Tilapia With Sweet Onion Ale Sauce image

Flaky tilapia fillets with a delicious onion, lemon, and beer sauce. Very good served with buttered white or brown rice.

4 tilapia fillets
1 (12 ounce) bottle ale
1 large yellow sweet onion, sliced and seperated into rings
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon garlic salt
salt and pepper
3 tablespoons flour
1 lemon, juice and zest of
1/4 cup butter
1/4 cup olive oil

Steps:

  • Season tilapia fillets on both sides with paprika, cumin, garlic salt, and pepper, then dust with 2 tbsp of the flour. Set aside in fridge.
  • In a large nonstick skillet heat butter and olive oil until medium hot. Be careful not to burn the butter!
  • Add tilapia to pan and brown on first side, about 3-4 minutes. Carefully turn and cook on second side until browned. Remove from pan and tent with foil to keep warm.
  • Add onions to pan and cook over medium heat until soft and slightly browned, about 10 minutes.
  • Dust onions in pan with 1 tbsp of the four. Stir and cook 1 minute.
  • Add to onions the lemon juice, beer, salt, and pepper to taste. Simmer, stirring occasionally, about 10 minutes or until sauce is thickened.
  • Stir in lemon zest and return fish and any juices to pan to heat through.

Tilapia fillets breaded with a crumb mixture of carmelized onions and fresh herbs. The onions add a sweet flavor to the crust.

3/4 lb tilapia fillet
1 cup onion, chopped
1 tablespoon olive oil
3 tablespoons herbs, chopped fine
1 cup plain breadcrumbs
2 eggs, beaten
olive oil (for frying)

Steps:

  • NOTE: Use any fresh herb such as basil, sage, rosemary or a combination.
  • Heat the oil in a heavy pan, add the onion and fry until caramelized (brown).
  • In a separate bowl, combine the bread crumbs and herbs.
  • Add the caramelized onions to the crumb mixture and combine well.
  • Sprinkle the fish with salt and pepper.
  • Dip fish into the beaten egg, then into the crumb mixture and pat lightly to help crumbs adhere to fillet. I usually refrigerate the breaded fish for 15 minutes or so, but this is just my preference.
  • Pan fry in olive oil til crust is golden and fish is of desired doneness, about 5 minute per side.
  • Serve with your favorite side dish. I like mine with plain steamed basmati rice and cold sliced cucumbers.

4 tilapia fillets (6 ounces each)
1/4 teaspoon seasoned salt
1 tablespoon lemon juice
2 tablespoons olive oil
1 small red onion, chopped
1 can (10 ounces) diced tomatoes and green chiles, undrained
3/4 cup chopped roasted sweet red peppers
1/2 cup chicken broth
1/4 cup tomato paste
1 teaspoon garlic powder
1 teaspoon dried oregano
Hot cooked pasta, optional

Steps:

  • Sprinkle fillets with seasoned salt; drizzle with lemon juice. In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add tomatoes, peppers, broth, tomato paste, garlic powder and oregano; cook and stir 2-3 minutes longer., Place fillets over tomato mixture; cook, covered, 6-8 minutes or until fish flakes easily with a fork. If desired, serve with pasta.
