THE BEST TOMATO SAUCE

The Best Tomato Sauce image

There are about as many versions of tomato sauce as there are cooks in the world. The Italian-American heritage of one of our test-kitchen team members informed the development of this recipe, leading us to a version of her family's favorite tomato sauce. A variety of canned tomatoes adds richness. A long simmer helps the flavors meld and results in a sauce that is perfect on pasta or nestled around chicken cutlets or meatballs.

Provided by Food Network Kitchen

Categories     condiment

Time 1h50m

Yield 12 cups

Number Of Ingredients 13

1/2 cup extra-virgin olive oil
6 cloves garlic
1 medium onion, diced
One 28-ounce can whole San Marzano tomatoes
One 28-ounce can crushed tomatoes
One 14-ounce can tomato sauce
2 tablespoons tomato paste
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 piece Parmesan rind, optional
1 sprig basil

Steps:

  • Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
  • Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
  • Finely chop the reserved browned garlic cloves and add to the sauce.
  • Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

MARCELLA HAZAN'S TOMATO SAUCE

Marcella Hazan's Tomato Sauce image

This is perhaps the most famous recipe created by Marcella Hazan, the cookbook author who changed how Americans cook Italian food. It also may be her easiest. Use your favorite canned tomatoes for this and don't be scared off by the butter. It gives the sauce an unparalleled velvety richness.

Provided by The New York Times

Categories     easy

Time 1h

Yield 4 servings

Number Of Ingredients 4

2 cups tomatoes, in addition to their juices (for example, a 28-ounce can of San Marzano whole peeled tomatoes)
5 tablespoons butter
1 onion, peeled and cut in half
Salt

Steps:

  • Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt.
  • Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
  • Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.

FRESH TOMATO SAUCE WITH ROSEMARY AND BACON

Fresh Tomato Sauce With Rosemary and Bacon image

Pancetta can be substituted for the bacon. Any short tubular pasta is well suited to this sauce. If your tomatoes are tart, you may need to add up to 1/2 teaspoon sugar. From a back issue of Cooks Illustrated.

Provided by SusieQusie

Categories     One Dish Meal

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

6 slices bacon, cut crosswise into 1/2-inch strips
2 tablespoons extra virgin olive oil
2 medium garlic cloves, minced (about 2 teaspoons)
1/2 teaspoon fresh rosemary, minced
3/8 teaspoon hot red pepper flakes, to taste
3 lbs ripe roma tomatoes, cored, peeled, seeded, and cut into 1/2-inch pieces (about 3 3/4 cups)
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon granulated sugar (optional)
2 ounces parmesan cheese, shredded (about 3/4 cup)
16 ounces fusilli, cooked

Steps:

  • Cook bacon in 10-inch skillet over medium heat, stirring occasionally, until crisp, 8 to 10 minutes. Using slotted spoon, transfer bacon to paper-towel-lined plate. Pour off bacon fat from pan and discard.
  • Return skillet to medium-high heat. Add oil, swirl to coat pan, and add garlic, rosemary, and pepper flakes. Cook, stirring constantly, until garlic is fragrant but not browned, about 30 seconds.
  • Stir in tomatoes and cook until tomato pieces lose their shape to form chunky sauce, about 10 minutes.
  • Stir in parsley, salt, pepper, and sugar to taste.
  • Toss sauce with pasta and serve, sprinkling Parmesan and reserved bacon over individual bowls.

Gently cook the herbs until the garlic begins to sizzle. Add the tomatoes to the pan, squishing the tomatoes into smaller sized chunks, or use a knife to cut the tomatoes up. If using dried rosemary add it after you have added the tomatoes. Add a pinch of kosher salt and a little of freshly ground pepper. Cook the tomato sauce, stirring occasionally, at a gentle simmer for 10 to 12 minutes.
