MIXED BABY GREENS SALAD WITH MANDARIN ORANGES



Mixed Baby Greens Salad with Mandarin Oranges image

1 bag mixed baby greens, 10 ounces
1 can mandarin oranges, drained
1/4 English or European seedless cucumber, thinly sliced
2 tablespoons rice wine or white vinegar, eyeball it
2 teaspoons sugar
3 tablespoons vegetable oil, eyeball it
1 teaspoon toasted sesame oil
Sesame seeds, for garnish, 2 tablespoons
Salt and freshly ground black pepper

Steps:

  • Combine greens, oranges and cucumber in a salad bowl. In a small bowl, combine vinegar and sugar. Whisk in vegetable oil and sesame oil. Pour dressing over salad. Add sesame seeds, salt and pepper and toss.

1 cup seedless red grapes, halved
1/2 cup slivered almonds, toasted
DRESSING:
1/4 cup vegetable oil
3 tablespoons sugar
3 tablespoons lemon juice
1/4 teaspoon grated lemon zest
Dash salt and pepper

Steps:

  • In a large bowl, gently toss the romaine, oranges, grapes and almonds. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat.

POPPY SEED DRESSING:
1/2 cup canola oil
6 tablespoons cider vinegar
3/4 cup sugar
1 small onion, quartered
1/2 teaspoon ground mustard
1/4 teaspoon salt
1 teaspoon poppy seeds
SALAD:
10 cups torn salad greens
1 can (11 ounces) mandarin oranges, drained
6 bacon strips, cooked and crumbled
2 to 4 tablespoons slivered almonds

Steps:

  • In a food processor or blender, combine the oil, vinegar, sugar, onion, mustard and salt. Cover and process until smooth. Stir in the poppy seeds, In a salad bowl, combine the greens, oranges, bacon and almonds. Drizzle with dressing and toss to coat. Serve immediately.

5 cups bite-size pieces lettuce (Bibb, romaine, red leaf)
1 cup sliced mushrooms (3 ounces)
1 cup bean sprouts
1/3 cup sliced red onion
2 teaspoons sesame seeds, toasted

Steps:

  • Place orange segments in shallow glass or plastic dish. Pour Orange-Sesame Dressing over oranges. Cover and refrigerate at least 15 minutes. Toss lettuce, mushrooms, bean sprouts and onion in large salad bowl. Spoon oranges and dressing onto salad toss lightly. 1/4 cup sesame seeds
1 teaspoon cumin seeds
2/3 cup freshly squeezed orange juice
3 tablespoons red-wine vinegar
1 teaspoon coarse salt
1 teaspoon sugar
1/2 cup extra-virgin olive oil
Freshly ground pepper
1 1/2 to 2 pounds crisp lettuces (such as romaine, radicchio, and frisee), cleaned, finely sliced, or torn into bite-size pieces (20 to 24 cups)

Steps:

  • In a small dry skillet over medium heat, toast the sesame seeds, shaking the pan until they are fragrant, 2 to 3 minutes, and set aside to cool.
  • Repeat step 1 with the cumin seeds, and then grind the cumin seeds in a clean spice grinder or with a mortar and pestle until fine.
  • In a medium bowl, whisk together the orange juice, red-wine vinegar, salt, and sugar. Gradually whisk in the olive oil, adding in a fine stream, until emulsified. Whisk in the ground cumin, and season with pepper to taste. Drizzle the dressing over salad, and sprinkle toasted sesame seeds over the top.

¾ cup vegetable oil
1 tablespoon honey
½ teaspoon salt

¼ cup chopped green onion
1 large head romaine lettuce, torn into bite-size pieces
3 oranges, peeled and thinly sliced

Steps:

  • In a small container with a tight-fitting lid, combine the vinegar, oil, honey, salt, pepper and green onion. Close the lid, and shake vigorously to blend.
  • Place the romaine lettuce into a large serving bowl. Sprinkle with dressing and toss to coat. Add orange slices and toss gently. Serve immediately.
