Trader Joe S Corn Salsa Recipes
TRADER JOE'S ROASTED TOMATO SALSA
By reading the ingredients listed on a container of Trader Joe's roasted salsa, I was able to compose a recipe. What we like about this recipe is that because you choose the type of chili used, you can control the amount of heat. (I do know that one of the chilis used in the original Trader Joe's version is jalapeno-fyi.) For our version, we added one dried chipotle, which I re-hydrated and one roasted Thai pepper.

Steps:
- Add all ingredients to a blender or food processor and,using the PULSE function, blend salsa to desired consistency. Trader Joe's version is semi-chunky. If it helps, add more tomato juice or water if the salsa is too thick and won't blend.
- Note that all the amounts for the ingredients are estimated.
- Serve salsa at room temperature.
- Note: prep time does not include roasting the vegetables.

- If using fresh corn, place 2 ears at a time in the microwave and cook for 5 minutes on high power. Carefully, with oven mitts, remove corn from microwave and allow to cool for 5 minutes. Repeat with remaining 2 ears of corn. When cool enough to handle, pull off husks and silk. Lay corn on it’s side and cut kernels from cobs, rotating the ear of corn as you go. Transfer corn to a medium size bowl.
- Add diced onion, red bell pepper and finely chopped jalapeño to bowl with the corn. Stir to combine.
- Combine vinegar, sugar, mustard seeds, coriander, cumin, crushed red pepper and salt in a medium size, microwave safe bowl. Stir well to combine. Microwave on high power for 1 minute.

- Combine mustard seed, coriander, crushed red pepper, salt and pepper in a small bowl. Set aside.
- Remove corn kernels from cobs of corn until it measures 4 cups (about 4 large cobs). Set aside. Finely chop the red pepper, jalapeno and red onion and set aside.
- In a medium saucepan, bring vinegar, white sugar and water to a boil. Add spice mix, red pepper, jalapeno pepper and red onion. Add 1/2 of the fresh corn kernels (about 2 cups). Stir well to combine. Return mixture to a boil, the reduce heat to medium-low and simmer for 10 minutes.
