MOROCCAN MINT TEA
You can barely take a step in the markets of Marrakech without tripping over fresh mint, or at least without being offered a glass of hot, sweet mint tea. Be sure to lift the teapot high above the cup while pouring; Moroccans appreciate the way this aerates the tea (and they always pour with great panache).

- Put tea in teapot and pour in 1 cup boiling water, then swirl gently to warm pot and rinse tea. Strain out and discard water, reserving tea leaves in pot.
- Add remaining 4 cups boiling water to tea and let steep 2 minutes. Stir in sugar (to taste) and mint sprigs and steep 3 to 4 minutes more. Serve in small heatproof glasses.

Because this drink is so popular, it is served all day long, after every meal and with every conversation. Moroccans take great pride in their tea and will often ask a visitor who among their group of friends makes the best cup of mint tea.

Steps:
- Boil the water and pour a small amount in the teapot, swishing it around to warm the pot.
- Combine the mint and green tea and sugar in the teapot, then fill it with the rest of the hot water.
- Let the tea brew for three minutes.
- Set out glasses for the tea.
- A shot-glass is close to the slender glasses used in Morocco.
- Fill just one glass with the tea, then pour it back in the pot.
- Repeat.
- This helps to dissolve and distribute the sugar.
- Pour the tea.
- You want a nice foam on the tea so always pour with the teapot a high distance above the glasses.
- If you do not have at least a little foam on the top of the first glass, then pour it back into the teapot and try again until the tea starts to foam up nicely.
- Garnish with the remaining sprigs of mint.

MOROCCAN MINT TEA
A traditional drink in the Maghreb and Middle East, mint tea (thé à la menthe or atāy) is made from green tea infused with mint, and is very sweet.

Steps:
- Cut off the mint stems, and wash the leaves.
- Boil the water.
- Place the green tea into a teapot, and pour over 1¼ cups (200ml) boiling water.
- Swirl the teapot several times to rinse the tea well and remove excess tannins which make the tea taste bitter.
- Leave to infuse for 30 seconds, then strain and discard this first liquid.
- Place the mint leaves onto the tea in the pot.
- Place the sugar onto the mint leaves.
- Pour 6 cups (1,5 liters) of simmering water into the teapot, and place it for 1 minute on a low heat, during which time the water should not be allowed to boil.
- To mix, pour some tea into a glass then pour it back into the teapot.
- Repeat the operation several times to oxygenate the tea and let it develop its fragrance.
- Let steep for 3 minutes.
- Stir lightly with a spoon, then serve the mint tea in tea glasses designed to hold hot drinks.
- To froth the tea, pour into the glasses from a height.
