Quick and easy orange bread with fresh grated orange zest, golden raisins, and an optional orange lemon glaze.

1/3 cup butter
3/4 cup sugar
2 eggs
1 1/2 Tbsp orange zest (or more for more intense orange flavor)
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 cup plain yogurt
1/2 cup golden raisins, chopped
Optional Glaze
1 teaspoon lemon juice*
1 teaspoon orange juice
1/3 cup powdered sugar (confectioner's sugar)
*If you happen to have Seville oranges, or sour oranges, use this juice instead of the lemon juice.

Steps:

  • Preheat oven and prepare loaf pan: Preheat oven to 350°F. Butter a 4x8-inch loaf pan. To make it easier to remove the loaf from the pan, you may want to lay down a wide strip of parchment paper , along the length of the bottom of the loaf pan, and up the narrow sides. Butter this as well.
  • Beat butter, sugar, eggs, zest: Beat the butter until fluffy, about 2 minutes on high in an electric mixer. Add the sugar and beat for an additional 2 minutes. Add the eggs, one at a time, beating until completely incorporated after each addition. Beat in the orange zest.
  • Whisk together dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon.
  • Add yogurt and dry ingredients to butter sugar mixture: Add the yogurt and dry ingredients by thirds, starting with the yogurt, alternating the additions. Beat only until just incorporated. Mix in the golden raisins.
  • Pour batter into loaf pans and bake: Immediately pour batter into prepared loaf pan. Place in middle rack of 350°F oven. Bake for 45-50 minutes*, until a skewer inserted into the center comes out clean.
  • Cool: Cool on a rack in the pan for 5 minutes. Then remove the loaf from the pan and cool for another 10 to 15 minutes.
  • Prepare glaze: While loaf is cooling, prepare optional glaze if using. Whisk together the lemon juice, orange juice, and powdered sugar until smooth and there are no lumps. Place loaf on a serving plate. Use a toothpick or skinny skewer to poke holes in the top of the loaf and drizzle the glaze over the loaf. *If you are using a 5x9 loaf pan, the loaf will be done earlier. Check at 40 minutes. You can use this recipe for muffins, in which case the cooking time should be 20-25 minutes.

I love when I try a recipe or fix up an old one and something like this comes of it! I found an old recipe in an old church cookbook (which I love to find at thrift shops) and changed a couple minor things...And wow! This is the best orange bread I have ever had! Enjoy!!! Happy Baking!!!

2 c sugar
4 eggs
1 c oil, vegetable or canola
1 tsp pure vanilla extract
zest of 2 oranges, you will use the juice in glaze
2 c buttermilk
3 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ginger powder, optional
1 1/2 c dark chocolate chips or white chocolate chips, optional
GLAZE
juice of 2 oranges
1 1/2-2 c powdered sugar

Steps:

  • 1. Preheat oven to 350. Spray 2 - 9x5 loaf pans and line bottom with parchment paper. (I actually used 2 8x4 pans and 1 - 5 3/4x3 pan)
  • 2. In a mixing bowl, add sugar and eggs, beat on medium high for 3-5 minutes or until creamy and pale yellow. On medium speed, drizzle in oil until fully incorporated, then add vanilla, buttermilk and zest, mixing well.
  • 3. Add flour, baking powder and ginger, mixing until just well combined. Stir in chips, if using. Divide batter between the pans and bake large pans for 55-65 minutes. Medium pans for 50-55 minutes and small pan for 40-45 minutes. (I like to place my pans on an air bake cookie sheet, then the bottoms don't get so browned.)
  • 4. Allow bread to cool 5 minutes in pans, remove to cooling racks. Whisk together orange juice and powdered sugar, drizzle over warm loaves, try to cover tops completely, allowing extra to run over the edges, scrape up the extra off the counter and drizzle over top again, if desired. (I did)
  • 5. Allow to cool then slice and Enjoy!!!

1/4 cup unsalted butter, at room temperature
1/4 cup sugar
1/4 cup brown sugar, packed
2 large eggs
1/2 cup orange juice
1/2 teaspoon vanilla
2 tablespoons grated orange zest
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Confectioners sugar, for serving
Cranberry butter, for serving (recipe follows)

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, cream the butter and both sugars together with an electric mixer. Beat in the eggs, one at a time, then mix in the orange juice, vanilla, and orange zest. Add the flour, baking powder, salt, orange zest, and vanilla and mix together well. Generously butter and flour a 10 inch bundt pan and scoop the batter into it, smoothing the top with a spatula. Bake for 30 to 35 minutes, or until the sides shrink away from the pan and the center of the loaf springs back. Cool the pan on a rack for 10 minutes, then turn out onto a round platter. Sprinkle a little confectioners sugar over the top of the bread and serve warm or at room temperature, accompanied by small pots of cranberry butter.

1 cup white sugar

1 tablespoon grated orange zest
½ cup fresh orange juice

½ cup chopped walnuts
½ cup orange juice
¼ cup white sugar

Steps:

  • Stir together flour, baking powder, salt, and nuts.
  • In a large bowl, beat together butter or margarine and 1 cup sugar. Beat in eggs one at a time. Stir in rind and 1/2 cup juice. Pour in flour mixture, and stir until moistened. Turn into a greased 9 x 5 x 3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Remove loaf from oven, but not from pan.
  • Combine 1/2 cup orange juice with 1/4 cup sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon glaze over hot loaf. Let stand in pan for 10 minutes before removing loaf to rack to cool.

This citrusy monkey bread levels up store-bought biscuit dough into a decadent pull-apart dessert. 2 sticks unsalted butter, melted and cooled, plus more for greasing
2 cans refrigerated biscuit
½ cup granulated sugar
½ cup light brown sugar, packed
1 teaspoon vanilla extract
½ teaspoon kosher salt
2 oranges, zested
1 ½ cups powdered sugar, sifted
2 tablespoons orange juice

Steps:

  • Preheat the oven to 325°F (160°C). Brush a 10-cup Bundt pan with melted butter.
  • Cut each biscuit into quarters and transfer to a large bowl. Add the melted butter, granulated sugar, brown sugar, vanilla, salt, and orange zest and toss to coat the biscuit pieces evenly. Transfer the mixture to the prepared pan and gently press in an even layer.
  • Bake until golden brown and puffed, 50-55 minutes. Transfer the pan to a baking sheet and let cool for 10 minutes, then invert the bread onto the baking sheet and let cool for 20 minutes more.
  • Meanwhile, stir together the powdered sugar and 2 tablespoons orange juice in a small bowl to form a thick glaze. Add more orange juice as needed to achieve your desired consistency.
  • Drizzle the glaze evenly over the cooled bread, then transfer the bread to a platter and serve.
