I got this recipe from an app on my iphone. Note the picture has the rice under the beef biryani instead of in it. My husband likes it that way but it should be mixed in.

2 1/2 lbs sirloin beef (cut in 1 1/2-inch cubes)
1 teaspoon cumin powder
1 teaspoon cardamom powder
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon ginger, grated
1 garlic clove
1 onion
1 cup plain yogurt
1 cup water
3 cups cooked rice
1 cup green peas (fresh or frozen)
1/2 teaspoon saffron
2 tablespoons cilantro
salt and pepper

Steps:

  • In a plastic bag, mix flour, salt and pepper. Add cubes of beef and shake until meat is well covered.
  • Saute beef with oil in a large pan.
  • Put meat in slow cooker.
  • Saute sliced onion in the pan until slightly colored. Add crushed garlic and spices, and cook for 3 minutes.
  • Put in slow cooker, add yogurt and water and mix well.
  • Cook on LOW for 6 to 8 hours.
  • Add cooked rice, green peas and saffron. Cook for 30 minutes.
  • Garnish with chopped cilantro and serve.

1 kg long-grain basmati rice
1 kg beef, clean and cut into average sized pieces and boiled with turmeric powder,black pepper and salt to tas
1 kg onion, sliced
1 kg tomatoes, washed,peeled and chopped into small pieces
1 cup oil
1 cup ghee
2 maggi chicken bouillon cubes
3 teaspoons red chili powder
1/2 teaspoon turmeric powder
3 teaspoons coriander powder
2 tablespoons ginger-garlic paste
50 g cashews
50 g pistachios
50 g fresh coriander leaves, washed and chopped
8 -12 green cardamoms
4 bay leaves
15 whole black peppercorns
30 g mint leaves
salt

Steps:

  • Heat oil in a wok.
  • Fry the boiled beef in the hot oil until it turns brown on either side.
  • Remove the fried beef and allow the excess oil to drain on clean paper kitchen napkins.
  • Add all the onions to the hot oil, except for 2 sliced onions, and stir-fry briefly (about 7-10 minutes).
  • Add turmeric powder, chilli powder, corriander powder, cardamoms, bay leaves and half the black peppercorns.
  • Mix well until it forms a dry paste.
  • Stir in the chicken stock.
  • Add tomato slices and cook until the water in the tomato dries up and oil floats on the top.
  • Put the fried beef lightly crushed by hand into it.
  • Mix in the salt as per your taste.
  • Allow it to cook on low flame until cooked.
  • While it is cooking, heat oil in a skillet.
  • Fry the remaining onions in it until they turn light brown.
  • Remove from heat.
  • Add the remaining peppercorns, bay leaves and green cardamoms to the same oil.
  • Then, toss in the cashewnuts and pistachios and fry until lightly golden brown and aromatic.
  • Add the drained rice to the oil and mix well.
  • Add 5 glasses of water and a pinch of salt.
  • When the rice comes to a boil, reduce flame and keep it covered.
  • As the water gets absorbed by the rice, remove half of it and put the prepared beef curry on top.
  • Garnish with mint leaves, corriander leaves, cashewnuts, fried onions and pistachios.
  • Spread the remaining rice on top of this and give one more layer of garnish.
  • Keep it on low flame, covered, for 10 minutes, and let it cook.
  • All the flavours will blend most beautifully!
  • Serve this awesome complete meal hot!

Martha's version of this classic dish layers succulent beef short ribs with caramelized onions and colorful spiced basmati rice -- it's fit for any celebratory meal.

5 pounds boneless beef short ribs, trimmed of excess fat
3 cloves garlic, finely chopped
1 tablespoon peeled and finely chopped fresh ginger
1 tablespoon Biryani Spice Blend
12 cups homemade or store-bought low-sodium chicken stock
2 tablespoons vegetable oil
Spiced Tomato Sauce
Spiced Rice with Peppers and Peas
Caramelized Onions with Ginger
Chopped fresh cilantro, for garnish

Steps:

  • Place beef in a large pot with garlic, ginger, spice blend, and chicken stock. Bring to a boil; reduce to a simmer and cook, uncovered, until tender, 3 to 4 hours. Remove meat from pot and transfer to a rimmed baking sheet, reserving the cooking liquid. Let meat dry, 2 to 3 minutes.
  • Heat oil over medium-high in a Dutch oven or braiser. Working in batches, sear beef until browned all over, then return to baking sheet. Set Dutch oven aside to cool slightly. Using two forks, shred beef into 2-inch chunks. Return pot to low heat and add 2 cups reserved cooking liquid, stirring to deglaze. Add beef and tomato sauce, then bring to a simmer, cover, and cook for 15 minutes, stirring in additional reserved cooking liquid if the sauce becomes dry.
  • To serve, transfer half of the rice to a large shallow serving dish. Top with half of the meat mixture. Cover with remaining rice, then spoon remaining meat mixture on top. Garnish with caramelized onions and cilantro.

5 lbs goat meat or 5 lbs chicken
4 tablespoons canola oil
3 medium onions
2 teaspoons garlic paste
2 teaspoons ginger paste
2 (14 1/2 ounce) cans diced tomatoes
1/4 cup yogurt
1 teaspoon chili powder
10 whole cloves
8 green cardamom pods
4 black cardamom pods
10 black peppercorns
1 teaspoon cumin powder
2 teaspoons coriander powder
2 teaspoons garam masala
2 teaspoons curry powder
1 cinnamon stick
4 teaspoons salt
2 bay leaves
10 dried plums
4 fresh green chilies
2 tablespoons fresh cilantro
1 pinch saffron
9 cups basmati rice
15 cups water

Steps:

  • Soak rice for half an hour.
  • Cook in rice cooker with 15 cups of water. Cook rice until almost done.
  • Fry onions in oil until golden brown.
  • Add ginger and garlic.
  • Add chili powder, cloves, cardamom, pepper corn, cumin, curry, graham masala, coriander, cinnamon stick, bay leaves, dried plums, and salt.
  • Add yogurt.
  • Add tomatoes and cook until dry.
  • Add meat.
  • Add green chiles.
  • Cook until meat is done and add water if needed.
  • Add cilantro.
  • Mix saffron with hot water.
  • Layer rice and meat mixture and sprinkle with saffron mixture.
  • Put in oven at 350°F for 20 minutes.

  • Cut the onion in half and set one half aside for later. Cut the remaining half into quarters. Place in the food processor with the garlic, cilantro, and ginger. Puree until smooth, adding a little water if needed. Set aside.
  • In a large ovenproof pan over medium low heat, melt 1/2 tablespoon butter and 1/2 tablespoon oil. Cut the reserved half onion into thin slices and add to the pan. Caramelize/fry onion until golden brown and sweet tasting, about 15 minutes. Add the almonds and raisins and stir fry until everything is slightly softened, toasty, and golden nummy. Set aside.
  • Return the pan to the stove and melt the remaining 1/2 tablespoon butter and oil over medium high heat. Add the steak pieces – sear them so that they get nice and browned on all sides, about 5 minutes. Transfer to a plate. Wipe excess grease out of the pan; add the simmer sauce from step one to the pan. While it simmers, measure the spices and add them to the pan. Stir fry until very fragrant, about 3 minutes. Add the yogurt and about 1 cup water and stir until smooth. Add the browned beef back to the pan with the simmer sauce. Cover and simmer gently for 1 hour.
  • While the beef is simmering (yum!) soak the rice in cold water and then rinse thoroughly to remove the starch – this helps it from being too sticky later on. Heat 3 cups of beef broth in a saucepan and bring to a low boil. Add the rinsed rice and simmer, covered, for 5-10 minutes. The rice should be partially cooked but it’s okay if it’s still a little raw. It will finish cooking in the oven. Drain off the liquid and set aside. Preheat the oven to 350 degrees.
