees F).
  • Scoop the batter by the 1/4 cup measures and round out into circles. Cook for about 1-2 minutes per side or until both sides are golden in color.

1 ½ cups all-purpose flour
1 teaspoon baking powder
½ cup unsalted butter
1 cup white sugar
5 eggs
½ teaspoon vanilla extract
2 cups whole milk
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 ½ cups heavy whipping cream
1 cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
  • Sift flour and baking powder together and set aside.
  • Cream butter or margarine and the 1 cup sugar together until fluffy. Add eggs and the 1/2 teaspoon vanilla extract; beat well.
  • Add the flour mixture to the butter mixture 2 tablespoons at a time; mix until well blended. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Pierce cake several times with a fork.
  • Combine the whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
  • Whip whipping cream, the remaining 1 cup of the sugar, and the remaining 1 teaspoon vanilla together until thick. Spread over the top of cake. Be sure and keep cake refrigerated, enjoy!
