LAYERED MEXICAN DIP

Layered Mexican Dip image

When this was served at an office party, my husband immediately got the recipe so I could fix it at home. Makes a great appetizer when we have friends over to grill but also have used it as a side dish (usually with burgers) and taken it to parties and potluck suppers. You can serve this right after assembling it, or you can make it ahead of time and serve it chilled.

Provided by Marg CaymanDesigns

Categories     Mexican

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 9

1 (16 ounce) can refried beans
2 -4 cups shredded cheddar cheese or 2 -4 cups mozzarella cheese
1 (16 ounce) jar salsa
1 cup sour cream
1/2 cup mayonnaise
1 (1 1/4 ounce) package taco seasoning mix
2 medium tomatoes, diced
1 (2 1/2 ounce) can black olives, diced
1 bunch scallion, diced (optional)

Steps:

  • Mix sour cream, mayo and seasoning together; set aside.
  • Mix vegetables together; set aside.
  • Warm beans (fat-free can be used), spread in an approximately 11x7-inch serving/baking dish. (The original recipe said to warm them. It seems to make them easier to spread, but if I'm going to refrigerate the dip before serving it, I don't bother heating the beans.).
  • Layer half the cheese on top. Follow with a layer of salsa, a layer of sour cream mixture and a layer of vegetable. Top with remaining cheese.
  • Serve with corn chips (scoops size) or tortilla chips.

Category Recipe Roundup
  • Seven-Layer Taco Dip. Seven-layer taco dip is a terrific dip with something for everyone. Each layer adds a little more flavor to an already incredible dish.
  • Mexican Sour Cream Dip. This simple, eight-ingredient dip requires 2 minutes to make. Yep, just 2 minutes. You mix everything in a bowl until it has a smooth consistency, and voila!
  • Tomatillo Salsa Verde. Why buy salsa verde when you can make your own? You need fewer than 10 ingredients, and the process isn’t complicated. Plus, homemade salsa verde tastes so much better.
  • Mexican Street Corn Dip. Street corn is a staple in Mexican culture. You can bring a little of that home with you with Mexican street corn dip. It’s sweet, spicy, herby, and tangy all at once.
  • 5-Minute Taco Dip. This 5-minute taco dip has all the robust flavor of the seven-layer dip above. (Minus the refried beans.) However, you can whip it up in just 5 minutes.
  • Baked Mexican Cheese Dip. Want something supremely creamy and cheesy? You can’t go wrong with baked Mexican cheese dip. It’s so rich and decadent that it’s hard to believe it uses only four ingredients.
  • Cream Cheese Bean Dip. Cream cheese bean dip is a lot like the baked Mexican cheese dip. It’s just as gooey, cheesy, creamy, and rich. The main difference is that it includes refried beans and taco seasoning.
  • Mexican Fiesta Dip. If you want the perfect party dip, look no further than this five-ingredient fiesta dip. It takes 30 minutes to make and is ideal for any occasion.
  • Black Bean Dip. Colorful, chunky, dense, and filling. Those are the words most people use to describe black bean dip. It’s also cool, zesty, and zingy.
  • Queso Verde Corn Dip. Add peppers, onions, and corn to take your queso up a notch. The veggies give it more nutrients and a better, thicker texture. It’s easy to make and still as creamy and cheesy as all good queso dips should be.
