These crispy, lightly browned rings from Della Stamp of Long Beach, California are a healthy alternative to the deep-fried version. Thyme and paprika enhance the flavor of the tender onions.

1 pound sweet onions
3 egg whites
1 cup dry bread crumbs
2 teaspoons dried thyme
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • Cut onions into 1/2-in. slices; separate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain., In a small bowl, beat egg whites until foamy. In another bowl, combine the bread crumbs, thyme, salt, paprika and pepper. Divide the crumb mixture among three large resealable plastic bags. Dip a third of the onions in the egg whites; add a few rings at a time to crumb mixture and shake to coat. Place on a baking sheet coated with cooking spray., Repeat with remaining onions and crumb mixture. Bake at 400° for 20 minutes or until lightly browned and crisp.

6 large yellow onions (about 4 pounds)
4 slices bacon (about 3 ounces), diced
1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1/8 teaspoon kosher salt, plus to taste
Pinch sugar
Freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup heavy cream
3/4 cup grated Gruyere cheese (about 3 ounces)
2 teaspoons Dijon mustard
1 tablespoon unsalted butter, plus for buttering the dish
1/3 cup fresh breadcrumbs

Steps:

  • Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool.
  • Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops.
  • Preheat the oven to 400 degrees F.
  • Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season with pepper and cook, stirring occasionally, until lightly browned, about 12 minutes. Add the wine and cook until dry, scrapping the bottom of the skillet with a wooden spoon to get up any browned bits, about 2 minutes. Stir in the cream and remove from the heat. Remove and discard the herb sprigs. Stir in the cheese and mustard.
  • Lightly butter a baking dish. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish.
  • Heat the butter in the skillet. Add the breadcrumbs and stir until they absorb the butter. Spoon the buttered breadcrumbs on top of each onion.
  • Roast the onions until well browned and heated through, about 40 minutes. Serve warm or at room temperature.

1 sweet onion
1 teaspoon butter
1 beef bouillon cube

Steps:

  • Peel the onion. Using a paring knife, cut out a cone-shaped piece from the core, going about 1/2 to 1/3 of the way down through he core. Do not core the onion all the way through. Then, make some cuts inside the hole going into the inside of the onion, without going through the outer skin. This will allow the seasonings to penetrate the onion and infuse it with flavor. Place the butter and then the bouillon cube into the hole. Pack it all down into the hole using the back of a spoon. Microwave for 4 minutes. Let it rest for 1 minute before handling. Carefully remove from the microwave--mmmmm, smells heavenly. Remove the onion from the Stone Wave with a large spoon and place in a large bowl. Cut up the onion. Use it meat toppings or any recipe that calls for sautéed onions. Or make a fabulous onion soup right in Stone Wave. FRENCH ONION SOUP - Place desired amount of cooked onions (from recipe above) in Stone Wave. Add room-temperature beef stock or beef broth to about 1/4 inch from the top. Sprinkle in some grated parmesan cheese. Add a toasted baguette or some packaged seasoned croutons. Top with a slice of your favorite-cheese such as gruyere, Swiss, provolone or mozzarella. Put on the lid and cook for 1-1/2 minutes.

4 tablespoons butter or 4 tablespoons margarine
Italian dressing, for topping

Steps:

  • Preheat oven to 350.
  • Cut stem and root off onions and place stem side up in center of aluminum foil. Place one tablespoon of butter or margerine on top of each onion, then wrap up so that the foil has a point on top. Make sure it is wrapped good.
  • Place onions on a baking sheet and bake for 1-2 hours, depending on how soft you want them.
  • When finished, open up the top of the tin foil and pour the Italian dressing on top to taste. I like to use a lot.
