Fish Packets with Snap Peas, Tomatoes, and Herb Butter image

These easy, build-your-own fish packets let kids help out with dinner and choose which items they want to include. The herb butter infuses the fish and vegetables with rich flavor and the tomatoes release their juices to create a light sauce.

Yield 4 servings

Number Of Ingredients 11

1/2 cup (1 stick) unsalted butter, room temperature
2 tablespoons finely chopped tender herbs (such as cilantro, chives, and/or parsley)
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon freshly ground black pepper, plus more
1 pound sugar snap peas, trimmed
1 pint cherry tomatoes (about 2 1/2 cups), quartered
2 large garlic cloves, thinly sliced
4 (1/2"-thick) skinless flounder or tilapia fillets (about 6 ounces each)
1/4 cup coarsely chopped basil
Special Equipment
4 (16x12") sheets parchment paper

Steps:

  • Preheat oven to 400°F. Mix butter, herbs, 1 tsp. salt, and 1/2 tsp. pepper in a small bowl.
  • Fold parchment sheets in half and use scissors to cut halves into 4 large hearts. Unfold and place parchment hearts open on a work surface. Spoon 1 Tbsp. herb butter in the center of one half of each heart, then divide snap peas, tomatoes, and garlic evenly into small piles over butter. Lay fish over vegetables, then top with 1 Tbsp. herb butter; season each with 1/8 tsp. salt and a pinch of pepper. Fold parchment over and crimp edges tightly to form a sealed packet.
  • Transfer packets to 2 large rimmed baking sheets, arranging in a single layer. Bake until just cooked through and a tester inserted through parchment slides through fish easily, about 13 minutes. Carefully cut open packets (steam will escape). Top with basil.
  • Do Ahead
  • Butter can be made 3 days ahead; cover and chill. Fish packets can be assembled 4 hours ahead; chill. Let sit at room temperature 15 minutes before cooking.

HERBED TOMATOES

Herbed Tomatoes image

Tomatoes grow so many places that all herbs seem to have some sort of agreement worked out with them. And the polyamorous tomato seems, among a lucky few ingredients, to carry on genuine and stirring and entirely unique relationships with each herb. Here is a recipe for herbed tomatoes inspired by something my friend Emma made years ago, which she called, enigmatically, Tomatoes Provençal. In any case, mine are neither Provençal nor provincial, but à l'Americaine, using herbs that I usually eat in food from Vietnam and Thailand but that grow happily beside tomatoes in each of those countries - as well as in ours - in what may or may not be a French provincial preparation.

Provided by Tamar Adler

Categories     vegetables, appetizer

Time 30m

Yield 6 servings

Number Of Ingredients 6

6 medium-size summer tomatoes - somewhere between the size of a golf ball and a tennis ball
4 tablespoons olive oil (best possible), plus more for the pan
Salt
2 tablespoons chopped green or summer garlic, or 1 tablespoon chopped regular garlic
4 tablespoons very finely chopped fresh cilantro, stems included
2 tablespoons very finely chopped fresh Thai basil, leaves only

Steps:

  • Cut the tomatoes across their horizontal equators, and over the sink, scoop out some of their seeds and juice without completely disemboweling them.
  • Heat a cast-iron pan or grill pan or grill big enough to fit all the tomatoes in one or two rounds. Lightly brush or drizzle your pan with olive oil. Cook the tomatoes in a single layer, cut sides down, for 3 to 4 minutes, until they just start to collapse or buckle when they are plucked at with tongs and their cut sides are browned or even a touch blackened.
  • Turn off the heat, and turn the tomatoes over, leaving them for 3 minutes on the second side and then removing them, cut sides up, to a plate. Lightly salt the cut sides.
  • In a mortar and pestle or on a cutting board, pound the garlic to a paste with a large pinch of salt - about 1/2 teaspoon. When you have a fairly smooth paste, mix in the chopped herbs and olive oil. Taste. Adjust salt until the paste is very well seasoned.
  • Divide the herb paste among the cut sides of the tomatoes, using it all. There should be a thick, herby blanket on each. Eat warm or at room temperature or cool.

13 WAYS TO PRESERVE TOMATOES: RECIPES TO FREEZE, CAN, AND MORE
13-ways-to-preserve-tomatoes-recipes-to-freeze-can-and-more image

From homesteadandchill.com
  • Simple Roasted Tomato Sauce (freeze or can) This is my absolute favorite way to preserve tomatoes. Our “Simple and Delicious Roasted Tomato Sauce” recipe is aptly named: the only ingredients are tomatoes, salt, pepper, and a drizzle of oil, and doesn’t require peeling, de-seeding, or measurements!
  • Sun-Dried Tomatoes. Learn how to dehydrate or “sun dry” tomatoes here. We prefer to dry them in a food dehydrator, though instructions to oven-dry tomatoes are also included.
  • Canning Whole or Halved Tomatoes. Canning tomatoes is a classic way to preserve your bounty. Truth be told, tomatoes are one of the few veggies I enjoy canned (they’re technically a fruit… but you know what I mean).
  • Creamy Tomato Basil Soup (to freeze) Sauce aside, this is our other go-to way to preserve tomatoes. I mean, who doesn’t love a big bowl of thick, soul-warming tomato soup on a chilly day!?
  • Homemade Ketchup (can or freeze) Take your tomato canning adventures a step further with this homemade ketchup recipe. We really need to try this one ourselves since we do enjoy ketchup on occasion – especially with veggie burgers, potatoes or eggs!
