CHINESE BONELESS SPARE RIBS



Chinese Boneless Spare Ribs image

Chinese Boneless Spare Ribs are a fixture on Chinese takeout menus. Savory and sweet, they are oven-roasted and brushed with honey or maltose, and best served on a bed of your favorite fried rice.

2 1/2 pounds boneless pork butt ((sliced ¾" thick into 4"x8" slices; can also use boneless country ribs))
2 cloves garlic ((minced))
3 1/2 tablespoons sugar
2 1/2 teaspoons sea salt
1 teaspoon five spice powder
1/4 teaspoon ground white pepper
2 tablespoons Shaoxing wine
1 tablespoon hoisin sauce
1 tablespoon ground bean sauce
1 tablespoon ketchup
3 tablespoons pineapple juice
1 teaspoon sesame oil
1/8 teaspoon red food coloring ((optional))
2 tablespoons maltose ((or honey, for brushing))

Steps:

  • If your pork is thawed, freeze until firm (but not rock solid, about 45 minutes) for easier slicing. Cut the pork into ¾-inch (2 cm) thick slabs. The size of the pieces depends on the cuts of pork you're using. Mine were about 4x8 inches (10x20 cm).
  • In a large mixing bowl, combine the garlic, sugar, salt, five spice powder, white pepper, Shaoxing wine, hoisin sauce, ground bean sauce, tomato ketchup, pineapple juice, sesame oil, and red food coloring (if using). Mix until everything is well combined and smooth.
  • Add the pork and toss until well coated in the marinade. Cover with plastic wrap or a large sheet pan, transfer to the refrigerator, and marinate overnight (12-24 hours). For maximum flavor penetration and distribution, you can stir the pork a few times during the marinating period, but this step isn't strictly necessary.
  • Once the marinating period is over, let the pork come up to room temperature on the counter for 2 hours.
  • Preheat the oven to 425°F. Line a sheet pan or roasting pan with heavy duty foil (for quick clean-up) and place a metal rack on top.
  • Place the boneless pork on the metal rack, leaving at least 1 inch of room between the pieces. Pour ½ cup of hot water on the bottom of the pan, and transfer to the preheated oven for 15 minutes.
  • After 15 minutes, flip the pork. Return to the oven for another 15 minutes. If the pan is dry, add an additional ½ cup of hot water.
  • Mix the maltose or honey with 2 teaspoons of hot water, and generously brush the pork on both sides. If desired, you can roast the pork under the broiler set to low for a few minutes until the pork is lightly charred and caramelized, but watch closely so they don't burn!
  • After broiling, brush them once more with the maltose (or honey). Rest at room temperature for at least 5-10 minutes before cutting. To serve, thinly slice the pork into lengths, and serve alongside your fried rice of choice.

1/2 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons dark brown sugar
2 tablespoons honey, plus a bit extra to finish
1 tablespoon five-spice powder
1 teaspoon granulated garlic
1 teaspoon grated fresh ginger
1 teaspoon red food coloring
2 racks spare ribs (8 to 10 pounds, St. Louis-style work best), individually sliced into single ribs

Steps:

  • Mix together the hoisin sauce, soy sauce, brown sugar, honey, five-spice powder, garlic, ginger and food coloring in a metal, non-reactive bowl. Pour the marinade into a large zip-top bag, reserving 1/2 cup on the side for basting later. Add the ribs to the bag and marinate, refrigerated, for at least 3 hours, though longer is better and overnight is ideal.
  • Heat a charcoal or gas grill to 275 degrees F for direct and indirect grilling.
  • Remove the ribs from the marinade (discard the marinade) and place onto a wire rack. Place the rack directly on the cooler side of the grill. Cook until the meat is very tender, basting with the reserved marinade 3 times during the cooking process, 2 to 3 hours.
  • Drizzle the ribs with honey, move them to the direct heat side and quickly char each rib to caramelize.

OVEN-BAKED CHINESE SPARERIBS



Oven-Baked Chinese Spareribs image

Get your butcher to cut your ribs in half lengthwise for this terrific rib recipe. This has been a hit at every party I've ever taken it to so now I just bring copies of the recipes with me when it's my turn to provide the appetizer. You can also make a meal out of these with some rice and flash-cooked greens. Prep time does not include marinading time.

2 tablespoons dark soy sauce
2 tablespoons light soy sauce
2 tablespoons honey
3 tablespoons hoisin sauce
1 tablespoon sherry wine
1 tablespoon ketchup
1 clove garlic, chopped fine
1 tablespoon sugar
aluminum foil
2 lbs spareribs, cut in half lengthwise and riblets cut apart

Steps:

  • Combine all ingredients except meat and pour into a heavy-duty plastic reclosable bag.
  • Add spareribs.
  • Marinate overnight, turning several times.
  • Line a shallow pan with aluminum foil.
  • Preheat oven to 350°.
  • Roast spareribs 45 minutes.
  • Turn heat to 325°.
  • Roast 15 minutes longer.
  • When shrinkage occurs, ribs are done.

1 cup ketchup
1 cup tomato juice
1/2 cup brown sugar
1/2 teaspoon liquid smoke
1 teaspoon Worcestershire sauce
1 lime, zest of
1 lime, juice of
1/4 cup cider vinegar
1 dash crushed red pepper flakes
1 dash cayenne
salt and pepper
1/4 cup minced onion
1 clove garlic, minced
1 cup brown sugar
1/2 cup paprika
2 1/2 tablespoons ground black pepper
2 1/2 tablespoons salt (I prefer kosher)
1 1/2 tablespoons chili powder
1 1/2 tablespoons garlic powder
1 1/2 tablespoons onion powder
1 -2 teaspoon cayenne
3 pork spare rib racks (3 pounds or less each)
1 can lager beer (optional)

Steps:

  • At least the night before you make the ribs, if not earlier, combine the BBQ sauce ingredients in a saucepan.
  • Simmer over medium low heat for 1/2 an hour.
  • Chill overnight (keeps several months in the refrigerator).
  • The night before you make the ribs, combine the spice rub ingredients in a bowl, and mix together well.
  • Pat about 1/3 of the total spice rub on the top and bottom of the rib slabs.
  • Allow to sit, refrigerated, overnight.
  • The next day, about 5 hours before dinner, take the ribs out of the fridge, sprinkle top and bottom with about half of the remaining spice rub.
  • Let sit at room temperature for 45 minutes.
  • Take BBQ sauce out of refrigerator and allow to come to room temperature.
  • Heat oven to 200- 225 degrees Fahrenheit.
  • After the ribs sit at room temperature, put them in the oven on a large sheet tray, or indeed several large sheet trays if needed.
  • Bake 4 hours.
  • If the ribs start to look dry, baste them with a little beer.
  • About halfway through cooking time, sprinkle ribs with the rest of the spice rub.
  • about 45 minutes before ribs are done, brush with a fairly liberal amount of the BBQ sauce.
  • Once ribs are done, baste them with more sauce, if you like.
  • Let ribs sit 10 minutes before cutting into individual ribs, or 1/2 slabs, as I prefer.
  • Serve with plenty of extra sauce on the side, and plenty of napkins.

3 tablespoons soy sauce
1/2 cup plum sauce (If you don't have on the shelf, try Plum Sauce, Asian)
2 tablespoons tomato paste
2 tablespoons hoisin sauce
2 tablespoons dry sherry
2 tablespoons ginger, Finely minced
2 tablespoons garlic, minced
2 teaspoons sesame oil
1/8 teaspoon salt
3 lbs pork back ribs
3 tablespoons sugar (white or brown)

Steps:

  • In bowl, whisk together soy sauce, plum sauce, tomato paste, hoisin sauce, dry sherry, ginger, garlic, sesame oil, and salt. Set aside.
  • Preheat oven to 350 degrees Fahrenheit.
  • Rub sugar on all sides of ribs.
  • Place on greased or sprayed rack, in foil lined roasting pan, meat side up.
  • Bake, tightly covered, 1-1/4 hours.
  • Drain juices from pan; remove rack and return ribs to pan.
  • Spread sauce over ribs, turning to coat.
  • Bake, uncovered, 40 minutes or until ribs are tender and glazed, turning and basting twice.
  • Cut into appetizer single-rib servings if desired, or use as a main course. Servings given is for a main course.

3 lb pork rib
1 tbsp garlic salt
1 tbsp sugar
2 tsp salt
1 tsp white pepper
2 tbsp ketchup
2 tbsp Chinese cooking wine
0.5 tsp five spice powder
0.25 tsp red food coloring
2 tbsp maltose/honey

Steps:

  • Create cuts between the bones and along the thick side of the ribs so that the meat takes on the flavors better and that it cooks faster.
  • Rub garlic salt onto the ribs. Make sure to cover all surfaces on both sides. Pay special attention to the slits that you made earlier.
  • In a medium bowl, mix sugar, salt, white pepper, ketchup, cooking wine, five-spice powder, and red food coloring (which is optional). Set aside for the next step.
  • Place ribs in a tray lined with a plastic sheet and spread the marinade thinly onto both sides of the ribs. Wrap ribs with the plastic sheet when finished.
  • For the glaze, you can use maltose or honey. Brush it over the spare ribs and they'll glisten and taste great.
  • Remove ribs from the refrigerator and allow them to rest for about an hour. Preheat the oven to 400 degrees Fahrenheit.
  • After 30-35 minutes of baking, remove the ribs and brush the glaze of choice onto them.
  • Once the ribs have been baking for about 45 minutes in total, take it out and let it rest for 10 minutes.

Steps:

  • Combine crabmeat with cream cheese, steak sauce and garlic powder in medium bowl and blend to a paste.

1/4 cup grapeseed oil or 1/4 cup olive oil
1 onion, peeled and chopped
1 stalk celery, chopped./

1 (750 ml) bottle red wine
6 cups veal stock or 6 cups beef stock

Steps:

  • Preheat oven to 180C (350F).Season ribs to taste with salt and pepper.Heat oil in a large heavy bottomed ovenproof pan over high heat.Add the ribs and brown on all sides.Work in batches if you need to so that the ribs don't get crowded.
  • Transfer the ribs to a plate.Add the onions,carrots and celery to the pan and saute,stirring often until lightly browned,about 5 min.Pour off excess fat,then add the wine,deglazing the pan,scraping all those yummy bits at the bottom of the pan.Reduce the wine by 3/4 until thick and slightly syrupy, about 15min.
  • Return the ribs to the pan,add the stock and enough water to cover the ribs.Bring to a boil,cover with foil,and place in the oven.Braise,cooking in the oven until the meat is fork tender.2 - 2 1/2 hours.Allow the ribs to cool in the liquid,then cover and refrigerate overnight.
  • The next day,remove the excess fat that has solidified at the top of the pan.Place the pan with the ribs and cooking liquid over a medium heat,uncovered. Cook until liquid has reduced by 3/4, about 1 hour.Continue to cook,spooning the sauce over the ribs,until the sauce is thick and the ribs are glazed.Take care not to burn the glaze, move the ribs around in the pan to avoid burning -- Enjoy!
  • Serve with mashed potato, rice or noodles.
