Mini baguettes spread with pesto are filled with tomato and mozzarella slices, then heated until warm and cheese is melted.

Steps:
- Place 6 Sister Schuberts Mini Baguettes on a baking sheet and bake rolls according to directions on package. Cool baguettes.
- Decrease oven temperature to 375 degrees F.
- Carefully slice each Sister Schuberts Mini Baguette in half horizontally. Spread one side of each baguette with pesto. Continue to layer with tomatoes, fresh mozzarella and sprinkle with salt and pepper. Wrap each sandwich in a large piece of aluminum foil, place packages on baking sheet and bake 7 to 10 minutes or until sandwiches are warm and the cheese has melted. Unwrap sandwiches, open and add fresh basil leaves. Serve.

- Bring 4 quarts water to boil in large pot.
- Meanwhile, heat 2 tablespoons oil, garlic, and pepper flakes in medium saucepan over medium heat until fragrant but not brown, about 2 minutes. Stir in crushed and diced tomatoes, bring to simmer, and cook until slightly thickened, 15-20 minutes. Stir in 3 tablespoons basil, sugar and 1/2 teaspoons salt.
- Add 1 tablespoons salt and pasta to boiling water. Cook until al dente. Reserve 1/4 cup cooking water, drain pasta, and transfer back to pot. Stir in sauce and remaining tablespoons oil, and cook over medium heat until heated through (adding reserved water if pasta seems dry), about 1 minute. Stir in mozzarella and season with salt. Serve, sprinkling with remaining 2 tablespoons basil and Parmesan.

- 1. Heat the oil in a large saucepan over medium-high heat. Add the onion, carrots and celery, and cook, stirring occasionally, until the onion is translucent, but not browned, about 5 minutes. Add the garlic, 2 bay leaves, and a pinch of salt, then stir in the tomato paste and cook until the paste begins to caramelize, about 2 minutes.
- 2. Add the tomatoes and their juices, while breaking the tomatoes apart with a wooden spoon. Then bury the bunch of basil (and the Parmesan rind, if using) in the sauce. Reduce the heat to low and simmer, uncovered, until the sauce has thickened and the flavors have developed, about 30 minutes. Remove and discard the Parm rind (if you used it) and the basil. Set the sauce aside to cool.
- 3. Meanwhile, in a large pot, combine the rice, broth, and the remaining 2 bay leaves. Bring to a boil over high heat, reduce to a gentle simmer, cover and cook, without removing the lid, for 15 minutes. The rice should be al dente. Give the rice a stir, transfer it to a large bowl, and let it cool until it's just warm to the touch, 10-15 minutes.

- Slice tomatoes into thick slices (if using smaller tomatoes, just slice in half). Place on metal pan and sprinkle with kosher salt. Place under broiler for 3-5 minutes or in 500 degree oven for 5-7 minutes. Remove from oven and top with slices of mozzarella and basil. Return to oven for 2-4 more minutes, or until cheese is fully melted. Serve warm.
- *For tomatoes- If using Roma, slice in half down the center. If using Garden tomatoes, slice in thick 1/2 -3/4 inch slices.
- Serving Size: This will serve as many as you allow tomatoes for. I usually allow two slices per person. This is one of those recipes that you can just adjust the quantities based on how many you want to make, which is why it makes a perfect lunch for one!
