TUSCAN TOMATO & BREAD SALAD

- Place the tomatoes and mozzarella in a large bowl. Put the garlic, mustard, vinegar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a 1-cup glass measuring cup and slowly whisk in the 1/2 cup of olive oil. Set aside.
- Heat the remaining 1/3 cup of olive oil in a large (12-inch) saute pan until hot but not smoking. Add the bread cubes and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Saute over medium to medium-high heat for 5 to 8 minutes, tossing occasionally, until the bread is evenly browned and crisp. Add the warm bread to the tomatoes and mozzarella. Add enough of the vinaigrette to moisten all the ingredients. Add the basil, sprinkle with salt and pepper, and toss carefully, adding more vinaigrette if necessary. Serve at room temperature.

Steps:
- Soak the bread quickly in a bowl of cold water, just enough to moisten it. Squeeze it to remove excess moisture.
- Wash, trim and chop tomatoes into chunks. Place in a large serving bowl.
- Cut the red onion into matchstick lengths; add to bowl.
- Cut mozzarella into small cubes and add to bowl.
- Pit olives and add to bowl.
- Wash, dry and cut basil into strips and add to bowl.
- Break bread into bite-size pieces and add to bowl.
- Sprinkle with oil and vinegar; season with salt and pepper, and mix thoroughly.

- Cut bread into four wedges, place on plate. Gently toss tomatoes, basil and red onion together. Place 1/4 mixture on each wedge of bread, top with 1/4 of cheese cubes. Pour about 2 ounce of dressing over each.

- Put the red onion in a bowl with the vinegar and sugar, season well with salt, toss to combine, then set aside for 10-15 minutes.
- Put the tomatoes in a large bowl and season well. Halve the cucumber lengthways, remove and discard the seeds, then slice the flesh diagonally and add to the tomatoes. Add the capers, bread, oregano/mint and mozzarella to the bowl. Drizzle over the extra-virgin olive oil.
- When the onions have softened slightly, add them and the soaking vinegar to the bowl, then toss it all together. Leave the salad to sit for 5-10 minutes, then add the basil and toss everything together again. Taste and check the seasoning. Serve immediately.
