EASY THAI SHRIMP SOUP



Easy Thai Shrimp Soup image

Skip the take-out and try making this at home - it's unbelievably easy and 10000x tastier and healthier!

Number Of Ingredients 13

1 cup uncooked basmati rice
2 tablespoons unsalted butter
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground black pepper, to taste
2 cloves garlic, minced
1 onion, diced
1 red bell pepper, diced
1 tablespoon freshly grated ginger
2 tablespoon red curry paste
1 (12-ounce) can unsweetened coconut milk
3 cups vegetable stock
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves

Steps:

  • In a large saucepan of 1 1 /2 cups water, cook rice according to package instructions; set aside. Melt butter in a large stockpot or Dutch oven over medium high heat. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Add garlic, onion and bell pepper to the stockpot. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in ginger until fragrant, about 1 minute. Whisk in curry paste until well combined, about 1 minute. Gradually whisk in coconut milk and vegetable stock, and cook, whisking constantly, until incorporated, about 1-2 minutes. Bring to a boil; reduce heat and simmer until slightly thickened, about 8-10 minutes. Stir in rice, shrimp, lime juice and cilantro. Serve immediately.

1 medium onion, chopped
1 tablespoon olive oil
3 cups reduced-sodium chicken broth
1 cup water
1 tablespoon brown sugar
1 tablespoon minced fresh gingerroot
1 tablespoon fish sauce or soy sauce
1 tablespoon red curry paste
1 lemongrass stalk
1 pound uncooked large shrimp, peeled and deveined
1-1/2 cups frozen shelled edamame
1 can (13.66 ounces) light coconut milk
1 can (8-3/4 ounces) whole baby corn, drained and cut in half
1/2 cup bamboo shoots
1/4 cup fresh basil leaves, julienned
1/4 cup minced fresh cilantro
2 tablespoons lime juice
1-1/2 teaspoons grated lime zest
1 teaspoon curry powder

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add the broth, water, brown sugar, ginger, fish sauce, curry paste and lemongrass. Bring to a boil. Reduce heat; carefully stir in shrimp and edamame. Cook, uncovered, for 5-6 minutes or until shrimp turn pink., Add the coconut milk, corn, bamboo shoots, basil, cilantro, lime juice, lime zest and curry powder; heat through. Discard lemongrass.

2 tablespoons olive oil
½ cup red curry paste
1 pound large shrimp, peeled and deveined
2 (14 ounce) cans light coconut milk
3 small leeks, chopped
½ Spanish onion, chopped
3 ounces sliced bamboo shoots, drained
5 tablespoons white sugar
3 tablespoons fish sauce
6 ounces fresh green beans, halved, or more to taste
½ red bell pepper, cut into matchstick-size pieces
½ green bell pepper, cut into matchstick-size pieces
2 scallions, sliced
1 jalapeno pepper, seeded and thinly sliced
1 (8 ounce) can pineapple chunks
3 cups cooked jasmine rice

Steps:

  • Heat oil in a large skillet over medium heat; cook and stir curry paste until fragrant, about 2 minutes. Stir shrimp into paste and cook for 3 minutes. Transfer shrimp to a plate, scraping as much paste back into the skillet as possible.
  • Pour coconut milk into the curry paste. Add leeks, onion, bamboo shoots, sugar, and fish sauce; bring to a boil. Add green beans, red bell pepper, green bell pepper, scallions, and jalapeno pepper and simmer until vegetables are tender, 10 to 15 minutes. Add shrimp and pineapple; cook and stir until shrimp are pink and cooked through, about 5 minutes more. Serve curry over cooked rice.

I know the sound of a soup with pineapple and dried shrimp might not sound that appetizing, but this soup is delicious. I usually add about 1/2 cup of jasmine rice to a bowl and ladle in the soup.

1/2 cup dried shrimp
2 tablespoons minced garlic
1 tablespoon vegetable oil
1 lb pork loin, cut into 1-inch cubes
2/3 cup fish sauce
1 cup fresh pineapple, cut into 1/2-inch cubes
2 teaspoons fresh coarse ground black pepper
2 scallions, chopped

Steps:

  • Soak the dried shrimp in 1/2 cup of cold water for 10 minutes. Drain and set aside.
  • Saute the garlic in the vegetable oil until it is light brown and set aside.
  • In a large pot, bring to a boil 9 1/2 cups of water, then add the pork and fish sauce.
  • Continue boiling for 7 to 10 minutes, or until the pork has cooked.
  • Add the pineapple, pepper, and shrimp. Cover, reduce heat and simmer for 5 to 7 minutes.
  • When ready to serve, stir in the scallions and float sauted garlic on top.

2 tablespoons grated fresh ginger
1 stalk lemon grass, minced
2 teaspoons red curry paste
4 cups chicken broth
3 tablespoons fish sauce
1 tablespoon light brown sugar
3 (13.5 ounce) cans coconut milk
½ pound fresh shiitake mushrooms, sliced
1 pound medium shrimp - peeled and deveined
2 tablespoons fresh lime juice
salt to taste
¼ cup chopped fresh cilantro

Steps:

  • Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Add the shrimp; cook until no longer translucent about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

1 lb medium shrimp, peeled and deveined
1 large red bell pepper, diced
1 medium red onion, diced
2 garlic cloves, chopped
1 red chili peppers or 1 green chili pepper, diced
2 large eggs, beaten
2 cups cooked rice
2 tablespoons fish sauce
2 tablespoons soy sauce (I prefer low-sodium)
2 tablespoons lime juice
1 1/2 cups diced fresh pineapple
1/2 cup dry-roasted cashews
1/2 cup torn cilantro leaf

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat; add shrimp and stir-fry 1 minute or until they turn pink on the outside but are only halfway cooked through. Remove shrimp to a plate with a slotted spoon.
  • Add to skillet bell pepper, onion, garlic, and chile; stir-fry 3 minutes or until onion is translucent. Add eggs and stir-fry 30 seconds.
  • Stir in rice, separating grains with back of spoon, and stir-fry 2 minutes. Add fish sauce, soy sauce, and lime juice; cook, stirring, for 2 minutes.

2 tablespoons vegetable oil
6 garlic cloves, lightly pounded
6 ounces lean boneless pork, sliced across the grain into thin 3-inch strips
2 cups fresh pineapple, cut into bite-sized chunks
1 teaspoon sea salt
2 tablespoons sugar
3 tablespoons fish sauce (namm pla)
6 ounces medium shrimp, peeled and deveined
4 -6 fresh red bird chiles or 2 -3 serrano chilies, sliced into thin slivers
1 teaspoon thai white peppercorns, dry-roasted and ground
10 sprigs cilantro, coarsely chopped

Steps:

  • In a 12 inch skillet, heat the oil over high heat for 1-2 minutes, or until it is very hot and just barely smoking. Add the garlic and cook, stirring and tossing until golden, about 15 seconds.
  • Add the pork and cook, stirring, until cooked through, about 2 minutes.
  • Add the pineapple chunks and cook, stirring, until darkened and soft, 1-2 minutes. Season with the salt, sugar and fish sauce and mix well.
  • Add the shrimp and cook, stirring, until pink, about 1 minute. Add the chiles and mix well.
  • Transfer to a serving plate and sprinkle with the ground peppercorns and the chopped cilantro. Serve immediately.

2 shallots, thinly sliced
1 Thai chili pepper or serrano pepper, seeded and finely chopped
1 can (28 ounces) no-salt-added crushed tomatoes
1/4 cup creamy peanut butter
2 tablespoons reduced-sodium soy sauce or fish sauce
6 cups reduced-sodium chicken broth
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
6 ounces uncooked thick rice noodles
1 cup bean sprouts
4 green onions, sliced
