Souvlaki is a Greek specialty made with tender cuts of meat. In this pork kebab recipe, the meat is marinated in a lemony olive oil mixture. Serve with rice pilaf and a Greek salad.

- In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
- Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
- Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

Steps:
- Mix together lemon juice, olive oil, soy sauce, oregano and garlic in a large container.
- Add Pork, onions, and peppers mixing well.
- Cover the mixture and put in refrigerator for 3 hours.
- Using skewers that have been soaked in water thread on peppers, onions, and meat.
- Preheat barbecue for medium.
- Lightly oil grate.
- Cook for 10-15 minutes, turning skewers often.
- Cook to desired doneness.

SOUVLAKI
This basic souvlaki recipe is adapted from the website Kalofagas - Greek Food & Beyond.

Steps:
- Cut off any excess fat or membranes from the meat, then cut it into equal sized cubes.
- Toss the meat in a large bowl together with all the marinade ingredients, then refrigerate for a minimum of five hours (best overnight). Also, place the wooden skewers in a shallow container filled with water overnight.
- The next day, take the meat out of the refrigerator and first wait until it comes to room temperature and then skewer it.
- Grill the souvlaki over medium-high heat, about 3-4 minutes per side. Keep warm until ready to serve. Sprinkle the grilled souvlaki with lemon juice, salt, and Greek oregano.
- Serve just with bread, or inside a pita with tzatziki sauce and toppings of your choice.
CHICKEN SOUVLAKI WITH TZATZIKI SAUCE
Greek kabobs. Fantastic flavor for chicken. Marinade can also be used for pork.

- Combine 1/4 cup olive oil, lemon juice, 2 cloves minced garlic, oregano, and 1/2 teaspoon salt in a large resealable bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
- Mix yogurt, cucumber, 1 tablespoon olive oil, vinegar, 1 clove minced garlic, and 1 pinch salt together in a bowl. Refrigerate tzatziki sauce for flavors to blend, 1 to 2 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Soak wooden skewers in a bowl of water for about 15 minutes.
- Remove chicken from marinade and thread onto the soaked skewers. Discard unused marinade.
- Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides and chicken is no longer pink in the center, about 8 minutes per side. Serve with tzatziki sauce.

AUTHENTIC PORK SOUVLAKI
I believe these pork skewers are as close as you'll get to the real Greek style Pork Souvlaki. My family just loves them. It will work just as good with chicken. If you do not have the time to marinate overnight, you can let them sit in the refrigerator for about 2 to 3 hours and it will be just as good.

Steps:
- Soak 8 wooden skewers in water for at least 1 hour.
- In a bowl, toss together pork cubes, lemon juice, red wine vinegar, oregano, thyme, garlic, olive oil, salt and pepper.
- Cover and refrigerate for 3 hours or overnight.
- Place 5 pieces of meat on each skewer.
- Lay on a hot grill and grill slowly (no flame) continuing to brush on marinade, until meat is done.
- Serve immediately in a pita, topped with shredded salad.
- For the shredded salad, toss the green leaf lettuce, onion, tomatoes, olive oil, red wine vinegar, oregano, and salt and freshly ground black pepper, to taste in a large bowl, taste and adjust seasonings.
