EASY MEATLOAF RECIPE
My Easy Meatloaf is a kid-friendly classic, easy to pull together and sure to be a hit. You'll love this sweetly saucy, perfectly seasoned baked meatloaf!

Steps:
- Preheat the oven to 350˚F.
- Line a loaf pan with foil and lightly grease both pan and foil. Leave plenty of overlap to make it easier to remove the meatloaf after cooking.
- In a large bowl, mix ground beef, breadcrumbs, onion, egg, ½-cup barbecue sauce, Worcestershire sauce, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but do not overmix or the meatloaf will be tough.
- Shape the beef mixture into a loaf in the prepared pan. Spread the remaining barbecue sauce over the top.
- Bake for 50 minutes, or until the internal temperature registers 165˚F. Let the meatloaf stand for 5 to 10 minutes before cutting.
- Garnish with parsley and serve.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix ground sirloin, bacon, onion, bell pepper, oats, Cheddar cheese, sour cream, Worcestershire sauce, and Cajun seasoning salt in a large bowl; shape into a loaf.
- Line 1 1/2-quart loaf pan with bread slices. Put loaf atop the bread.
- Bake in the preheated oven until no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Stir tomato sauce and brown sugar together in a saucepan over medium heat; simmer until the sugar dissolves. Add Cheddar cheese in small batches, stirring to melt each batch before adding the next. Stir onion and parsley into the sauce and continue cooking until hot, about 5 minutes. Pour sauce over the meatloaf.

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. Pat into two greased 8x4-in. loaf pans. Cover and freeze one meat loaf for up to 3 months., Bake remaining meat loaf, uncovered, at 350° for 50-60 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Transfer to a serving plate; sprinkle with cheese. , To use frozen meat loaf: Thaw in the refrigerator overnight. Bake as directed; sprinkle with cheese.

CRIPPLE CREEK MEATLOAF
Comments by Chef James.T. Ehler: I first used this recipe at the Cripple Creek Country Club in Colorado. This meatloaf was a favorite lunch special in many of the restaurants and hotels I have worked at through the years. It is also a favorite 'employee meal'. Serving Ideas: Serve with a Peppercorn brown sauce. Posters comments: I cut the recipe in half & cook for 1hr. Leftovers are used for a second dinner or meatloaf sandwiches.

Steps:
- Mix all ingredients gently, but well and form into a loaf in a baking pan.
- Do not overmix, as this tends to make for a tough (too firm) meatloaf.
- Mix topping ingredients together and coat top of meatloaf.
- Bake for 1 ½ hours at 350°F
- Cover for first 45 minutes.
