12+ DESSERT TORTILLA WRAPS (VIRAL TORTILLA TREND)
Steps:
- Make a cut - from the center of the tortilla to the edge
- Decide how many folds you want: Whether you want 3 or 4 sections will change how you fill the tortilla wrap, you need to know this in advance. To add the fillings, divide the visual area of the wrap by the number of fillings you want. If you imagine the wrap to be like a clock-face and have the cut facing down towards 6 pm, then for 4 layers 1-3,3-6,6-9, and 9-12 will be the separate sections (with 1-6, i.e., the half on the right of the cut as your two outer layers). For three parts, then, 6-10, 10-2, and 2-6 will be where the layers are (with 10-6 as the outer layers). Use the images/video as a reference
- Fold the tortilla - begin by folding the wrap upwards from the left side of the cut you made until it covers an entire section of filling and then repeat until you have a completely folded tortilla.
- Heat it (optional): for a homemade dessert quesadilla use a sandwich press, grill, or hot skillet and lightly heat for 1-2 minutes on each side, or until lightly browned. You can do this step with or without oil/butter.

OLD GLORY #1 - TORTILLA DESSERT WRAPS (OR PINWHEELS)
Memorial Day is almost here & soon after July 4th. It's time to share dessert options inspired by the red, white & blue of "Old Glory". I love using tortillas creatively & am posting 2 related ideas today. I was very detailed w/the prep instructions, but this is truly much easier to do than it may appear. Even if hard to do, it would be worth the time & care taken to make "Old Glory #1" the patriotic star attraction of your holiday get-together for family or friends! (Time does not include refrigeration time)

- Use a sharp knife to trim the curved edges of 2 opposite sides of the flour tortillas to a 6-in width (Easy to do 3 at a time, makes spreading the ingredients a uniform process & makes slicing easy in equal segments). Set prepared tortillas aside & cover w/a slightly moistened kitchen towel or washcloth.
- Mix cream cheese w/powdered sugar till well-combined & smooth. Divide mixture into 3 equal portions in separate bowls.
- Add 3 tbsp strawberry preserves to the 1st bowl & mix well. Add 3 tbsp blueberry preserves to the 2nd bowl & mix well. Cut banana in sml pieces, add to the 3rd bowl & mash into cream cheese mixture till fully incorporated & smooth.
- "Eyeball" the strawberry & blueberry mixtures for desired color. If a darker color is desired, add food coloring 1 drop at a time till you're happy w/the color.
- Assembly: Put 1 pre-cut tortilla on your work surface & spread 1/3 of the strawberry mixture over the tortilla surface. Place a 2nd tortilla 1-in to the right (keeping the end cuts lined up) & spread 1/3 of the banana mixture over the tortilla surface. Place a 3rd tortilla 1-in further to the right (lined up again) & spread 1/3 of the blueberry mixture over the tortilla surface.
- Begin w/the tortilla flat on the work surface & roll them together into a circular log. The log will be fairly substantial in size & should be compact, but not so tight that your filling wants to "escape". Wrap ea log snugly in foil or plastic wrap, so they do not come apart & their shape is retained. Repeat assembly steps w/rest of tortillas & ingredients. Refrigerate tortilla logs at least 2 hrs or put in your freezer for at least 1 hours.
- Remove from refrigerator or freezer & cut logs immediately w/a very sharp knife into 3-in servings (6), 2-in servings (9) or 1-in pieces (18). Serve immediately or refrigerate covered in plastic wrap till ready to serve.
- Serving Suggestion: Put on serving platter w/dish of cool whip & garnish w/banana slices + halved fresh strawberries & fresh blueberries. I bet kids would like a dish of red & blue M&M's on the side too!

Quick, simple and delicious. These Dessert Tortilla Wraps take less than 15 minutes to make and are bursting with flavours.

- For the Amarula Filling: In a medium bowl, mix the cream cheese and Amarula together until smooth.
- In a separate bowl, whip the cream until soft peaks form.
- Add the whipped cream, icing sugar and cornstarch(optional) into the Amarula filling then set aside.
- For the Dessert Tortilla Wraps: Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, then starting from the center, cut down the seam, ending at the 6 o'clock position.
- Imagine the tortilla is split into 4 equal sections. Quadrant 1 is bottom left. Spoon a dollop of Amarula filling in this quarter and spread evenly with a spoon.
- Quadrant 2 is top left. Arrange raspberries in an even layer in this section.
- Quadrant 3 is top right. Smear one tablespoon of chocolate spread in the section.
- Quadrant 4 is bottom right. Arrange the mini marshmallows in a single layer in this section.
- Fold Quadrant 1 onto Quadrant 2, then into 3 and lastly into 4. You'll end up with a triangle, almost resembling an open ended samosa.
- Heat a knob of butter in a nonstick frying pan on a medium heat.
- When the butter starts sizzling, place the wrap in the pan and fry for 90 seconds on each side, or until crispy and golden brown.
- Drizzle with more chocolate, raspberries and marshmallows and serve immediately with a glass of Amarula Ethiopian Coffee Cream Liqueur. Enjoy!

- Preheat a grill to low.
- Spread almond paste evenly on each tortilla.
- Sprinkle 1/4 of the marshmallows and 1/4 of the chocolate chips and 1/4 of the coconut on half of each tortilla.
- Roll the tortilla up and wrap in heavy-duty foil; seal tightly.
- Grill over low heat until heated through, about 5 to 10 minutes.
- Remove foil and place on a plate.
- Garnish with fresh sweetened whipped cream or prepared whipped topping.
- Serve vanilla ice cream on the side.

This recipe is from Paula Deen & friends. I love this recipe because of all the good stuff in it. Almonds are low in saturated fat and contain many other protective nutrients. I usually grind the Almonds myself, I like it to be slightly course.

- Crumble 2 tablespoons of almond paste evenly over each tortilla. Sprinkle one-fourth pf the marshmallows, one-fourth of the chocolate chips, and one-fourth of the coconut on half of each tortilla. roll up the tortillas, wrap in heavy-duty aluminum foil and seal tightly.
- Cook in the coals for about five to eight minutes, until the chocolate is melted. Remove the foil and place it on a plate. Garnish with whipped cream.
