When fresh sweet corn is out of season, this is a delicious alternative. I call it candy corn...so darn yummy! Enjoy!

Steps:
- In a large skillet over medium heat - combine the corn, sugar, salt, pepper, butter, bacon grease and cream.
- Whisk together the milk and flour and stir into the corn mixture. Continue cooking until the mixture is thickened and corn is cooked through.
- Remove from the burner and stir in the Parmesan cheese and green onion. Serve immediately.

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a 2-quart baking dish.
- Mix flour and sugar together in a bowl; add beaten eggs and beat using an electric mixer until smooth. Stir in creamed corn and whole corn. Pour mixture into melted butter in the baking dish; do not stir.
- Bake in the preheated oven until top is browned, about 1 hour.

- Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
- In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
- In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

I first made this corn for a family gathering. (That means 30 + people of varying ages!) Everyone, from seniors to children liked it. It is simple to make and made with ingredients you can keep on hand. It travels and holds well in a crockpot.

- Melt butter and cream cheese.
- Stir in thawed corn.
- Salt and pepper to taste.
- Cook, stirring occasionally, until the sauce has thickened.
