CLASSIC BROWNIES
Right in the middle of fudgy and cakey, these easy brownies will make either crowd happy.

Steps:
- Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on at least 2 sides. Butter the foil.
- Whisk together the flour, cocoa powder and salt in a medium bowl. Melt the butter and chocolate in a medium saucepan over medium heat, stirring frequently. Let cool slightly. Stir in the sugar and eggs. Add the flour mixture, and stir to combine. Pour the batter into the prepared pan, and bake until a toothpick comes out with just a few crumbs, 30 to 35 minutes.
- Let the brownies cool completely in the pan on a cooling rack. Use the foil overhang to help lift them out of the pan. Cut into 16 squares. Store in an airtight container at room temperature for up to 3 days.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
- In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
- Bake in preheated oven for 25 to 30 minutes. Do not overcook.
- To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

FIVE-STAR BROWNIES
There's a bit of my state's history behind these brownies' name and shape. In 1990, when I entered them at our state fair, Kansas was celebrating the 100th birthday of a famous native son, Dwight Eisenhower. In fact, that occasion was the theme of the fair. - In a large bowl, beat the eggs, sugar and vanilla until blended. Beat in butter and shortening until smooth. Combine the flour, cocoa and salt; gradually add to egg mixture. EASY MICROWAVE BROWNIES
Make these easy, fudgy brownies in under 15 minutes in the microwave. They're ideal when you need a quick and indulgent dessert.

- Cut the butter into small pieces. Put in a 20 x 20cm microwavable glass or ceramic dish and cook in 20-second bursts in the microwave until melted. Remove, swirl it around the dish to coat the sides, then tip it into a mixing bowl.
- Add the sugar to the bowl and, using a hand or electric whisk, whisk vigorously until the mixture is creamy and fully incorporated into the melted butter.
- In a jug, stir the vanilla extract into the milk along with the beaten eggs. Whisk this, a little at a time, into the sugar and butter mixture, ensuring it's thoroughly incorporated before adding more.
- Sift the flour and cocoa powder together, then fold gently into the cake batter. Finally, stir in the milk chocolate chips.
- Tip the whole mix into the buttered dish and smooth using a spatula to fill the dish. Cook for 5 mins or until the brownies are well-risen and slightly firm to touch. Don't worry if they're still a bit soft in the centre; they will continue to cook for several minutes once out of the microwave.
- Put the hot dish onto a cooling rack and leave for at least 20 mins to firm up. Cut into 8 squares. Will keep in an airtight container for three days.
