Sighing at what's leftover from your Christmas feasting? This quick recipe makes ingenious use of the ends of the cheeseboard, odd nuggets of stuffing and even the last spoonfuls of gravy.

Number Of Ingredients 10

1 tbsp olive oil
1 small onion, finely sliced
2 tbsp cranberry sauce
4 smoked streaky bacon rashers
80g leftover stuffing
50g butter, softened
4 thick slices white bread
4 tbsp leftover gravy
4 slices leftover turkey
100g leftover cheese, such as cheddar or gruyère

Steps:

  • Heat the oil in a pan over a medium heat. Fry the onion for 10-15 minutes until browned. Add the cranberry sauce and fry for a few minutes more.
  • Meanwhile, cook the bacon in a frying pan over a medium-high heat for 5 minutes until golden and crisp. Set the bacon aside on kitchen paper, then add the stuffing to the pan. Fry for 3 minutes or until starting to crisp.
  • Butter one side of each bread slice. Put 2 slices, buttered-side down, on a work surface and top each one with 1 tbsp gravy, then layer each with half the onion, bacon, turkey, stuffing, cheese and remaining gravy. Sandwich with the non-buttered side of the remaining 2 bread slices.
  • Heat the grill to high. Melt the rest of the butter in a pan on a medium heat and fry both sandwiches for 3-4 minutes on each side until golden, then put under the grill for 5 minutes more until the cheese is oozing.

This is the version most of our family enjoys every Thanksgiving. There are variations depending on preferences (for instance DH won't eat mustard or mayo - I know weird, huh?) but I am posting the full nine yards and the way I like it. Adjust according to your tastes,but try it this way if you can,it is DA BOMB! ** I have used mashed potatoes in addition to the stuffing; and try it all wrapped up in a large flour tortilla that you grill closed.... (I'd forgo the mayo and mustard though.... DONT leave the cranberry off... it's the highlight!). So many yummy ways to revisit your leftovers! I have one posted for Christmas/Easter Ham dinner too... YUMMY!

1 slice cooked turkey
2 slices bread (I prefer a wheat and grain like Poulsbo for this)
mayonnaise, to taste
mustard, to taste
cream cheese, to taste
cranberry sauce, to taste
prepared stuffing, to taste
1 -2 slice cheddar cheese
2 -3 slices tomatoes
2 leaves romaine lettuce (or preferred lettuce as desired)
2 -3 tablespoons gravy, to moisten dressing if desired

Steps:

  • On one slice of bread mix a bit of mayo and mustard to lightly cover bread.
  • Layer turkey, stuffing/dressing and spoon desired amount of gravy if desired to moisten.
  • Top with tomato, lettuce and cheese.
  • Spread cream cheese and cranberry sauce on final piece of bread.
  • Enjoy (grab a napkin and maybe a fork in case it gets messy!) ;).

Ok, so this has got to be really bad for you, but it's only once a year, and it just tastes SO good!!!!

2 slices ham, christmas ham
2 slices cooked turkey
2 slices gruyere cheese
1 tablespoon cranberry sauce
1 tablespoon prepared stuffing
2 slices thick bread
2 teaspoons butter

Steps:

  • Butter the outsides of the bread.
  • On the unbuttered side, layer the ham, cheese, turkey, cranberry, and stuffing. Put the other slice on top.
  • Cook in a sandwich press until golden brown, and enjoy!

Another family fav using holiday leftovers. There are variations depending on preferences(for instance DH won't eat mustard or mayo - I know weird, huh?) but I am posting the full nine yards and the way I like it. Adjust according to your tastes, but try it this way if you can, it is DA BOMB! ** I have used mashed potatoes in place of the stuffing when we ran out of stuffing....still good. ***NOTE- I use my Recipe #259563 not pie filling.

2 -3 slices honey-baked ham, as much as desired
2 slices bread (I prefer a wheat and grain like Poulsbo for this)
mayonnaise, to taste (optional)
mustard, to taste
cream cheese, to taste
2 -3 ounces apple pie filling, to taste (Drunken Apples - Like Famous Dave's is my preference or applesauce could be subbed if you have no sliced baked apples)
2 -3 ounces baked beans, to taste (lightly smashed so they stay on if desired, Dad's recipe preferred)
1 -2 slice cheddar cheese
2 -3 slices tomatoes
2 leaves romaine lettuce (or preferred lettuce as desired) (optional)
2 -3 ounces mashed potatoes, to taste
2 -3 tablespoons ham gravy, to moisten potatoes if desired (optional)

Steps:

  • On one slice of bread mix a bit of mayo (if used) and mustard to lightly cover bread.
  • Layer ham, baked beans, cheddar, mashed potatoes and spoon desired amount of gravy (if desired to moisten) then spoon a small amount of cinnamon apples on top (although order isn't terribly important).
  • Top with tomato and lettuce.
  • Spread cream cheese on final piece of bread.
  • Enjoy (grab a napkin and maybe a fork in case it gets messy!) ;).
