Salad Dressing:
1/3 cup lime juice (about 3 limes, plus more for serving)
3 tablespoons fish sauce
3 tablespoons soy sauce
2 to 3 teaspoons sugar, to taste
1 to 3 teaspoons chili sauce , to taste
2 cloves garlic, minced
1 teaspoon sesame oil
Salad:
8 ounces dried rice noodles (thin, vermicelli-size)
1 to 2 cups bean sprouts, optional
2 tomatoes, cut, small slices
1 carrot, sliced into matchsticks
4 green onions, finely sliced
1 small green bell pepper, thinly sliced
1 small red or orange bell pepper, thinly sliced
Optional: 1 can shrimp, cooked, drained
1 cup cilantro , fresh leaves, roughly chopped
1/2 cup fresh basil, roughly chopped
1/4 cup dry-roasted peanuts, lightly chopped

Steps:

  • Gather the ingredients.
  • In a cup or small bowl, mix together lime juice , fish sauce, soy sauce, sugar, chili sauce, minced garlic, and sesame oil until the sugar has dissolved.
  • Taste test for a sweet-sour balance, adding more sugar if too sour for your taste. Note that the dressing will taste quite strong and salty now, but will be delicious when combined with the salad.
  • Gather the ingredients.
  • Lightly boil rice noodles until al dente , about 7 minutes.
  • Drain the noodles.
  • Add the optional bean sprouts , if using, while noodles are still hot. Gently toss (the residual heat from the noodles will lightly cook the sprouts), then rinse with cold water to keep from sticking. Set aside to drain.
  • Place noodles and sprouts in a large salad bowl. Add the tomatoes, carrot, green onions, bell peppers, optional shrimp or tofu , and fresh cilantro. Toss to mix.
  • Add half of the dressing plus fresh basil and nuts, tossing well to incorporate. Taste test, adding more or all of the dressing depending on how many noodles you've made. If not salty enough, add more fish sauce or soy sauce. If not spicy enough, add more chili. If too salty, add a little more lime juice. If too sour, add more sugar.
  • Place on a serving platter or in a salad bowl and sprinkle with fresh basil, cilantro, and peanuts.

200g dried egg noodles
2 tsp vegetable oil
25g ginger , finely chopped or grated
3 garlic cloves , finely chopped
2 red chillies , finely chopped
200g frozen peas
300g peeled raw king prawns
2 eggs , lightly beaten
2 tbsp reduced-salt soy sauce
2 limes , 1 juiced, 1 cut into wedges
6 spring onions , sliced
handful chopped coriander , to serve

Steps:

  • Cook the noodles following pack instructions, drain, run under cold water and set aside.
  • Heat the oil in a wok or large pan. Add the ginger, garlic and chilli, and cook for 2-3 mins. Add the peas and prawns, and cook for 3 mins until the prawns are pink and cooked through. Pour in the eggs, stirring all the time to scrape the cooked egg from the bottom of the pan.
  • Add the noodles and cook until hot. Stir through the soy, lime juice and spring onions, sprinkle with coriander and serve with the lime wedges.

1 (12 ounce) package angel hair pasta
3 cups shredded napa cabbage
4 large carrots, shredded
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 small yellow bell pepper, chopped
1 bunch fresh cilantro, chopped
1 bunch fresh green onions, chopped
½ cup chopped peanuts
2 tablespoons toasted black sesame seeds
8 ounces frozen cooked shrimp, thawed and drained
¼ cup peanut butter
2 tablespoons tahini
¼ cup rice wine vinegar
¼ cup sweet chili sauce
5 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon brown sugar
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Break pasta into small pieces and add to boiling water; cook for 8 to 10 minutes or until al dente; drain. In a large bowl, toss together the pasta, cabbage, carrots, green, red and yellow bell peppers, 1/2 of the cilantro, 1/2 of the onions, and shrimp.
  • In a small bowl, stir together the peanut butter, tahini, rice wine vinegar and sweet chile sauce. Season with soy sauce, sesame oil, brown sugar, garlic powder, salt and pepper. Ten minutes before serving, toss the sauce with the cabbage mixture until evenly coated. Garnish with remaining cilantro, green onions, peanuts and black sesame seeds.

3 ounces rice vermicelli or 3 ounces rice noodles
6 ounces snap peas, cut crossways in half, if large (mangetouts)
5 tablespoons lime juice
4 tablespoons Thai fish sauce
1 tablespoon white sugar
1 inch piece fresh gingerroot, peeled and chopped finely
1 fresh red chili pepper, deseeded and sliced thinly on the diagonal
4 tablespoons chopped fresh coriander or 4 tablespoons mint
4 pieces cucumbers, peeled deseeded and diced
2 spring onions, sliced thinly on the diagona
16 -20 large cooked prawns
2 tablespoons chopped unsalted peanuts or 2 tablespoons cashews
4 whole cooked prawns
lemon slice (to garnish)

Steps:

  • Put the rice noodles in a large bowl and pour in enough hot water to cover them. Leave them to stand for about 4 minutes until soft. Drain and rinse under cold running water, drain again and set aside.
  • Bring a saucepan of water to the boil. Add the mangetouts and return to boil. Simmer for 1 minute. Drain, rinse under cold running water until cold, then drain again and set aside.
  • In a large bowl, whisk together the lime juice, fish sauce, sugar, ginger, chili and coriander. Stir the cucumbers and spring onions into mixture. Add the drained noodles, the mangetouts and the prawns. Toss the salad gently together until the ingredients are coated with the sauce.
  • Divide the noodle salad among 4 large plates. Sprinkle with chopped coriander and peanuts [if using], then garnish each plate with a whole prawn and a lemon slice.
  • Serve immediately.

200g glass noodles (available from thai-food-online.co.uk) or rice vermicelli
1 tbsp vegetable oil
3 spring onions , sliced
2 lemongrass stalks , sliced
300g raw jumbo king prawns
small handful mint
small handful coriander
small handful Thai basil
½ cucumber , cut into matchsticks
1 red bird's-eye chilli , roughly chopped
2 garlic cloves
2 limes , juiced
2 tbsp fish sauce
1 tsp soft brown sugar or palm sugar

Steps:

  • Cook the noodles following pack instructions. Drain, rinse with cold water and set aside.
  • Heat the oil in a frying pan over a medium heat and cook the spring onions and lemongrass for 2 mins or until softened. Add the prawns and cook for 3 mins or until they have turned pink. Tip everything into a large bowl and allow to cool while you make the dressing.
  • Put all the dressing ingredients in a mini chopper and blitz until very finely chopped. Taste and add a little more sugar (to sweeten) and fish sauce (to make saltier), if you like. Tip the noodles into the bowl with the prawns, then add the rest of the ingredients and dressing, and toss really well before serving.

COLD THAI NOODLE SALAD

This is an easy crowd pleaser. I have been making it for years. This is my first attempt to write it down (I may come back and make some edits to the "dressing". I have always just kind of mixed things together. I have found that using some authentic ingredients does make it stand out. Fish Sauce and sriracha hot sauce are availabe in the Asian section of most supermarket today. White pepper is hit or miss. Spice stores and many ethnic grocery stores carry it. The French use it in white sauces so you get the pepper flavor, but you do not the specs. This is not an exacting recipe. If you want is spicier add more hot sauce. If not, use less. More tart add vinegar, etc. Add grilled chicken or cooked shrimp and make it a meal. Prep time is about 30 minutes. It does need to chill 2 hours before serving.

1 lb spaghetti or 1 lb linguine
1/2 cup smooth peanut butter
1/2 cup peanut oil (or canola or lite olive)
1/3 cup low sodium soy sauce
1/3 cup rice wine vinegar
2 tablespoons fish sauce (substitute with 1/4 cup low sodium soy sauce)
2 tablespoons Asian chili sauce, recommend sriracha
2 tablespoons sesame oil
1 tablespoon sugar
1 teaspoon ground pepper (preferably white)
1/2 teaspoon garlic powder
1 cucumber, seeded and chopped
1 red bell pepper, seeded and chopped
1 bunch green onion, chopped (set aside half of chopped green tops)
vegetables (snow peas - 1 cup, chopped Napa cabbage - 1 cup, bean sprouts - 1 cup) (optional)
2 tablespoons sesame seeds
1/4 cup chopped cilantro (optional)

Steps:

  • Cook noodles al dente (do not overcook - mushy noodles won't work).
  • Strain and rinse under cold water until cooled.
  • Mix or wisk together all "dressing" ingredients (peanut butter through garlic power)until blended.
  • In large bowl stir together noodles, 2/3 sauce (reserve 1/3 for later), and vegetables (reserve 1/2 chopped greens from green onion).
  • Chill minimum 2 hours.
  • Transfer to a bowl or platter, if you you want.
  • Before serving pour reserved "dressing" over noodles.
  • Sprinkle sesame seeds and reserved green onions (and cilantro if used).

CRUNCHY PRAWN NOODLE SALAD

100g sugar snap pea , shredded
2 carrots , coarsely grated
100g baby spinach
85g peeled, cooked prawn , defrosted if frozen
1 red chilli , deseeded and finely chopped
3 tbsp rice vinegar
1 tsp caster sugar
1 tsp fish sauce
1 tbsp roughly chopped mint

Steps:

  • Pour boiling water over the noodles to cover, leave for 4 mins, then cool under cold running water. Drain well. Mix the sugar snaps, carrots, spinach, noodles and prawns in a shallow bowl. Mix together the dressing ingredients until the sugar has dissolved, pour over the salad, then toss everything together. Serve straight away.

  • Dry mung bean noodles are very light. Soak the dry mung beans noodles with warm water for about 10 minutes (until soft). Discard the water, drain dry and set aside (use 4 oz of them for this recipe). Boil some water and add in the noodles and cook according to the package instruction (a couple of minutes or until the noodles are just cooked through but not mushy). Remove the noodles and drained. Using the same water, boil the shrimp until they are completely cooked. Remove and set aside.
  • Mix all the ingredients in the Dressing well (make sure the sugar is completely dissolved), set aside.
  • In a salad bowl, mix the mung bean noodles, shrimp, shallots, tomato, cilantro, mint with the Dressing. Toss to blend well. Add the roasted cashew nuts, stir to combine well. Serve immediately at room temperature or chill in the refrigerator for 30 minutes before serving.
