THE BEST TOMATO SAUCE
There are about as many versions of tomato sauce as there are cooks in the world. The Italian-American heritage of one of our test-kitchen team members informed the development of this recipe, leading us to a version of her family's favorite tomato sauce. A variety of canned tomatoes adds richness. A long simmer helps the flavors meld and results in a sauce that is perfect on pasta or nestled around chicken cutlets or meatballs.

- Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
- Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
- Finely chop the reserved browned garlic cloves and add to the sauce.
- Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

- Blanch the tomatoes in boiling water. Remove the tomatoes from the water and peel. Remove the core and finely dice. Rinse the rosemary and pat dry. Remove the leaves from the rosemary and finely chop. Rinse the chili, remove the stem, and finely chop. Remove the seeds if you'd like a milder sauce. Heat the olive oil in a pan. Sauté the rosemary, garlic and chili for 1-2 minutes, stirring constantly.
- Add the tomatoes and 50 ml (approximately 2 ounces) of water and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.
- Mix the flour with 1 tablespoon of water and the cream. Add to the sauce, and simmer for 3-5 minutes over low temperature. Season to taste with salt, pepper, and sugar.
ROSEMARY CHICKEN WITH TOMATO SAUCE

- Heat half the oil in a non-stick pan, then brown the chicken all over. Add half the chopped rosemary, stir to coat, then set aside on a plate.
- In the same pan, heat the rest of the oil, then gently cook the onion for about 5 mins until soft. Add the garlic, anchovies and remaining rosemary, then fry for a few mins more until fragrant. Pour in the tomatoes and capers with the wine, if using, or 75ml water if not. Bring to the boil, then return the chicken pieces to the pan. Cover, then cook for 20 mins until the chicken is cooked through. Season and serve with a crisp green salad and crusty bread.

- Heat 1 tsp oil in a large frying pan. Add the meatballs and cook, turning often, until browned. Remove from the pan.
- Tip the onions into the pan with the remaining oil and a pinch of salt and cook until very soft, 10-15 mins. Add the garlic and rosemary and cook for 2 mins more.
- Add the tomatoes and return meatballs to the pan. Simmer for 10 mins until the sauce has thickened and the meatballs are cooked through. Season and serve with the pasta, sprinkle with rosemary.

- Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt.
- Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
- Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.

- Cook bacon in 10-inch skillet over medium heat, stirring occasionally, until crisp, 8 to 10 minutes. Using slotted spoon, transfer bacon to paper-towel-lined plate. Pour off bacon fat from pan and discard.
- Return skillet to medium-high heat. Add oil, swirl to coat pan, and add garlic, rosemary, and pepper flakes. Cook, stirring constantly, until garlic is fragrant but not browned, about 30 seconds.
- Stir in tomatoes and cook until tomato pieces lose their shape to form chunky sauce, about 10 minutes.
- Stir in parsley, salt, pepper, and sugar to taste.
- Toss sauce with pasta and serve, sprinkling Parmesan and reserved bacon over individual bowls.

- Meanwhile, place a skillet or sauté pan on the stove over medium heat. Add olive oil, sliced garlic, and fresh minced rosemary to the pan, (if using dried rosemary don't add it yet.) Gently cook the herbs until the garlic begins to sizzle. Add the tomatoes to the pan, squishing the tomatoes into smaller sized chunks, or use a knife to cut the tomatoes up. If using dried rosemary add it after you have added the tomatoes. Add a pinch of kosher salt and a little of freshly ground pepper. Cook the tomato sauce, stirring occasionally, at a gentle simmer for 10 to 12 minutes.
- When the water comes to boil add 1 teaspoon of Kosher salt and the pasta to the pot. Cook the pasta according the directions on the back of the box. You will need to stir the pasta frequently while it cooks to prevent the pasta from sticking together. Cook the pasta to al dente and drain the water. Return the pasta to the pot.
