These cheesy zucchini patties are an excellent way to use up that abundance of zucchini from the garden. Serve with a bit of tomato sauce or sour cream dabbed on top.

2 cups grated zucchini
2 eggs, beaten
¼ cup chopped onion
½ cup all-purpose flour
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
salt to taste
2 tablespoons vegetable oil

Steps:

  • In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
  • Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

3 1/2 cups grated zucchini
3 tablespoons grated onions
2 tablespoons minced parsley
1/3 cup freshly grated parmesan cheese
1 cup soft breadcrumbs
1/4 teaspoon pepper
3/4 teaspoon salt
2 eggs, well beaten
fine breadcrumbs
melted butter

Steps:

  • Preheat oven to 350* After grating zucchini, squeeze out as much liquid as possible with hands.
  • Combine zucchini, onion, parsley, cheese and 1 cup bread crumbs with salt, pepper and eggs.
  • Shape into patties and cover with fine bread crumbs.
  • Place on well greased cookie sheet and brush with melted butter.
  • Bake for 30-40 minutes or until golden brown.
  • You can fry these patties in a skillet with butter, if desired.

2 tablespoons butter or 2 tablespoons margarine
3 tablespoons vegetable oil
3 1/2 cups zucchini, coarsely grated
1/4 cup flour, all-purpose
2 eggs, lightly beaten
1/2 teaspoon salt
1/8 teaspoon pepper, black

Steps:

  • Heat the butter and oil together in a 12-inch skillet over moderate heat.
  • Meanwhile, quickly mix the zucchini with the flour, eggs, salt and pepper to form a batter.
  • Drop Tablespoonful of batter into hot butter and oil to form 6 patties 2 to 2 1/2 inches in diameter.
  • Flatten each patty slightly with the back of a spoon.
  • Reserve the remaining batter.
  • Cook the patties for about 4 minutes on each side, or until they are golden brown and crusty.
  • Remove them to a platter covered with paper toweling and set in a keep-warm (250 F) oven.
  • Use the remaining batter cook 6 more patties in the same manner, adding 1 more Tablespoon of oil to the skillet, if needed.

Steps:

  • Saute onions in a skillet until tender, add zucchini and heat for 5 minutes, stirring frequently.
  • pour eggs into large mixing bowl, mix in onions and zucchini, then stir in crumbs and parsley.
  • pour 1/4 inch oil in a frying pan and heat until hot.
  • Drop spoonfuls of zucchini mixture into hot oil until golden on both sides.

I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy! P.S. 8-7-09 I have been making this for over 30 yrs. and have never had a problem with watery zucchini. Might just be a climate issue.

1 cup coarsely crumbled saltine crackers
2 tablespoons chopped onions
1 beaten egg
1/2 teaspoon garlic salt
1/2 cup grated parmesan cheese
2 tablespoons oil (for frying)

  • Put all ingredients (except oil) into a large bowl and mix well.
  • Spoon mixture into hot oil and flatten slightly to make patties. Fry until cooked through and golden brown on both sides. Drain extra oil off on paper towels and enjoy!

2 cups shredded zucchini
1/2 cup shredded cheddar cheese
1/3 cup biscuit/baking mix
2 tablespoons grated onion
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon pepper
2 eggs, lightly beaten
2 tablespoons butter

Steps:

  • In a bowl, combine first seven ingredients. Stir in eggs; mix well. Shape into six patties, using about 1/4 cup of zucchini mixture for each patty. , In a skillet, melt butter; cook patties for 4-5 minutes on each side or until lightly browned.

Found this in a newspaper a few weeks ago by Sherry McCarty, Albuquerque, NM. I only added extra onion and cheese. Marinara Sauce is suggested for an Italian flair. I used Dee514's recipe #30903. This is a very good light meal.

1 cup Bisquick or 1 cup other baking mix
1/2 cup shredded mozzarella cheese or 1/2 cup cheddar cheese
1/8 teaspoon salt
2 eggs, beaten
2 cups shredded zucchini
2 tablespoons chopped onions
1 tablespoon butter

Steps:

  • Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
  • Blend well. Melt butter in a large skillet.
  • Spoon heaping tablespoons of zucchini mixture into skillet.
  • Fry for 3 to 5 minutes per side, until golden brown.
  • Place browned patties on a paper towel.
  • Add more butter to skillet when necessary for additional batches.
  • Serves 5 to 6.

These tasty Tofu Zucchini Patties have been adapted from a recipe I found in The Australian Women's Weekly's 'The Health Cookbook'. When I've made them for friends, as a casual luncheon dish, they've always been popular - including with those more conservative diners who had never previously eaten tofu! I've suggested serving them specifically with Greek yoghurt - as that's what I generally use - but I've also served them with tzatziki. If you're looking for a recipe for tzatziki, it's hard to beat Ravenseyes' Recipe #306901 or Recipe #157176. BTW, Australian brown onions are what Americans call yellow onions. The original recipe specified "1 cup packaged breadcrumbs" which I've left in the posted recipe but when I've made these I have used processed fresh breadcrumbs. If you find it easier, you can also process the onion and garlic. I've made the herbs optional as you may prefer some other herb combinations, and if you like your food spicier, feel free to modify the recipe so that it best meets your taste preferences.

300 g firm silken tofu, coarsely chopped
1 1/2 cups cooked brown rice or 1 1/2 cups leftover cooked rice
3 medium zucchini, coarsely grated and squeezed to remove excess moisture (360g or about 111/2 oz)
1 medium brown onions (150g) or 1 medium one yellow onion, finely chopped (just under 5oz)
1 cup packaged breadcrumbs (100g or approximately 31/2 oz)
1/4 teaspoon rosemary (optional)
1/4 teaspoon sage (optional)
1/4 cup walnuts, finely chopped
2 eggs
2 tablespoons flat leaf parsley, finely chopped
1 -2 garlic cloves, crushed or 1 -2 garlic clove, finely chopped
2 tablespoons olive oil, for pan-frying, probably less if you use a non-stick pan
2 lemons, cut into wedges
salad greens or baby spinach leaves, to serve
Greek yogurt, to serve

Steps:

  • Blend or process tofu until smooth; transfer to a large bowl and add rice, zucchini, onion, breadcrumbs, rosemary, sage, walnuts, eggs, parsley and garlic; mix well and shape into 12 patties.
  • Heat the oil in a large pan, preferably non-stick and cook in batches for about 3 minutes on each side or until browned and heated through; drain on absorbent kitchen paper.
  • Serve with the lemon wedges, salad greens or baby spinach leaves and Greek yoghurt or tzatziki.
  • NOTES: 2/3 cup (130g/just over 4oz) raw brown rice is needed for this recipe.
