PURéED TOMATO AND RED PEPPER SOUP



Puréed Tomato and Red Pepper Soup image

I noticed that the most popular boxed soup at my supermarket is a tomato and red pepper soup, so I decided to come up with my own version.

Number Of Ingredients 18

2 red bell peppers, roasted
2 tablespoons extra virgin olive oil
1 medium onion, chopped
1/2 cup diced carrot
1/2 cup diced celery
Salt to taste
4 large garlic cloves, minced
1 28-ounce can chopped tomatoes with juice
1/4 cup tomato paste
2 sprigs fresh basil
Pinch of cinnamon
1/2 teaspoon sugar (optional)
1 1/2 quarts vegetable stock or water
1/4 cup rice, preferably a medium-grain rice like arborio
Freshly ground pepper
Garlic croutons (toast thin slices of bread, rub with a cut clove of garlic, and cut into squares)
Freshly grated Parmesan
Slivered fresh basil leaves

Steps:

  • Roast the peppers as directed, allow to cool in a covered bowl, then peel, seed and dice. Set aside.
  • Heat the oil over medium heat in a large, heavy soup pot and add the onion. Cook, stirring often, until onion is translucent, about 3 minutes, and add the carrot and celery and a generous pinch of salt. Cook, stirring often, until the vegetables are tender and fragrant, about 5 more minutes. Stir in the garlic and cook, stirring, until fragrant, 30 seconds to a minute. Add the tomatoes with their liquid, the tomato paste, basil sprigs, cinnamon, sugar if using, and salt to taste. Cook over medium heat, stirring occasionally, until the tomatoes have cooked down slightly and smell fragrant, about 10 minutes.
  • Add the diced roasted peppers, the stock or water, rice, and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes, stirring from time to time. Season with freshly ground pepper, taste and adjust salt. Remove the basil sprigs.
  • Using a hand blender, purée the soup, or use a blender and purée in batches, being careful to pull a dish towel down over the top and not to cover tightly with the blender lid, then return to the pot and heat through. Taste and adjust seasonings. Serve topped with croutons, Parmesan cheese, and/or slivered basil.

STEWED PEPPERS WITH TOMATOES, ONIONS AND GARLIC



Stewed Peppers with Tomatoes, Onions and Garlic image

There are variations of this dish throughout the Mediterranean. The Basque piperade, made with slender, slightly piquant peppers called piments d'espelette and stirred into scrambled eggs along with bayonne ham, has some heat; whereas Italian peperonata is sweet through and through. A North African version, chakchouka, is spiced with fiery harissa and a spice blend made with caraway and coriander, cayenne and garlic, and is usually served with eggs poached right on top of the stew. See the variations below.

2 tablespoons extra virgin olive oil
1 medium onion, chopped
2 plump garlic cloves, minced
3 large red peppers, or a combination of red and yellow peppers, thinly sliced or chopped
1 (14-ounce) can chopped tomatoes, drained of some but not all of its juice
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a large nonstick skillet or heavy casserole over medium heat and add the onion. Cook, stirring, until tender, about 5 minutes, and add the garlic and peppers. Cook, stirring often, for 5 minutes and add 1/2 teaspoon salt. Continue to cook for another 5 minutes, until the peppers are tender.
  • Add the tomatoes, thyme, salt, and pepper, bring to a simmer, and simmer, stirring from time to time, until the tomatoes have cooked down somewhat, about 10 minutes. Cover, reduce the heat and simmer over low heat for another 15 to 20 minutes (or longer), stirring from time to time, until the mixture is thick and fragrant. Taste and adjust seasonings. Serve as a side dish, as a topping for pizza, pasta, polenta, rice, or bruschetta, as a filling for an omelet, or stir into scrambled eggs.

2 tablespoons olive oil
1 Vidalia onion, chopped
1 carrot, chopped
2 cloves garlic, chopped
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
1 (14.5-ounce) can fire-roasted diced tomatoes
1 (12-ounce) jar roasted red peppers, drained and chopped
2 1/2 cups chicken broth
2 teaspoons sugar, optional
1/2 cup half-and-half
1/4 cup chopped fresh basil, plus more for garnish

Steps:

  • Heat 2 tablespoons oil in a 2-quart saucepan over medium-high heat. Add onions and carrots and saute until tender, about 5 minutes. Add garlic and saute until just fragrant. Season with salt and pepper. Add tomato paste and cook until toasted, just 1 more minute.
  • Add tomatoes, red peppers, and chicken broth and let simmer for 25 minutes, until the vegetables are tender and the flavors have melded together. Taste for seasoning and add more salt, pepper, and the sugar, if needed. Add half-and-half and basil, and puree using a hand held immersion blender until smooth.
  • Serve in soup bowls with a sprinkle of fresh basil on top.

ROASTED TOMATO AND PEPPER SOUP

2 pounds plum tomatoes, halved lengthwise
2 medium sweet red peppers, quartered and seeded
2 medium onions, finely chopped
2 tablespoons olive oil
3 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon ground coriander
1 carton (32 ounces) reduced-sodium chicken broth
3 slices day-old French bread (1 inch thick), crusts removed and cubed
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
Shaved Parmesan cheese

Steps:

  • Place tomatoes and peppers, cut side down, in a 15x10x1-in. baking pan. Bake at 425° for 20 minutes. Turn tomatoes and peppers; bake 10-15 minutes longer or until skins are blistered and blackened., Immediately place peppers and tomatoes in a large bowl; cover and let stand for 10 minutes. Peel off and discard skins; coarsely chop tomatoes and peppers., In a large saucepan, saute onions in oil until tender. Add the garlic, cumin and coriander; saute 1 minute longer. Add the broth, tomatoes and peppers. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes., Stir in the bread, vinegar, salt and pepper; heat through. Sprinkle servings with cheese.

Great combination of peppers and tomatoes with rice in a base which can be soup or stew. Simple additions can make it mild and family friendly or beastly to challenge your friends.

Number Of Ingredients 11

1 quart water, as needed
1 1/2 cups water
1 (29 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes (undrained)
4 cups long-grain rice, cooked (not minute rice or quick cooking rice.I use black and white rice mixed)
4 cups bell peppers, chopped into 1 inch pieces.** (green and red)
1 sweet onion, chopped
2 teaspoons dried basil (or handful of chopped fresh basil if available)
2 teaspoons salt
2 teaspoons fresh ground pepper
2 tablespoons brown sugar (optional)

Steps:

  • 1. Put rice in small pot and begin cooking by package directions, (1cup uncooked=4cups cooked).
  • 2. In 6-quart pot combine tomatoes and tomato sauce and simmer.
  • 3. In small fry pan saute chopped onions in about ¼ cup of oil until translucent.
  • 4. While rice and onions are cooking chop peppers and add to tomato pot.
  • 5. Add remaining ingredients to tomato pot with cooked rice and onions (with oil from pan) and 1 ½ cups water to make 'stew' consistency.
  • 6. Reduce heat; cover and simmer for 30 to 40 minutes or until tender. Add additional water as needed to maintain desired thickness. (A cover is optional, if too thin leave cover off and allow to thicken.).
  • *Start with 1 ½ cups water and add more to achieve consistency you desire.
  • **For variety and spice replace ½ cup bell peppers with ½ cup chopped (medium hot) yellow peppers, this is still mild enough for most palates. Or to create a not so 'family friendly' version replace yellow peppers with your favorite variety of hot peppers to challenge your friends.
  • ***Brown sugar can reduce the acid but does add a slightly sweet taste to the stew/soup.

4 red bell peppers
1 tablespoon extra-virgin olive oil
1 onion, roughly chopped
4 cloves garlic, minced
1/4 teaspoon crushed red-pepper flakes
One 28-ounce can crushed tomatoes
One 6-ounce can tomato sauce
One 14 1/2-ounce can low-sodium chicken stock
3 sprigs oregano
Coarse salt, to taste
Pinch of freshly ground black pepper

Steps:

  • Place peppers directly over a gas-stove burner on high heat. As each section turns puffy and black, turn with tongs to prevent overcooking. (Or place peppers on a baking pan; broil in oven, turning as each side becomes charred.) Transfer to a large bowl; cover with plastic wrap. Let sweat until cool enough to handle, about 15 minutes. Transfer to work surface. Peel off blackened skin; discard. Halve; discard seeds. Roughly chop flesh; set aside.
  • Heat oil in a large saucepan over medium-low heat. Add onion, garlic, and pepper flakes. Cook until onion is tender, about 8 minutes. Add tomatoes, tomato sauce, stock, oregano, and peppers. Bring to a gentle simmer; cook until slightly thickened, 15 to 20 minutes. Season with salt and pepper; serve. The sauce can be made ahead and refrigerated for up to 2 days, or frozen up to 1 month.

Number Of Ingredients 10

2 cups homemade or low-sodium canned chicken stock
2 poblano peppers
3 large tomatoes
6 ounces tomatillos, husks removed
1/4 cup olive oil
6 scallions, chopped
3 cloves garlic, minced
1 teaspoon fresh oregano, chopped
1 teaspoon ground cumin
1 teaspoon coarse salt

Steps:

  • Place the chicken stock in a small saucepan, and bring to a boil. Reduce to a simmer, and cook until reduced to 1 cup; set aside. Place poblanos directly on a gas-stove burner over high heat or on a grill. Just as each section turns puffy and black, turn peppers with tongs to prevent overcooking. (If you don't have a gas stove, place peppers on a bakingpan, and broil in oven, turning as each side becomes charred.) Transfer to a large bowl; cover with plastic wrap.   • Roughly chop tomatoes, and set aside. Roughly chop tomatillos, and add to the tomatoes, tossing to combine. Place half of the tomato mixture in a food processor, and pulse until finely chopped. Set aside remaining tomato mixture.
  • Heat olive oil in a large skillet; add scallions and garlic. Saute until translucent, about 5 minutes. Add processed tomato mixture and reduced stock. Bring to a simmer; add roasted poblanos, oregano, cumin, and salt. Simmer until sauce has thickened slightly, about 15 minutes. Stir in remaining tomato mixture; cook until just softened, about 2 minutes. Serve immediately, or refrigerate up to 3 days.
