TRAILSIDE OATMEAL COOKIES
Great for taking along on hikes or camping trips. Full of high energy goodies, mixed to your taste. The 2 1/2 cups semi-sweet chips should be a mix of those plus other items of your choice. I use Peanut butter chips, raisins, shredded coconut and nuts along with the semi-sweet chips for a total of 2 1/2 cups.

Steps:
- Preheat oven to 375°.
- In large mixing bowl, with mixer, beat butter and peanut butter until combined. Add sugars, baking soda and salt. Beat until well combined, scraping sides of bowl occasionally.
- Beat in eggs, milk and vanilla until combined.
- Beat in as much flour as you can with mixer. Stir in any remaining flour. Stir in rolled oats and your choice of goodies.
- Drop by rounded teaspoons onto ungreased baking sheets.
- Bake 8-10 minutes or until edges are golden. Transfer to wire rack to cool.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line 3 baking sheets with parchment paper.
- Beat butter and brown sugar together using an electric mixer in a mixing bowl until creamy. Add eggs and mix well. Mix in applesauce and vanilla extract until combined.
- Mix oats, whole wheat flour, baking powder, salt, and cinnamon together in a separate bowl. Stir butter mixture into flour mixture until well combined. Fold in raisins, coconut, sunflower seeds, pumpkin seeds, sesame seeds, and ground flax seed.
- Drop dough by rounded tablespoon onto the prepared baking pans, flattening slightly using a fork dipped in a glass of cold water.
- Bake in the preheated oven until golden and set, 11 to 13 minutes.

BUTTERSCOTCH OATMEAL COOKIES
It's amazing that such a simple recipe can provoke such a wild reception! After taking these to a family gathering, it was the MEN who went over-the-top nuts! After writing the recipe out three times, I thought it would be easier to post it! (This is modified from a 'Magnolia' recipe.)

Steps:
- Cream butter with applesauce; then cream with sugars til smooth.
- Add egg and vanilla; beat well.
- Combine flour, soda, salt, and cinnamon. Add to creamed mixture.
- Mix in oats and chips.
- I used my 2-tsp scoop, slightly overloaded, and dropped on parchment a few inches apart.
- Bake @ 350 degrees -- 11-13 minutes. I watched for a few bumpy tips to begin to turn golden, the edges just beginning to turn, too. 12 minutes was perfect in my oven.
- Cool 5 minutes on cookie sheet. Move to rack to cool completely.
- Original recipe says yield is 36 but I got 60 doing it my way! They were perfect for little hands! (And the big hands felt less guilt reaching for a second -- and a third -- !).
SIDE OF THE TRAIL COOKIES
Steps:
- Preheat oven to 350 degrees F (180 Degrees C).
- In mixing bowl, cream the shortening and peanut butter. Add the brown sugar, eggs, and vanilla. Mix well.
- Combine oats, flour, baking powder, and salt. Add to creamed mixture and mix well.
- Add chocolate chips and mix in well.
- Drop by the rounded teaspoonful unto ungreased baking sheet. Flatten slightly with the bottom of a glass. Bake for 12 minutes or until done.
