HEALTHY SLOW COOKER CHIPOTLE BEAN CHILI



Healthy Slow Cooker Chipotle Bean Chili image

Nothing beats slowly simmered chili on a cold October day!

Number Of Ingredients 22

2 tablespoons extra virgin olive oil
2 medium yellow onion, chopped
4 cloves garlic, minced or grated
2 tablespoons chili powder
1 tablespoon chipotle chili powder (use more or less to your taste)
1 tablespoon smoked paprika
1 tablespoon dried oregano
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper (use more or less to your taste)
kosher salt and black pepper
1 (6 ounce) can tomato paste
2 red peppers, seeded and chopped
3 carrots, chopped
3-4 cups low sodium vegetable broth
1 (28 ounce) can crushed fire roasted tomatoes
2 tablespoons Worcestershire sauce
1 (14 ounce) can white beans, drained
1 (14 ounce) can pinto beans, drained
1 (14 ounce) can black beans, drained
1 (14 ounce) can kidney beans, drained
yogurt, cheddar cheese, avocado, green onions, and cilantro, for serving

Steps:

  • 1. Heat the olive oil in a large skillet over medium heat. When the oil shimmers, add the onion, garlic, chili powder, chipotle chili powder, paprika, oregano, cumin, cinnamon, cayenne, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Stir in the tomato paste, bell peppers, and carrots. Remove from the heat and add to the bowl of your crockpot.2. To the crockpot, add 2 cups broth, the tomatoes, Worcestershire sauce, and all 4 cans of beans. Season with salt and pepper. Cover and cook on low for 6-7 hours or high for 4-5 hours. If your chili is too thick, add the remaining broth, a little at a time, to thin as desired. 3. Ladle the chili into bowls. Top as desired with yogurt, cheese, avocado, and green onions. Eat and enjoy...preferably with homemade beer bread.

Top as desired with yogurt, cheese, avocado, and green onions. Eat and enjoy...preferably with homemade beer bread.

2 pounds chuck roast, cut into small cubes
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 pounds ground beef
1 pound fresh chorizo
8 cloves garlic, minced
1 large onion, chopped
1 jalapeno, minced
Two 12-ounce bottles pale lager beer
One 14-ounce can chopped tomatoes
1/2 cup tomato paste
2 guajillo chiles
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon Mexican oregano
2 bay leaves
Two 15-ounce cans pinto beans, drained and rinsed
Two 15-ounce cans red kidney beans, drained and rinsed
Two 15-ounce cans black beans, drained and rinsed
1/4 cup masa harina
Diced tomatoes
Cubed avocado
Grated Cheddar cheese
Sour cream
Lime wedges
Fresh cilantro leaves

Steps:

  • Heat a Dutch oven over medium heat. Season the chuck roast with salt and pepper. Add the oil to the pot and sear the chuck roast until browned, 7 to 8 minutes. Remove from the pot. Add the ground beef and chorizo and cook until browned, 7 to 8 minutes; drain off excess fat if necessary. Add the garlic, onion and jalapeno and cook for 2 minutes, then return the chuck roast back to the pot with the beer, tomatoes and tomato paste.
  • Using scissors, snip the guajillo chiles into small strips. Add to the pot and bring to a boil. Mix in the chili powder, cumin, oregano, bay leaves and 2 tablespoons salt. Reduce to a simmer and simmer for 1 1/2 hours.
  • Remove the bay leaves. Add the beans to the pot. Combine the masa and 1/2 cup water in a small bowl, then stir the mixture into the pot. Continue to simmer until the chili thickens slightly, an additional 15 minutes.
  • Serve with fixins: diced tomatoes, cubed avocado, grated Cheddar, sour cream, lime wedges and cilantro leaves.

Adapted from the back of a can of S&W brand tomatoes. My family loves this one, and it's so quick and easy to make. One of my faves, too. The original recipe is kicking spicy, and I had to tone it down for my spice-wimps. They STILL say it is too spicy how I make it. Watch out for those chipotle chilis in adobo sauce. They are extremely hot. I use low sodium tomatoes and low sodium beans whenever possible.

1 lb extra lean ground beef or 1 lb ground turkey breast
1 cup onion, chopped
2 garlic cloves, minced
1 tablespoon chili powder (original recipe called for 2)
1 teaspoon ground cumin (I usually add more of this...for flavor...it's not spicy)
1 (28 ounce) can diced tomatoes
1 tablespoon chipotle chile in adobo, chopped (original recipe called for 3. Buy a can)
1 (15 ounce) can black beans, drained
1 (15 ounce) can pinto beans, drained
1 (15 1/4 ounce) can kidney beans, drained
cilantro (to garnish) (optional)
diced avocado (optional)
sour cream (optional)

Steps:

  • Brown the meat, onion and garlic in a large saucepan over medium high heat, about 3 minutes. Drain.
  • Stir in chili powder, cumin, undrained tomatoes and chipotle peppers. Cook for about 10 minutes or until thickened, stirring occasionally.
  • Add the beans and cook for another 5 minutes.
  • Serve with cilantro, avocado and sour cream, if desired. Corn bread and a nice green salad round out the meal.

1 tablespoon olive oil
1 onion, diced (1 cup)
1 red bell pepper, diced (1 cup)
2 carrots, diced (1/2 cup)
2 teaspoons ground cumin
1 pound extra-lean ground beef (90 percent lean)
One 28-ounce can crushed tomatoes
2 cups water
1 chipotle chile in adobo sauce, seeded and minced
2 teaspoons adobo sauce from the can of chipotles
1/2 teaspoon dried oregano
Salt and freshly ground black pepper
One 15.5-ounce can black beans, drained and rinsed
One 15.5-ounce can kidney beans, drained and rinsed
One 15.5-ounce can pinto beans, drained and rinsed

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.

1 tbsp sunflower oil
1 onion , chopped
1-2 tbsp chipotle paste (depending on how hot you like it)
2 x 400g cans black beans , drained and rinsed
400g can mixed bean , drained and rinsed
2 x 400g cans chopped tomatoes with garlic & herbs
1 heaped tbsp brown sugar
4 eggs
small handful coriander leaves
soured cream , to serve
warm flour tortillas , to serve

Steps:

  • Heat the oil in a deep frying pan and cook the onion for about 5 mins until soft. Add the chipotle paste, beans, tomatoes and sugar, and simmer for about 15-20 mins until thickened. Season to taste.
  • Make 4 holes and crack an egg into each one. Cover and simmer over a low heat for 8-10 mins until the eggs are cooked to your liking. Sprinkle with coriander leaves and serve with a bowl of soured cream and some warm flour tortillas.
