With only a few ingredients and 5 minutes of prep time, you can pull together this sweet, crispy, and juicy 3-Ingredient Apricot Glazed Chicken for your busiest days!

3-4 pounds bone-in (skin-on chicken parts (breasts, thighs, drumsticks, or a combination))
8 ounces Catalina salad dressing
½ jar (about 5-6 ounces ) apricot jam
1 1 ouce envelope dry onion soup mix

Steps:

  • Preheat oven to 350F (180C).
  • For easy clean-up, line a roasting pan or a rimmed baking sheet with aluminum foil and spray with cooking spray.
  • Place chicken, skin-side up, on prepared pan.
  • In a medium bowl, whisk together 3 glaze ingredients.
  • Pour sauce over chicken and spread liberally on each piece.
  • Bake, uncovered, for about 1 hour, or until chicken is cooked through.

These glazes dress up and give some extra taste to baked,grilled or broiled chicken or fish.Use 1/4 Cup jelly. (it shows as 0 on the submission. They are simple & interchangeable.You make them the same way. Remember to use 2 spices with the jelly. Sugar free jelly is fine to use also. Use sugar free jelly if desired. Sometimes I will take a spice from one glaze and a jelly from another.

1/4 cup apple jelly or 1/4 cup red currant jelly
1/4 teaspoon cinnamon or 1/4 teaspoon allspice
1/4 teaspoon ground sage or 1/4 teaspoon ground rosemary
1/4 cup apricot jam or 1/4 cup apricot pineapple jelly
1/4 teaspoon ground cardamom or 1/4 teaspoon poppy seed
1/4 teaspoon ground ginger or 1/4 teaspoon ground cloves
1/4 cup grape jelly
1/4 teaspoon garam masala or 1/4 teaspoon anise seed
1/4 teaspoon ground thyme or 1/4 teaspoon ground cumin

Steps:

  • Heat three ingredients, one jelly and two spices in a microwave proof bowl covered until jelly is melted and spices blended.
  • Take out and stir.
  • Brush the glaze on the last 15 minutes of cooking.
  • Note: I have used some of the glazes on baked applies, baked pears, baked sliced oranges and bananas and pineapple slices.
  • If you cannot have sugar or salt in your diet, this is a great substitute for your meats or fish.

These grilled chicken wings are marinated in tamarind purée, fish sauce, brown sugar, red pepper flakes, and cumin, with more brushed on as they grill.

¾ cup tamarind purée
¼ cup fish sauce
2 Tbsp. light or dark brown sugar
1 Tbsp. crushed red pepper flakes
1 tsp. ground cumin
3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided
4 lb. chicken wings, drumettes and flats separated if desired
¼ small red onion, very thinly sliced, preferably on a mandoline
Cilantro leaves with tender stems and lime wedges (for serving)

Steps:

  • Whisk tamarind purée, fish sauce, brown sugar, red pepper flakes, cumin, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a medium bowl until combined and a loose paste forms. Set tamarind glaze aside.
  • Pat wings dry with paper towels, then season all over with remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt. Place in a large bowl; add half of tamarind glaze and toss to coat. Chill 15 minutes. Set remaining glaze aside.
  • Meanwhile, place onion in a bowl of ice water and set aside.
  • Prepare a grill for medium indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Arrange wings on grate over indirect heat, making sure not to overcrowd. Brush top of each wing with some reserved glaze. Cover and grill 15 minutes. Uncover, turn wings over, and brush other side with glaze. Re-cover and grill until wings are golden brown and a thermometer inserted into the thickest part of a wing registers 165°F, about 15 minutes.
  • Brush wings with more glaze, then move over direct heat and grill until charred in spots, 1-2 minutes per side.
  • Transfer wings to a platter. Drain onion and place on paper towels; pat dry. Scatter onion over wings and top with cilantro. Serve with lime wedges for squeezing over.

  • Place drumsticks in a large ziploc bag or food saver bag, pour remaining marinade over chicken, remove as much air from the bag as you can and seal. Refrigerate 6 hours or overnight, turning the bag a few times while marinating to disperse the marinade for best flavor.
  • Preheat oven to 400˚F. Place rack in center of oven. Line a rimmed baking sheet or large roasting pan with parchment***,
  • Arrange chicken skin-side up, so chicken pieces are not touching. Add enough of the marinade to just coat the bottom of the baking pan and discard anything left in the bag. Bake at 400˚F for 25 minutes. Turn chicken over skin-side down and bake additional 20 minutes. If you want your chicken skin caramelized at the end, remove drumsticks from the oven and turn them over again (skin-side-up), and broil on high for 3-4 minutes or until skins are browned.
