BROWN RICE WITH SALMON, AVOCADO, AND TOASTED NORI



Brown Rice with Salmon, Avocado, and Toasted Nori image

This Japanese-inspired dinner is like a deliciously deconstructed salmon-and-avocado roll. This recipe comes from our book "Clean Slate: A Cookbook and Guide."

1 1/4 cups short-grain brown rice
Coarse salt
1 teaspoon canola oil
4 pieces sushi-grade salmon (each about 4 ounces and 1 inch thick)
2 sheets nori
3 tablespoons fresh lemon juice
3 tablespoons reduced-sodium soy sauce
1 1/2 teaspoons hot chile sauce
1 avocado, halved, pitted, peeled, and sliced
1 English cucumber, halved lengthwise and thinly sliced on the bias
1/4 cup cilantro sprigs
1 small Thai chile, thinly sliced, for serving (optional)

Steps:

  • Bring 2 1/2 cups water, rice, and a pinch of salt to a boil in a saucepan. Reduce heat, cover, and simmer until grains are tender and water has been absorbed, 40 to 50 minutes. Remove from heat; let stand 10 minutes, then fluff with a fork.
  • Heat oil in a nonstick pan over high heat. Pat fish dry. Cook fish until golden brown on outside but still rare in center, 1 1/2 to 2 minutes a side. Let cool slightly.
  • Meanwhile, using tongs, toast nori sheets, one at a time, over the flame of a gas burner until they begin to shrivel and become fragrant.
  • Mix together lemon juice, soy sauce, and chile sauce in a bowl. Divide rice among 4 plates and drizzle with half of sauce. Arrange avocado and cucumber on top of rice. Break salmon into chunks and divide among plates. Drizzle with remaining sauce, and top with cilantro and chile. Break nori into pieces and serve on the side.

TOASTED NORI MAYONNAISE



Toasted Nori Mayonnaise image

Try this as a dip, on crackers with smoked fish, or over hard-boiled eggs.

Yield Makes about 1 cup

Number Of Ingredients 4

3 toasted nori sheets, chopped
1 cup mayonnaise
2 teaspoons fresh lime juice
Kosher salt

Steps:

  • Finely grind nori in a spice mill or a blender. Mix nori, mayonnaise, and lime juice in a small bowl; season with salt.
  • Mayonnaise can be made 5 days ahead. Cover and chill.

PAN SEARED WILD ROCKFISH AND SOFT SHELL CRAB TEMPURA WITH GINGER AND YUZU GLAZE, CUCUMBER AND TOASTED NORI



Pan Seared Wild Rockfish and Soft Shell Crab Tempura with Ginger and Yuzu Glaze, Cucumber and Toasted Nori image

1 quart peanut oil, for frying
Canola oil, as needed
1 seedless cucumber, thinly sliced
1/2 tablespoon rice vinegar
1 teaspoon finely chopped ginger
1/2 cup heavy cream
1 lime, about 2 tablespoons
8 ounces jumbo lump crabmeat, picked over
Kosher salt
1/2 cup all-purpose flour
6 (5-ounce) wild rockfish fillets, skin on
6 soft shell crabs, cleaned
Tempura Batter, recipe follows
Yuzu Glaze, recipe follows
Nori Flakes, recipe follows
1/2 bunch scallions, green part only, thinly sliced
2 fresh red chiles, thinly sliced, seeded
Toasted Nori Triangles, recipe follows
1 cup rice flour
1/2 cup cornstarch
2 teaspoons kosher salt
2 teaspoons ground ginger
10 ounces club soda
1 tablespoon minced ginger
1 orange, juiced
1 1/2 cups yuzu juice concentrate
1/2 cup lite soy sauce
1/2 tablespoon Asian chili garlic paste, such as sambal oelek
1/2 cup sugar
1 tablespoon water
4 tablespoons cornstarch
1 sheet nori
1 sheet nori
1 teaspoon sesame oil

Steps:

  • Preheat oven to 375 degrees F. In a deep saucepan, heat canola oil to 375 degrees F.
  • In a medium bowl, toss cucumbers with rice vinegar, set aside.
  • In a small saucepan over medium heat, combine about 1 tablespoon canola oil and the ginger. Cook until fragrant, about 1 minute. Add heavy cream and lime juice, boil until reduced by half. Fold in crabmeat, season mixture with salt, set aside.
  • Place flour on a plate. Season the rockfish with salt and lightly dredge in flour, shaking off the excess.
  • In a large skillet over medium-high heat, heat about 1 tablespoon canola oil. Add rockfish, skin side down, just until skin is crisp, about 2 minutes. Flip and cook to brown other side, about 1 to 2 minutes. Remove fillets to a cutting board, cut fillets in half horizontally. Top half the pieces with the crab mixture and sandwich back together. Wrap portions individually in waxed or parchment paper.
  • Place on a baking sheet and bake until fish is cooked through and crab stuffing is hot, about 5 minutes.
  • Meanwhile, dip crabs in Tempura Batter and fry until lightly brown and crispy, about 3 minutes, drain quickly on paper towel and cut in half.
  • To serve: On the bottom of the plate, place a few cucumber slices. Drizzle with Yuzu Glaze. Remove rockfish from waxed paper and sprinkle sides with some of the Nori Flakes. Place rockfish over cucumber, plate soft shell crab next to fish. Sprinkle with scallions and chilies. Sprinkle with remaining Nori Flakes and stick a Toasted Nori Triangle in each crab half.
  • In a medium stainless steel bowl, whisk together rice flour, cornstarch, salt and ginger. Whisk in club soda. Refrigerate or keep this batter on ice until ready to fry. You may need to whisk in additional flour or water to adjust the batter if it stands.
  • In a small saucepan over medium-high heat, combine ginger, orange juice, yuzu juice, soy sauce and chili garlic paste. Bring to a simmer.
  • Meanwhile, in a medium saucepan over medium-high heat, combine sugar and the 1 tablespoon water. Cook, without stirring, until the mixture turns a dark amber color, about 5 to 10 minutes, swirling the pan occasionally to prevent burning.
  • When the sugar reaches the desired color, carefully whisk in the simmering yuzu mixture. Return to a simmer. Whisk the cornstarch with enough water to form a smooth slurry. Whisk the cornstarch mixture into the yuzu mixture a little at a time, letting it return to a boil between additions, until the mixture has thickened to a glaze. You may not need all of the cornstarch.
  • Tear nori into small pieces. Grind to a fine powder in batches in a coffee or spice grinder.
  • Using a sharp knife cut to cut nori into 12 small triangles.
  • In a medium skillet over medium heat, add sesame oil. Add triangles, cook, turning once, until crisped and shiny on both sides, about 30 seconds to 1 minute per side. Drain on paper towels.

TOASTED SESAME NORI



Toasted Sesame Nori image

This is a very unusual and delicious snack. I'm eating these and trying to convince myself they are crisps (chips). Dairy free, Gluten free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free this comes from the food coach. It keeps for up to two weeks in a sealed box and I like to crush it and sprinkle on meals as a garnish.

4 sheets nori
1/3 tablespoon sesame oil
2/3 tablespoon olive oil
1 pinch sea salt
1 teaspoon sesame seeds

Steps:

  • Preheat oven to 160 degrees Celsius.
  • Lay the nori sheets flat on a baking tray.
  • Combine the oils and using a pastry brush, brush the oil over the top surface of each sheet.
  • Sprinkle the sea salt and sesame over the oiled surface and roast in the oven for 5 minutes.
  • Leave to cool before cutting into pieces approx 3 cm square.

CRISP NORI CHIPS WITH TOASTED SESAME OIL



Crisp Nori Chips With Toasted Sesame Oil image

8 nori sheets, sold at Asian markets
Sea salt, to taste
Toasted sesame oil as needed

Steps:

  • Heat oven to 250 degrees. Brush or spray one sheet of nori very lightly with a little water and sprinkle it with sea salt. Fold sheet in half and press two sides together (sheets will not bind perfectly; do not worry).
  • Use a pizza cutter or sharp knife to cut layered nori into 1-by-3-inch strips (or any desired size). Transfer strips to a cookie sheet in a single layer. Bake them for about 15 to 20 minutes; they will crisp and darken.
  • When chips are done, carefully slide them off cookie sheet onto racks (they cool quickly). To serve, brush chips gently with sesame oil. Without oil, chips will stay fresh in a covered container for a day or two.

1 teaspoon safflower oil
4 pieces (4 ounces each) sustainable sushi-grade tuna (preferably pole/troll yellowfin or albacore; about 1 inch thick)
2 sheets nori
3 tablespoons fresh lemon juice (from 1 1/2 lemons)
3 tablespoons reduced-sodium soy sauce
1 1/2 teaspoons Sriracha (Asian chili sauce)
1 avocado
2 2/3 cups warm cooked short-grain brown rice (from about 1 1/4 cups uncooked)
6 ounces English cucumber, halved and thinly sliced on the bias into half-moons (2 cups)
1/4 cup cilantro sprigs

Steps:

  • Heat oil in a nonstick pan over high heat. Pat fish dry. Cook fish until golden brown on outside but still quite rare in center, 1 1/2 to 2 minutes per side. Remove from pan; let cool slightly. Meanwhile, toast nori sheets, 1 at a time, using tongs, over a medium-high flame until they begin to shrivel and are fragrant.

TOASTED NORI WITH SESAME SEEDS



Toasted Nori With Sesame Seeds image

You can use these just like gomashio. Mix it with leftover rice and form it into rice balls for a bag lunch! Adapted from Deborah Madison's Vegetarian Cooking for Everyone.

2 sheets nori (Japanese seaweed)
1/2 cup white sesame seeds
2 teaspoons sea salt (or kosher salt-use a little less)
1 teaspoon red pepper flakes (or to taste)

Steps:

  • Toast the nori by passing each sheet repeatedly over a hot burner untli it becomes crisp and the color dulls.
  • Put the sheets together and using scissors, slice them into thin strips, then into squares.
  • Toast the seeds and salt in a dry skillet over medium heat until the seeds begin to color. Grind them just enough for the salt to adhere. You can use a coffee grinder or a mortar and pestle(or your food processor). Combiine with the nori and pepper flakes.
  • Cool, then store in a covered jar so they will stay crisp. Enjoy!
