250 g almonds
250 g dark chocolate, broken into bits
250 g sugar
250 g butter, at room temperature
6 eggs
20 g baking powder
1 tablespoon cocoa

Steps:

  • Pre-heat the oven to 350°F.
  • Grind almonds for 5 seconds on speed 6. Transfer to a separate bowl and set aside.
  • Grate chocolate for 5-10 seconds on speed 8. Add to bowl of ground almonds, set aside.
  • Place all remaining ingredients into TM bowl and mix for 20 seconds on speed 7.
  • Through the hole in the lid, add the chocolate and almonds and continue to mix for 30 seconds on speed 6.
  • Put mixture into a lightly greased 22-24cm pan, or large spring form pan lined with baking paper.
  • Bake for approximately 1 hour.

250 g almonds, whole and raw
250 g dark chocolate, check to make sure there are no milk products
250 g sugar
200 g margarine, vegan
300 g tofu, silken
1/4 cup water
2 teaspoons egg substitute
20 g baking powder
2 tablespoons cocoa powder

Steps:

  • Preheat the oven to 180.
  • Grind almonds 5-10 seconds/speed 6. Tip out, set aside.
  • Grind chocolate 5-10 seconds/speed 8. Tip out into the same bowl with the almonds.
  • Place all remaining ingredients into TM bowl. Mix 20 seconds/speed 7.
  • Turn speed down to 4 and add the chocolate and almonds through the hole in the lid. Mix about 30 seconds.
  • Pour into a lightly greased, paper-lined 9 inch square pan.
  • Bake 1 hour - 1 hour 10 minutes. The center will be quite soft and the edges will be crispy. They have a brownie consistency.

Flourless chocolate & almond cake image

This dense, squidgy chocolate and almond cake is perfect for dessert. It's gluten-free - just ensure your cocoa powder and chocolate are, too

200g dark cooking chocolate, chopped into small pieces
200g butter, chopped into small pieces
3 eggs
175g golden caster sugar
100g mascarpone or soft cheese
¼ tsp vanilla extract
100g ground almonds
30g cocoa powder, plus extra to serve

Steps:

  • Heat the oven to 180C/160C fan/ gas 4 and line the base of a 20cm springform tin with baking parchment. Melt the chocolate and butter in a heatproof bowl set over a pan of just-simmering water, or in the microwave in 20-second bursts. Stir, then leave to cool slightly.
  • Meanwhile, tip the eggs and sugar into a second bowl and beat with an electric whisk for 4-5 mins, or until thick and creamy. Add the mascarpone or soft cheese and vanilla, and continue to beat until everything is combined. Lightly fold in the cooled melted chocolate mixture until everything is one even colour, then fold in the almonds. Sift over the cocoa powder and a small pinch of salt, and fold in to combine.
  • Scrape the cake batter into the prepared tin. Put the tin on a baking tray and bake for 35-40 mins until the cake is puffed up and has cracked on top. Remove from the oven and leave to cool in the tin for 30-40 mins - it will deflate as it cools. Serve warm as a chocolate pudding, or leave to cool completely and enjoy as a fudgy brownie cake. Dust with extra cocoa powder before serving.

  • Preheat the oven to 350˚F. Grease the bottom and sides of a 9-inch springform pan. Line the bottom of the pan with a round of parchment paper and grease the paper.
  • Place the chocolate in a heatproof bowl, and microwave it in 30 second intervals, stirring between each, until melted (alternatively, melt the chocolate on the stovetop in a bowl set over a pot of simmering water or in a double boiler). Let cool for five minutes.
  • In a stand mixer with the paddle attachment, combine the eggs and sugar. Beat on high until light in color and doubled in volume, about 2 to 3 minutes. Mix in the salt and vanilla. With the machine running on medium, slowly pour in the chocolate. Stop and scrape down the sides, then add the almond flour. Mix on low until just combined. Transfer the batter to the prepared pan. Bake for 20-22 minutes, or until the top looks dry and a toothpick inserted comes out with few damp crumbs (the toothpick shouldn’t come out clean).
  • Set the pan on a cooling rack and let cool 10 minutes—the cake will sink slightly and the top might crack as it cools. Run a sharp knife around the sides and remove the outer ring. Let the cake cool completely.

  • Bake the cake on the center rack for 23to 26 minutes, or until the top of the cake is set, the sides have started to pull away from the pan, and a wooden toothpick or skewer inserted into the center comes out clean or with just a few moist crumbs.
