This rich, cheesy side dish is such an excellent meal extender that I always keep it in mind whenever I feel my menu needs a boost. It's a quick and easy casserole to fix...and is always devoured in a hurry! -Shirley McKee, Varna, Illinois

Yield 2 casseroles (12 servings each).

Number Of Ingredients 10

2 packages (1 pound each) wide egg noodles
1/2 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
5 to 6 cups 2% milk
2 pounds process cheese (Velveeta), cubed
TOPPING:
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, garlic salt and onion salt until smooth; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in noodles. , Transfer to two greased shallow 2-qt. baking dishes. Combine the bread crumbs and butter until crumbly; sprinkle over casseroles. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

4 ounces fine egg noodles
1 medium onion, chopped chopped onions
2 tablespoons garlic, minced
3 -4 tablespoons butter
1 cup cottage cheese
1 cup sour cream
1/4 cup grated parmesan cheese
2 teaspoons Worcestershire sauce
1 dash hot pepper sauce
seasoning salt and pepper (or use white salt)
1 teaspoon poppy seed (optional or to taste)
1 teaspoon dill seed (or to taste)
paprika
grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch casserole dish (or you can use a large dish).
  • Cook noodles in a large pot of boiling salted water; drain and transfer to a large bowl then toss with 2 tablespoons butter.
  • Cook onions and garlic in butter until tender.
  • Combine cooked noodles, onion/garlic mixture, cottage cheese, sour cream, worcestershire sauce, hot pepper sauce, salt, pepper, poppy seeds and dill.
  • Transfer into prepared baking dish.
  • Sprinkle with paprika then Parmesan cheese.
  • Bake for 25 minutes, or until done.

16 ounces egg noodles
1/4 cup melted butter
2 cups sliced mushrooms
3 cups 4% cottage cheese, Daisy Brand
2 cups sour cream, Daisy Brand
1 cup pecan halves
1/2 cup green onion, sliced
2 tablespoons dry sherry
2 tablespoons soy sauce
1 tablespoon roasted garlic, minced
1/2 teaspoon ground red pepper
1 cup romano cheese, shredded

Steps:

  • Preheat oven to 350°F.
  • Cook noodles according to package directions, drain. Combine noodles and 1 tablespoons melted butter in a large bowl.
  • Sauté mushrooms lightly in 1 Tbsp .butter, add to noodles.
  • In a medium size bowl, combine cottage cheese, sour cream, pecans, green onions, sherry, soy sauce, minced garlic, and ground red pepper. Add the cottage cheese mixture to the noodle mixture and toss to blend.
  • Pour into a buttered 9x13 casserole dish and sprinkle with shredded Romano cheese,. Bake uncovered at 350F for 25-30 minutes until bubbly.

2 (10 ounce) packages egg noodles
1 tablespoon olive oil
1 tablespoon salt
1 (8 ounce) package processed cheese food (such as Velveeta®), cut into cubes
3 (5 ounce) cans chunk light tuna in water, drained
1 (15 ounce) can peas, drained
2 (10.75 ounce) cans condensed cream of celery soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 teaspoon ground black pepper
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain noodles and return to the pot. Pour olive oil and salt over the drained noodles; stir.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Put processed cheese food cubes into a large, microwave-safe bowl. Heat in microwave, stirring every 30 seconds, until melted and smooth, 3 to 5 minutes; pour over noodles and add tuna, peas, celery soup, mushroom soup, and black pepper. Stir to coat noodles completely; pour into a large casserole dish. Sprinkle Parmesan cheese over the top of the noodle mixture to cover completely.
  • Bake in preheated oven until Parmesan cheese just begins to brown, 20 to 30 minutes.

8 ounces wide egg noodles
1 lb lean ground beef
1/2 cup chopped onion
1 (15 ounce) can tomato sauce
1/2 cup fat free sour cream
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon oregano
3 cups sharp cheddar cheese, divided

Steps:

  • Preheat oven to 350. Lightly grease a 9 x 13" casserole dish; set aside.
  • Cook egg noodles according to package; drain.
  • While noodles boil, cook and crumble lean ground beef and onion in a skillet. Drain off any excess fat and return to skillet.
  • To the cooked drained beef mixture, add the tomato sauce, ff sour cream, salt, pepper, garlic powder, oregano and TWO cups of the sharp cheddar; mix well and heat over low heat until cheese begins to melt.
  • Stir in the cooked drained egg noodles; pour all into the 9 x 13" casserole dish.
  • Sprinkle with the remaining 1 cup of sharp cheddar.
  • Bake at 350 for 25-30 minutes.
