30-MINUTE SPICY SAMBAL NOODLES WITH PAN-FRIED TOFU



30-Minute Spicy Sambal Noodles with Pan-Fried Tofu image

The amount of sambal oelek you want to use depends on your desired level of spice. If you can't handle much spice, I'd recommend 1 or 2 tablespoons of sambal oelek. If you like spice, use 3 to 4 tablespoons. Feel free to add more or less. You can also substitute the brown sugar with other types of sweeteners, such as coconut sugar, maple syrup, or honey (if you're not vegan).

14 to 16 ounces super firm tofu (see note 1)
2 tablespoons safflower oil (see note 2)
pinch of kosher salt
10 ounces rice noodles
2 tablespoons safflower oil
1/2 cup thinly sliced shallots
1 tablespoon minced garlic
1/2 tablespoon minced ginger
1 cup tomato sauce (can use crushed tomatoes or tomato puree)
3 to 4 tablespoons sambal ulek (sambal oelek)
1 tablespoon light brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground coriander (optional)
1/4 cup canned coconut milk
sliced scallions for garnish

Steps:

  • Cut the tofu into 1/2-inch slices. Then, cut them in half to get 2 smaller rectangles. Finally, take each rectangle and slice them diagonally to get small tofu triangles.
  • Heat a large nonstick pan with 2 tablespoons of oil over medium-high heat. Add the tofu to the pan. If all the tofu doesn't fit inside the pan, fry the tofu in 2 batches. Sprinkle a pinch of salt over the tofu.
  • Pan fry the tofu for 3 to 4 minutes, until the bottoms are golden brown. Then, flip over the tofu and pan fry the other side for another 3 minutes.
  • Turn off the heat and leave the tofu in the pan and set aside.
  • While you pan fry the tofu, start cooking the noodles. In a large saucepan, bring 2 quarts of water to boil. Add the rice noodles and cook them according to the package directions (I cooked mine for 5 to 6 minutes). Stir the noodles frequently to keep them from sticking together. This is particularly important when you first add the noodles to the saucepan.
  • Once the noodles are cooked, drain the noodles and rinse them under cold water (see note 3).
  • Heat 2 tablespoons of oil in a large skillet over medium heat. Add the shallots and cook them for about 2 to 3 minutes, until they soften. Next, add the minced garlic and ginger, and cook them for 30 seconds to 1 minute, until fragrant.
  • Add the tomato sauce, sambal oelek, brown sugar, salt, and coriander (if using) to the skillet. Stir to combine. Cover the skillet with the lid, and let the sauce cook for 5 to 6 minutes.
  • Uncover the skillet, add the coconut milk, and stir to combine.
  • Scoop out 1/3 cup of the sauce and toss it with the tofu.
  • Add the rice noodles to the remaining sauce and toss to coat the noodles with the sauce. Turn off the heat.
  • Serve the noodles with the tofu. Garnish with sliced scallions, if desired.

Seafood is usually the main ingredients for sambal (eg anchovies, prawn, fish). Usually sambal dishes have dried shrimp so if you usually get the bottled sambal from your supermarkets, do check the ingredients first. Or else, this is a simple recipe that you can try. When I make it I use frozen thawed tofu and instead of sugar and soy I use Kejap manis (but you can't get it everywhere so I have listed the sub)

150 g tofu (fried)
1/2 onion (optional)
4 garlic cloves
4 -5 shallots
1 ripe tomatoes
blended chili (depending how hot you want it to be)
1 tablespoon soy sauce (or to taste)
sugar (to taste)

Steps:

  • If using onion, cut into rings.
  • Blend garlic & shallots (together). Heat some oil in the pan/wok, add onion and the blended items.
  • Stir fry for about 2-3 minutes. Add the blended chilli Give it a stir, blending all ingredients.
  • Wait for a couple of minutes before adding the mashed tomato into the pan. Give a good mix & let the chilli and tomato cook.
  • Add soy sauce & sugar, again mix well. Finally put in tofu. Stir fry till tofu is coated with all ingredients. If you rather have the tofu soft, I suggest you put the lid on for 1-2 minutes. Ready to serve with white rice or fried rice.

  • For The Paste: Saute all the ingredients in the chili oil an once cooled grind to a creamy paste -set aside.
  • Marinate for Tofu: Mix all in a large bowl and keep aside for about 5 to 6 hours If possible marinate overnite. Heat oil in a heavy bottomed wok and fry the tofu in small batch until golden brown. Drain on paper towel and set aside.
  • (A): Heat couple tablespoon of olive oil to a heavy bottomed skillet and splutter the curry leaves and all the Indian whole spice followed by the chopped onions and tomatoes. Saute till the onions turned browned. Then add the fried tofu with the chili powder. Give a good toss and allow them to blend well for about 6 minutes. Finally add the grind paste and cover the with lid. Adjust the level of salt and once the sauce has thicken -remove from flame and transfer to a serving platter garnished with chopped coriander and spring onions.
