CHUCK'S AWESOME POUTINE

Number Of Ingredients 14

6 to 8 large Yukon gold potatoes
1 tablespoon vegetable oil
1 shallot, minced
1 small clove garlic, minced
4 cups veal stock
2 tablespoons ketchup
1 tablespoon cider vinegar
1 tablespoon whole green peppercorns
1/2 teaspoon Worcestershire sauce
2 tablespoons butter
2 tablespoons flour
2 cups Cheddar cheese curds* (See Cook's Note)
Salt and freshly ground black pepper, to taste
Vegetable oil, for frying

Steps:

  • Clean and peel potatoes. Using a French fry cutter, cut the potatoes into fries or, alternatively, cut the potatoes into desired size. Place the fries in a large bowl filled with cold water and let sit for 1 hour and up to 24 hours for extra-crispy fries.
  • In a saucepan, heat the vegetable oil on medium heat and saute the shallots and garlic until translucent, about 3 minutes. Add the veal stock, ketchup, cider vinegar, peppercorns, and Worcestershire sauce and bring to a boil.
  • Meanwhile, in a separate saucepan on medium-high heat, melt the butter. Add the flour and stir for 2 to 3 minutes, making a roux. Allow to brown slightly. Whip the roux mixture into the stock and let simmer for about 20 minutes, until reduced by half and thickened. Season the sauce with salt and pepper. Keep warm.
  • In a deep-fryer set to 250 degrees F, blanch the fries in oil for about 2 minutes. Remove the fries and let them rest for about 5 minutes. Then, fry them again for about 2 minutes or until golden brown. Place on a paper towel-lined baking tray to absorb the excess oil. Salt and pepper the fries while hot. Remove the sauce from the stovetop and strain. Plate the fries in a shallow bowl, pour sauce on top and garnish with cheese curds.

1 ripe banana
2 tablespoons yogurt
1 tablespoon honey
Pinch salt
Honeycomb, for garnish
Fresh blueberries, for garnish

Steps:

  • In a blender, combine the oranges, berries, banana, yogurt, honey, and salt, and whip up. Pour into tall glass. Garnish with a little rectangle of honeycomb and fresh blueberries on top.

CHUCK'S RICOTTA CHEESE RISOTTO



Chuck's Ricotta Cheese Risotto image

4 cups chicken stock
1 tablespoon olive oil
2 shallots, finely chopped
1 leek, finely chopped
2 cups Arborio rice
1/4 cup butter
1/2 cup grated Parmigiano-Reggiano cheese
4 cups spinach
2 cups green peas
Sea salt and freshly ground pepper
1 tablespoon canola oil
2 cups shiitake mushrooms
3 cups rock shrimp or any other shrimp you prefer
2 tablespoons butter
Sea salt and freshly ground pepper to taste
1/4 cup fresh parsley leaves, finely chopped
1 handful chive, finely chopped
1 cup ricotta cheese

Steps:

  • For the risotto: In a saucepan, bring the chicken stock to a simmer over medium-low heat.
  • In a large saucepan, cook the shallots and leek in 1 tablespoon oil over medium-low heat, stirring, until softened, for about 5 minutes. Add the rice, stirring until each grain is coated with oil. Add about 3/4 cup of the simmering stock and cook over medium-high heat, stirring constantly, until the stock is absorbed. Continue adding the stock, 3/4 cup at a time, still stirring constantly and letting each batch be absorbed before adding the next. Reduce the heat to moderate if necessary to keep the risotto at a simmer. Continue adding the stock in the same manner until the rice is tender and creamy looking but still al dente, about 20 minutes.
  • Reduce the heat to low, add the butter, Parmigiano-Reggiano cheese, spinach, and green peas. Season with salt and pepper. Mix well. Remove from heat and keep warm.
  • For the sauteed rock shrimp and mushrooms: In a heavy-bottom frying pan, heat the oil and saute the mushrooms for 3 minutes. Add the shrimp and continue sauteing for 3 to 4 minutes. Melt in the butter, season with salt and pepper and set aside.
  • Serve the risotto with the sauteed rock shrimp and mushrooms. Garnish with parsley, chive and a few dollops of ricotta cheese.

1 very small red onion, thinly sliced
1/4 to 1/2 dried habanero chile, stemmed, seeded and finely chopped to a powder, or cayenne pepper to taste
1 medium jicama
2 oranges
1/4 small pineapple
Juice of 1 lime
1 teaspoon salt

Steps:

  • Peel the jicama, including the fibrous layer just beneath the skin. Thinly slice the flesh and then cut into thin 1 inch strips. Place in a bowl. Working over a bowl to catch the juices, peel the oranges and cut between the membranes to remove the sections. Remove the seeds. Transfer the orange sections and juice to the bowl with jicama. Peel and core the pineapple, and trim out any eyes, being careful to save the juice. Cut the pineapple into 1 x 1/8 inch strips and add to the jicama bowl along with the juice. Add the red onion, habanero chile or cayenne pepper, lime juice and salt. Toss well and chill for 30 minutes. Serve cold.
