Categories     condiment

Time 30m

Yield 2 cups

Number Of Ingredients 11

1/3 cup slivered almonds
1 pound bright red cherry tomatoes
1/2 cup fresh basil leaves
1/2 cup fresh flat-leaf parsley leaves
1 tablespoon fresh mint leaves
1/2 teaspoon crushed red pepper flakes
2 cloves garlic
Kosher salt
1/3 cup olive oil
1/3 cup grated Parmesan or pecorino
1 baguette, cut crosswise into slices and lightly toasted

Steps:

  • Heat a dry, medium skillet over medium heat. Add the almonds and toast, stirring often, until golden, about 3 minutes. Transfer to a plate to cool.
  • Combine the cooled almonds, tomatoes, basil, parsley, mint, red pepper flakes, garlic and 1/2 teaspoon salt in a food processor. Pulse, adding a little bit of the oil at a time, until everything is finely chopped and emulsified. Add the Parmesan and pulse to incorporate. Season with salt to taste.
  • Transfer to a serving bowl and serve with the toasted baguette slices. Any leftover pesto can be kept refrigerated in an airtight container for up to 2 days.

PESTO PASTA RECIPE WITH TOMATOES AND MOZZARELLA

Pesto Pasta Recipe with Tomatoes and Mozzarella image

Here's how to make the best pesto pasta, perfectly coated in sauce for maximum flavor! Add in juicy roasted tomatoes and fresh mozzarella for the perfect dinner.

Provided by Suzy Karadsheh

Categories     Main Course

Number Of Ingredients 8

2 lb small tomatoes (halved)
Kosher salt and black pepper
2 garlic cloves (minced)
Extra virgin olive oil
1 lb thin spaghetti
1 cup basil pesto (I used this homemade pesto recipe)
6 oz fresh baby mozzarella
Fresh basil (for garnish)

Steps:

  • Heat the oven to 450 degrees F and arrange a rack in the middle.
  • In a larger bowl, toss the tomatoes with kosher salt, black pepper, garlic and extra virgin olive oil. Transfer to a sheet-pan and bake in heated oven 25 to 35 minutes or just until the tomatoes collapse and develop some char (if you don't want them too soft, take the tomatoes out earlier). When ready, remove from the oven. (See notes)
  • While the tomatoes are roasting, cook the spaghetti in boiling water according to the package to al dente (about 10 minutes). Reserve ½ cup of the pasta cooking water. Drain the pasta.
  • Transfer the cooked spaghetti to a large bowl (same bowl used earlier for the tomatoes). Add the pesto and toss to coat. If you need to, add a little bit of the pasta cooking water to help mix it evenly. Taste, and if needed, add a bit of kosher salt and black pepper to season.
  • Add the roasted tomatoes and mozzarella to the bowl of pasta. Toss to combine. Serve warm. Garnish with fresh basil, if you like.

TOMATO PESTO

Chef Note: This is a great sauce for pasta salad because it's delicious at room temperature. You could also slather it on bruschetta, grilled fish or chicken. Or make a brunch dish by topping a thick slice of toast with proscuitto, a poached egg and a little of this summer pesto. In summer, when you can get your hands on vine-ripe tomatoes, you don't even need to peel them. To intensify the flavor, you can add a few oven-dried tomatoes. The pesto keeps several days in a tightly sealed container in the refrigerator.

Provided by Michael Chiarello : Food Network

Time 20m

Yield 8 servings

Number Of Ingredients 7

4 cups peeled, seeded, and coarsely chopped tomatoes
5 cloves minced garlic
30 large fresh basil leaves
1/2 cup extra-virgin olive oil
1 tablespoon and 1 teaspoon balsamic vinegar
Sea salt, preferably gray salt, and freshly ground black pepper
1 cup freshly grated Parmesan

Steps:

  • Combine the tomatoes, garlic, basil, olive oil, vinegar, and salt and pepper, to taste, in a blender and puree until smooth. Add the cheese and blend briefly just to mix. Transfer to a bowl and adjust the seasoning.

Tomatoes Roasted with Pesto image

Provided by Ina Garten

Yield 6 servings

Number Of Ingredients 15

2 to 2 1/2 pounds large red tomatoes
3 tablespoons good olive oil
2 teaspoons dried oregano
Kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup Pesto, store-bought or homemade, recipe follows
1/2 cup freshly grated Parmesan cheese
1/4 cup walnuts
1/4 cup pine nuts
3 tablespoons diced garlic (9 cloves)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Core the tomatoes and then slice them across (not through the stem) in 1/2 inch-thick slices. Arrange the slices in a single layer on a sheet pan. Drizzle the tomatoes with the olive oil and sprinkle with the oregano, 1 1/2 teaspoons salt, and the pepper.
  • Bake the tomatoes for 10 minutes. Remove them from the oven, spread each slice with Pesto, and sprinkle with the Parmesan cheese. Return the tomatoes to the oven and continue baking for 7 to 10 minutes, until the Parmesan is melted and begins to brown. Using a flat metal spatula, put the tomatoes on a serving platter, sprinkle with extra salt, and serve hot, warm, or at room temperature.
  • Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with the steel blade. Process for 30 seconds. Add the basil, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is pureed. Add the Parmesan and puree for a minute. Use immediately or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

CILANTRO LIME PESTO

Cilantro Lime Pesto image

Think chimichurri meets classic pesto. Use it as a pasta sauce, salad dressing, sandwich spread and more!

Provided by A Saucy Kitchen, Sarah Nevins

Categories     Sauces & Condiments

Time 10m

Number Of Ingredients 8

2 cups fresh cilantro leaves, packed (50 g)
1/2 cup shelled pistachios (67 g)
1 jalapeño, deseeded
3 cloves garlic, minced (about 1 tablespoon)
1 tablespoon lime juice (15 ml)
1/2 teaspoon salt, or more to taste
1/4 teaspoon freshly ground black pepper, or more to taste
1/2 cup extra-virgin olive oil (120 ml)

Steps:

  • Add the cilantro, pistachios, jalapeño, garlic, lime zest, lime juice, salt and pepper to the bowl of a food processor or blender. Blend or pulse until the ingredients are all finely chopped and well combined. Stop and scrape down the sides of the bowl as needed.
  • With the blender running on a low speed, pour in the the olive oil into the blender in a slow and steady stream (this allows the pesto to emulsify which prevents the oil from separating later).
  • Blend until you reach your desired consistency (for a thinner pesto sauce add an addition 1-3 tablespoons oil).
  • Taste and season with black pepper and more salt as needed.
  • Keep stored in an airtight container in the refrigerator for up to 1 week or in the freezer up to six months.

CILANTRO JALAPENO PESTO WITH LIME

Cilantro Jalapeno Pesto with Lime image

This is a spicy alternative to classic basil pesto. You can control the spiciness by using less jalapeno and by removing the seeds and white membrane of the pepper before adding it to the pesto. If you like the spice, just throw it all in!

TOMATO LIME PESTO

Tomato Lime Pesto image

I think I've got to dedicate a whole online cookbook to Moosewood Restaurant--such fabulous treats! This sauce goes great with Recipe #241527 for a great appetizer or snacky-snack.

Provided by Battle in Seattle

Categories     Sauces

Time 20m

Yield 2 cups, 8-16 serving(s)

Number Of Ingredients 6

1 cup packed sun-dried tomato (dry, not oil packed)
1 cup almonds
1 fresh chili pepper, coarsely chopped (can seed for a milder taste)
1 cup chopped fresh tomato
1/4 cup fresh lime juice, more to taste
salt

Steps:

  • (The recipe specifies to use tomatoes preserved with salt, not sulfites, if possible. Their red color isn't as bright, but the flavor is way superior. Just be judicious on the addition of salt when ready for that step).
  • In a small heatproof bowl, cover the sun-dried tomatoes with boiling water and set aside to soften for 10 to 15 minutes.
  • Meanwhile, toast the almonds in a single layer on an unoiled baking tray at 350 degrees F for 8 to 10 minutes, until fragrant and golden brown. Cool for a few minutes, then coarsely chop them. When the sun-dried tomatoes are soft, drain them well.
  • Place all of the ingredients in a food processor and pulse until you have a fairly smooth paste. Add additional lime juice and/or salt to taste.
  • Stored in an airtight container and refrigerated, this pesto will keep for 3 to 4 days.
