Mexican-Inspired Tofu Tacos with Chili-Lime Slaw Recipe image

Mexican inspired flavors come together in these mouthwatering tacos. Take the heat up or down by varying the amount of adobo sauce to taste. Delicious served with pepita cream, Spanish rice and guacamole. Make ahead for freezer friendly meal prep. This recipe is vegetarian and vegan, optionally gluten free. *Time above does not include hands off time needed to press the tofu (20-30 minutes). 10 oz (283g) Firm Tofu (, sprouted if you can find it, pressed and drained for at least 20 minutes (see note)*)
1 Tbs Coconut Oil (unrefined, virgin or olive oil)
1 C (110g) Purple Onion (large dice (about 1/2 a medium onion))
3/4 C (90g) Green Bell Pepper (large dice (about 1/2 a medium pepper))
1 Tbs Cumin
1 Tbs Chili Powder
1/2 tsp Smokey Paprika
1 Tbs Masa Harina Flour (or sub 2 Tbs ground tortilla chips **see note)
3/4 tsp Fine Sea Salt
2 tsp Adobo Sauce
3/4 C (200g) Fire Roasted Tomatoes (with its juice)
1 C (220g) Vegetable Broth
3 C (150g) Shredded Mix of Red and Green Cabbage (loosely packed)
1 Tbs Seeded Jalapeño (minced (or to taste. Take this up if you like spicy!))
1/2 C (20g) Cilantro (rough chopped)
Juice of 1 -2 Limes ( to taste and depending on the size of the lime)
1/2 tsp Fine Sea Salt
Chili-Lime Pepita Crema
Warm Tortillas, and Cilantro

Steps:

  • Preheat the oven to 350F (180C). Slice the tofu into about 1/2" - 1" (1.3 - 2.5 cm) cubes and place on a parchment or silpat lined sheet pan. Bake for 20 minutes or until slightly golden and dryer to the touch. Baking dries the tofu out.
  • In a large saute pan, add the coconut oil and heat until shimmering. Add the onion and bell pepper. Saute for about five minutes on medium heat or until soft, a little charring is good! Add the cumin, chili powder, paprika, masa flour, and sea salt all at once, then add the adobo sauce. Stir for about 2 minutes until fragrant and the seasonings are incorporated around the veggies. Stir in the tomatoes, vegetable broth and tofu, then turn the heat to low and place a lid on the pan. Simmer for 10 minutes. Place mixture in a food processor and pulse 8-9 times, making sure the tofu is still somewhat chunky, but ground down. Place back in the pan, give it a little squeeze of lime and taste for salt adjustment. Put a lid on it to keep it warm (off the heat).
  • In a medium bowl, mix the red and green cabbage, jalapeño, cilantro, lime juice and sea salt. Set in the refrigerator until ready to top tacos.
  • I like to warm my tortillas on a low open flame on the stove top turning with tongs a few times to lightly char the tortillas. To hold them warm, place the tortillas in foil and into a warmed oven on low heat.
  • On the warm tortilla, spoon a good smear of pepita crema, guacamole or sour cream down the center of the tortilla. Spoon the tofu evenly over the top, then add the slaw and any other condiments you prefer.
  • Store the leftover tofu taco filling in the fridge in a lidded container for up to three days or the freezer for up to a month. Thaw in the refrigerator overnight, then gently rewarm on the stovetop.

1/3 cup converted white rice
1 15-ounce can low-sodium kidney or black beans (do not drain)
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1/2 14-ounce package extra-firm tofu, drained, patted dry and cut into cubes
1/2 teaspoon low-sodium sazon seasoning
2 scallions, chopped
4 10-inch flour tortillas
1/2 cup shredded low-fat pepper jack cheese (about 2 ounces)
1/4 cup pico de gallo
1 cup shredded romaine lettuce
Hot sauce and sour cream, for serving

Steps:

  • Bring 1/4 cup water, the rice, the beans and their liquid, 1/4 teaspoon salt and a few grinds of pepper to a simmer in a medium saucepan over medium-high heat. Reduce the heat to low and stir. Cover and cook until the rice is tender and the liquid is absorbed, 16 to 18 minutes.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat. Add the tofu; season with 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until golden brown, 5 minutes. Add the sazon and cook, stirring, 2 minutes. Add 1 tablespoon water; cook, stirring, until absorbed. Add the tofu and scallions to the rice; fluff with a fork.
  • Wrap the tortillas in damp paper towels and microwave 30 seconds. Sprinkle the bottom halves with the cheese; top with the tofu mixture, pico de gallo and lettuce. Fold the bottom edge over the filling, fold in the sides, then roll up tightly. Arrange seam-side down on a large microwave-safe plate and cover with a damp paper towel. Microwave until warm, 2 to 3 minutes. Serve with hot sauce and sour cream.

This is derived and slightly adapted from the "Tofu-chiladas" recipe in "Vegetarian Meals for People on the Go" by Vimala Rodgers. If you're vegetarian, it's a nice alternative to beans in your Mexican food. My husband said I could probably pass it off to meat-eaters as eggs in a breakfast burrito. I would never try to fool anyone, though.

1 lb extra firm tofu
1/2 onion
1 garlic clove, crushed
2 teaspoons extra virgin olive oil
1/8 cup Braggs liquid aminos or 1/8 cup tamari
3 ounces tomato paste
1/2 teaspoon ground cumin
1 -2 tablespoon chili powder
14 ounces canned diced tomatoes

Steps:

  • Optional for more texture: Freeze tofu overnight. Thaw by boiling for 15 minutes.
  • Sauté onion and garlic in olive oil.
  • Add aminos, tomato paste and spices to pan. Stir well.
  • Squeeze the water out of the tofu with a dishtowel. Crumble it finely into the pan (so that it vaguely has the texture of ground beef). Cook, stirring occasionally, a few minutes or until slightly browned.
  • Drain most of the liquid off the tomatoes, then add to pan. Stir and cook a few more minutes.

1 (14 ounce) package extra-firm tofu, drained
½ teaspoon salt
black pepper to taste
1 ½ teaspoons onion powder
1 ½ teaspoons garlic powder
½ teaspoon ground turmeric
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 cup finely diced red onion
2 jalapeno peppers, seeded and chopped
½ teaspoon salt
3 cloves garlic, minced
2 cups chopped tomatoes
1 ½ teaspoons cumin
¼ cup chopped fresh cilantro
1 tablespoon fresh lemon juice
1 (15.5 ounce) can no-salt-added black beans, drained and rinsed
1 ½ cups cooked hash brown potatoes
1 avocado - peeled, pitted and sliced
1 teaspoon fresh lemon juice
¼ cup chopped fresh cilantro
1 teaspoon hot sauce, or to taste

Steps:

  • Preheat a large, heavy skillet over medium-high heat. Add 2 tablespoons oil. Break tofu apart over skillet into bite-size pieces, sprinkle with salt and pepper, then cook, stirring frequently with a thin metal spatula, until liquid cooks out and tofu browns, about 10 minutes. (If you notice liquid collecting in pan, increase heat to evaporate water.) Be sure to get under the tofu when you stir, scraping the bottom of the pan where the good, crispy stuff is and keeping it from sticking.
  • Add onion and garlic powders, turmeric, juice, and remaining tablespoon oil and toss to coat. Cook 5 minutes more.
  • Preheat a heavy-bottomed saucepan over medium-high heat. Add oil. Cook onion and jalapenos with a pinch of salt, stirring, until translucent, about 5 minutes, Add garlic and cook, stirring, until fragrant, about 30 seconds. Add tomatoes, cumin, and remaining salt, and cook, stirring, until tomatoes become saucy, about 5 minutes. Add cilantro and lemon juice. Let cilantro wilt in. Add beans and heat through, stirring occasionally, about 2 minutes. Taste for salt and seasoning.
  • Spoon some hash browns into each bowl, followed by a scoop of beans and a scoop of scramble. Top with avocado, a squeeze of fresh lemon juice, and a sprinkle of cilantro. Serve with hot sauce.

This is my burrito filling recipe. I am bad about measuring and even worse about writing it down and changing it as I go. Feel free to taste test this and add stuff that your family enjoys! Please let me know your ideas! This uses my seasoning recipe #166030 166030. If you are using another, use the amounts specified for that particular one. The amount here would equal two, 1.25 store bought packets.

2 lbs ground turkey, cooked or 2 lbs cooked chicken, cut up and shredded
1 white onions or 4 -6 green onions, chopped
3 garlic cloves, minced
5 tablespoons taco seasoning, Using Taco Seasoning - Budget Friendly Seasoning for Tacos, Burritos..
6 ounces beer or 3/4 cup broth
14 ounces stewed tomatoes or 1 pint tomatoes, home canned
1/4 cup fresh cilantro stem, minced
1 teaspoon sugar (optional)

Steps:

  • Saute onion in a large skillet adding garlic and cilantro during the last minute or two.
  • Add meat and seasonings and stir well. Allow to saute for a minute or two, letting the meat absorb some of the flavors.
  • When it seems that it is really dry and the mixture is starting to stick add the tomatoes and liquid and scrape all the browned bits from the bottom. TONS of flavor there. Add sugar if using. ( The sugar makes the tomatoes taste more like home grown and home canned or even organic).
  • Reduce heat to simmer and cook for 20 minutes or so. When you are ready to use the mixture return heat to high and cook off almost all the liquid so that your filling is not runny or wet.
  • Use to fill tortillas or in a casserole.

ADZUKI BEAN TACO/BURRITO FILLING

These small red beans have a texture and flavor that approximates ground beef, in my opinion, but you could also use black beans or pinto beans in this recipe. Cooking time includes soaking the beans overnight.

1 cup dry adzuki beans
6 -8 cups water
1 tablespoon olive oil
1 onion
3 garlic cloves
2 cubes vegetarian chicken-flavored bouillon or 2 vegetarian beef-flavored bouillon
1 bay leaf
2 tablespoons taco seasoning
1 tablespoon crushed red pepper flakes (optional)

Steps:

  • Soak beans overnight in 4 cups water.
  • Drain and rinse.
  • In a large pot, sautee onions and garlic in oil.
  • Add beans and 2-4 cups of water (enough to cover). Bring to a simmer.
  • Add bouillon and bay leaf. Cook 1 hour, adding more water if necessary.
  • Add taco seasoning and crushed red pepper. Cook an additional 30 minutes or until water is reduced.
  • Remove bay leaf. Mash or blend about half the beans (I use an immersion blender) until the texture is similar to taco meat. Taste and stir in more seasonings if desired.

4 lime wedges

Steps:

  • Preheat oven to 350°F. Wrap tortillas in foil. Place in oven until heated through, about 15 minutes.
  • Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add onion and sauté until golden, about 5 minutes. Add cumin and turmeric; stir 30 seconds. Add tofu, bell pepper, jalapeño and garlic and sauté until heated through, about 3 minutes. Add cheese and stir until melted, about 1 minute. Season to taste with salt and pepper.
  • Spoon tofu mixture down center of each tortilla, dividing tofu equally. Top with lettuce and cilantro. Squeeze juice from lime wedges over. Wrap tortilla around filling and serve.

1 clove garlic, minced
½ cup chopped onion

½ lime, juiced
½ cup tomato sauce

Steps:

  • Over a medium heat fry the tofu, oil, garlic and onion in a large skillet for 5 minutes. Add the chili powder, paprika, cayenne, cumin, salt, lime juice and tomato sauce to the skillet and stir. Cook for 3 minutes. Stir in the cilantro. Spoon mixture in a serving bowl.
  • Spoon the tofu mixture into taco shells. Top the mixture with lettuce, tomatoes, avocado, Cheddar cheese and salsa.

  • In the bottom of a large mixing bowl, whisk together 1 tablespoon olive oil, soy sauce, chili powder, chipotle chili powder, cumin, garlic powder, and onion powder. Crumble the tofu into small pieces in the bowl. With a fork, stir to combine. The tofu should be in small bits. Toss until the tofu is evenly coated with the spices. I find it fastest and easiest to use my hands.
  • Heat the remaining 1 tablespoon olive oil in a large, ovenproof skillet over medium high. Add the tofu crumbles. Cook, stirring occasionally, until the tofu is dry and the moisture has cooked off, about 6 minutes. Add the black beans, salsa, and nutritional yeast. Cook until warmed through and the salsa liquid has cooked off, about 1 to 2 minutes more.
  • Spread the tofu mixture into an even layer. Place under the broiler and cook until darkened on top, about 4 minutes. Remove from the oven, stir to expose new parts of the tofu to the top, then spread back into a single layer. Return to the oven and broil 4 additional minutes. Remove from the oven and repeat the stirring and broiling once more (3 times total). Pile the filling inside warm tortillas and top with all of your favorite fixings.
