QUICK AND EASY THAI RED CURRY



Quick and Easy Thai Red Curry image

A fabulously flavorful Asian curry, once you've made it you'll never have take-out again!

2 teaspoons lemongrass paste
5-10 Peppadew Piquante Peppers (mild or hot depending on taste)
4 cloves of garlic (peeled)
3 green onions/spring onions
2 tablespoons lime juice
a big bunch of fresh coriander/cilantro
3 Peppadew jarred roasted red peppers
2 tablespoons tomato paste
1 tablespoon fish sauce
2 tablespoons soy sauce
1 inch piece of fresh ginger. peeled
olive oil
1 14-ounce can coconut milk
cooked (meat, vegetables or fish of your choice)

Steps:

  • Place the lemongrass paste, Peppers, garlic, green onions, lime juice, cilantro, roasted red peppers tomato paste, fish sauce, soy sauce, and ginger into a food processor and blitz on high until smooth (stopping to scrape the edges from time to time).
  • Heat a tablespoon of olive oil in a pan on medium-high heat.
  • Add the curry paste and cook for about 3 minutes.
  • Add the coconut milk, stir, and lower the heat to medium-low. Simmer the sauce for 10 minutes.
  • Add cooked meat, vegetables or fish of your choice and serve on rice.
  • NOTE: I cooked a pound of raw, cleaned shrimp in the sauce for about 4-5 minutes from frozen.

2 tsp vegetable oil
1 shallot, finely chopped
4 tbsp vegan Thai red curry paste
400ml Alpro coconut drink, unsweetened
400ml vegan vegetable stock
300g butternut squash, cut into 2cm cubes
150g baby potatoes, halved
150g green beans, trimmed
60g baby spinach leaves
100g shelled edamame beans
1 tbsp low sodium soy sauce or tamari
2 limes, juiced
coriander or Thai basil leaves, to serve (optional)
cooked brown rice, to serve
1 large cucumber
4 tbsp rice vinegar
pinch of chilli flakes

Steps:

  • To make the pickled cucumber, split the cucumber in half, remove the core with a teaspoon and discard. Cut the cucumber halves into thin semi-circles, then toss in a bowl with the vinegar, chilli and a pinch of salt. Leave to pickle while you make the curry.
  • Heat the oil in a deep frying pan over a medium heat. Add the shallot and fry for 5 mins until soft, then stir in the curry paste and cook for 2-3 mins until fragrant. Tip in the coconut milk and stock and bring to a simmer.
  • Add the squash and potatoes and cook uncovered for 20 mins until the potatoes are tender and the sauce has reduced and thickened slightly.
  • Stir in the green beans, spinach and edamame and cook for 4 mins more until tender. Season with the soy and lime juice and sprinkle over the coriander or Thai basil, if using. Serve in bowls over the rice with the pickled cucumber alongside.

Forget ordering takeaway and make your own Thai red curry at home. This classic dish takes just 15 minutes to prep and it's bursting with flavour.

1tbsp vegetable oil
1tbsp ginger & garlic paste
red curry paste
800ml coconut milk
8 skinless, boneless chicken thighs, cut into large chunks
4 lime leaves (ideally fresh)
2tbsp fish sauce
1tsp brown sugar
Thai basil
basil or coriander, plus extra to serve
1 red chilli, sliced diagonally
thumb-sized piece ginger, cut into matchsticks
cooked jasmine rice, to serve

Steps:

  • Heat 1 tbsp vegetable oil in a large saucepan over a medium heat and fry 1 tbsp ginger and 1 tbsp garlic paste for 2 mins. Add 5-6 tbsp red curry paste, sizzle for a few secs, then pour in 800ml coconut milk.
  • Bring to the boil, reduce to a simmer, stir a little and wait for the oil to rise to the surface.
  • Add 8 skinless, boneless chicken thighs, cut into chunks, and lime leaves, and simmer for 12 mins or until the chicken is cooked through.
  • Add 1 tbsp of the fish sauce and a pinch of brown sugar, then taste - if you like it a little saltier, add more fish sauce; if you like it sweeter, add a little more sugar.
  • Bring to the boil, take off the heat and add ½ small pack Thai basil.
  • Spoon the curry into four bowls and top with 1 red chilli, a thumb-sized piece of ginger and a few extra basil leaves. Serve with jasmine rice.
