TOM AND JERRY BATTER

Steps:

• Beat egg whites and salt until foamy in a large glass or metal mixing bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape.
• Beat the egg yolks to soft peaks in a separate bowl. Beat the butter and confectioners' sugar in a large bowl until light and fluffy. Add the egg yolks and vanilla to the butter mixture; mix. Stir in the nutmeg, cloves, allspice, and the egg whites; beat until well blended. Batter can be frozen or kept in refrigerator for several weeks.
• To make a Tom and Jerry, fill a cup of hot water with spiced rum or brandy, warm milk, hot cocoa, or eggnog and stir in 1 heaping tablespoon of batter.

• Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add the egg yolks one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat egg whites until foamy in a large glass or metal mixing bowl, continuing to beat until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak. Mix the egg whites into the egg yolk mixture. Stir in the rum, salt, mace, allspice, cloves, nutmeg, and cardamom.
• To use the mix, combine 1 ounce rum and 1 cup hot milk in a mug. Stir in 1 tablespoon of the Tom and Jerry mixture.

Steps:

• Beat egg whites until stiff. Beat egg yolks until light. Cream butter and powdered sugar until well mixed (Betty's mother-in-law's recipe said 'until crumbly', but that never happened......I just mixed mine until smooth.). Add yolks and all other seasonings. Fold in egg whites Then.....after you make the batter, you put a shot of brandy and a shot of rum (or two shots of brandy) in a tall mug. Fill with boiling water. Add 2-3 tablespoons of Tom and Jerry mix and ENJOY! You need to add enough batter so it isn't 'weak' if you know what I mean....it is good after coming in from the cold.
