SLOW-COOKED LAMB SHOULDER

This is a great dish to cook when you have guests for Sunday lunch - just stick it in the oven and forget about it. The slow cook allows the meat to tenderise slowly and evenly, and you could cook it for even longer than the recipe states if you prefer.

3 medium onions, thinly sliced
6 large waxy potatoes, peeled and thinly sliced
1 bunch thyme, leaves picked
salt and black pepper
1 whole lamb shoulder
1 garlic bulb, peeled and separated into cloves
568ml/1 pint chicken stock
cooked French beans (or other green vegetables), to serve

Steps:

  • Preheat the oven to 130C/275F/Gas 1.
  • In a bowl combine the onions, potatoes and thyme. Season with salt and pepper.
  • Layer the potatoes and onions in a roasting tin and place the lamb on top skin-side up.
  • Cut small incisions in the lamb using a small knife and stick the whole garlic cloves in the holes, pushing them into the meat to prevent them burning while the meat cooks.
  • Pour the chicken stock over and place in the oven for 4-5 hours, or until the potatoes are crisp on top and soft inside.
  • When cooked, remove the lamb from the oven, cover with aluminium foil and set aside to rest for 20 minutes.
  • Serve with French beans (or any green vegetable of your choice).

Try this slow cooked harissa lamb as an alternative roast. We love the texture - it's half-roasted and half-pulled, fork-tender but still easy to carve

2kg whole leg of lamb on the bone
10 red onions, cut in half
300ml chicken stock
4 tbsp chopped coriander
20 dried chillies
6 garlic cloves, grated
100ml olive oil
2 tsp ground coriander
2 tsp ground cumin
2 tsp caraway seeds
2 tsp smoked paprika
2 tbsp red wine vinegar

Steps:

  • If you're making the harissa, tip the dried chillies into a heatproof bowl and pour over just enough boiled water from the kettle to cover. Cover the bowl and leave to cool. Once cool enough to handle, drain the chillies, reserving the water. Remove any stalks and pat dry with kitchen paper. Tip the chillies into a food processor with the garlic, 1 tsp salt, the olive oil, spices and vinegar, and blitz to a purée. If needed, add a little of the reserved water to loosen. Will keep, chilled, for up to a month.
  • Make 15 cuts, about 3-5cm long, all over the lamb. Reserve 1 tbsp of the harissa paste, then rub the rest all over the lamb and into the cuts. Scatter the onions into a large roasting tin and sit the lamb on top. Leave at room temperature for 1 hr, or cover and chill overnight.
  • Heat the oven to 160C/140C fan/gas 2. Roast the lamb for 4-5 hrs until the meat is fork-tender. Lift the lamb out onto a large board or serving plate. If the tin is flameproof, pour in the stock; if not, tip the contents of the tin into a saucepan first. Bring to the boil, scrape up any browned bits using a wooden spoon, and cook until the liquid is reduced by about a third - it should be a thick, rich onion gravy. Stir in the reserved harissa and the chopped coriander. Serve the lamb with the onion gravy.

MAPLE & CHILLI-GLAZED LEG OF LAMB

Make a lovely maple and chilli glaze to brush over a leg of lamb, ready for barbecuing - a great choice when you haven't got time for marinating

2.5kg leg of lamb, butterflied (ask your butcher to do this)
1 bunch of rosemary, snipped into 2cm lengths
100ml maple syrup
50g Dijon mustard
2 tbsp yeast extract
1 tbsp smoked paprika
3 medium green chillies, sliced

Steps:

  • Lay the butterflied lamb leg on a board and use a sharp knife to prick about 20 holes all over the skin side. Press the rosemary sprigs deep into the holes, then season all over.
  • To make the glaze, tip all of the ingredients into a small saucepan, reserving a few sliced chillies, and bring to the boil. Stir to combine, then remove from the heat and set aside. Light the barbecue. It's ready when the coals are ashen and you can hold your hand 5cm above the grill for at least 5 seconds.
  • Lay the lamb skin-side down on the grill and cook for 10 mins. Turn over using tongs and cook for 10 mins more. Repeat this two more times for 5 mins on each side so the lamb cooks for a total of 30 mins. Baste with the glaze, turn the lamb again and keep basting for another 10 mins until deep brown and sticky. Remove to a board, cover loosely and leave to rest for 20 mins. Carve into thin slices to serve, then scatter over the reserved sliced chillies.
