3 tablespoons canola oil
1 tablespoon chopped garlic
1 to 2 tablespoons chopped Thai chile pepper
8 ounces ground chicken breast
1/2 cup sliced white mushrooms
1 1/2 tablespoons fish sauce
1 tablespoon oyster sauce
1/2 tablespoon sugar
1/2 tablespoon sweet soy sauce (optional)
1/3 cup chicken stock
1/2 cup sliced red bell pepper (optional)
1/2 cup Thai holy basil (Ga-Prao)
Salt
Steamed jasmine rice

Steps:

  • Heat the oil in a large saucepan or wok at high heat. Stir in the chopped garlic and cook until it is golden brown. Add the Thai chile pepper and stir well.
  • Add the ground chicken and cook it just halfway done. Reduce the heat to medium and add the mushrooms, fish sauce, oyster sauce, sugar, sweet soy sauce, and chicken stock. Mix well.
  • When all the ingredients are cooked, add the red bell pepper and the Thai holy basil. Mix well and season to taste with salt. Serve over steamed jasmine rice.

This is a recipe that I have had for some time now, and I don't even remember where I got it, but it does sound delicious, so I thought I'd post it - Have fun with it!!

6 boneless skinless chicken breasts, about 2 lb
2 -3 tablespoons vegetable oil
4 cups mushrooms
4 teaspoons fresh ginger, minced
1 medium jalapeno pepper, seeded and finely chopped
1 pepper or 1 two small red chile, seeded and finely chopped
3 garlic cloves, minced
1/4 teaspoon red chili pepper flakes
1 1/4 cups chicken broth or 1 1/4 cups chicken bouillon
4 teaspoons fish sauce
1 1/2 teaspoons sugar
1 green onion, sliced
1/4 cup fresh basil, coasrse chopped (or shredded)

Steps:

  • Cut chicken into bite-size strips, about 1/4-inch wide. Heat 1 tablespoon oil in a large nonstick frying pan set over medium-high heat. Add about half of chicken ad stir-fry until almost cooked, from 3-4 minutes. Remove to a plate. Repeat with remaining chicken, add more oil if needed. Remove to plate.
  • Add remaining oil to pan, then mushroom, ginger, jalapeno, pepper, garlic, and chili flakes. Stir often until lightly browned, about 5 minutes. Stir in broth, fish sauce and sugar. When boiling, add chicken and and any juices that have collected on plate. Cook uncovered, and stirring often, just until chicken is done as you like it, or feels springy to the touch, about 2 minutes. Sti in onion and basil. Taste and add a little more fish sauce if you like.
  • Spoon over rice in individual bowls.

A gorgeous saucy rendition of Thai chicken and mushrooms with basil.

Number Of Ingredients 12

2 tablespoons oil
1 tablespoon minced garlic
1 and 1/2 tablespoon minced ginger
1 pound of boneless skinless chicken thighs, cut into small pieces
1 teaspoon minced lemon grass or 2 tablespoons lime juice
1 tablespoon sriracha sauce
1 tablespoon soy sauce
1 tablespoon fish sauce
1 teaspoon brown sugar
1 and 1/2 cups of thick sliced mushrooms
1 cup chopped thai basil (note: in a pinch you can use sweet basil)
Optional Jasmine rice to serve

Steps:

  • Turn the instant pot onto saute mode. Add in the oil. After a minute, add in the ginger, garlic and lemon grass. Add the chicken and stir in for a minute.
  • Add in chicken thighs, lemon grass, sriracha sauce, soy sauce, fish sauce, sugar and the mushrooms. Cook for a minute.
  • Turn off the saute mode. Add 2 tablespoons of water to glaze and set on 2 minutes of pressure cooking. Do a release after 10 minutes. Remove the lid, if you wish you can turn on the saute mode to reduce the sauce.
  • Stir in the basil and serve over the jasmine rice.

2 cups uncooked jasmine rice
1 quart water
¾ cup coconut milk
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
1 ½ tablespoons fish sauce
¾ teaspoon red pepper flakes
1 tablespoon olive oil
1 medium onion, sliced
2 tablespoons fresh ginger root, minced
3 cloves garlic, minced
2 pounds skinless, boneless chicken breast halves - cut into 1/2 inch strips
3 shiitake mushrooms, sliced
5 green onions, chopped
1 ½ cups chopped fresh basil leaves

Steps:

  • Bring rice and water to a boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.
  • In a bowl, mix the coconut milk, soy sauce, rice wine vinegar, fish sauce, and red pepper flakes.
  • In a skillet or wok, heat the oil over medium-high heat. Stir in the onion, ginger, and garlic, and cook until lightly browned. Mix in chicken strips, and cook about 3 minutes, until browned. Stir in the coconut milk sauce. Continue cooking until sauce is reduced be about 1/3. Mix in mushrooms, green onions, and basil, and cook until heated through. Serve over the cooked rice.

A lovely stir-fry using fresh shiitake mushrooms. If you don't have those, use dried, and soak them in warm water before using.

2 tablespoons vegetable oil
1 onion, cut into slivers
5 cloves garlic, chopped
2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce
2 tablespoons ginger, finely chopped
2 tablespoons chopped fresh mint leaves
8 -10 fresh shiitake mushrooms, sliced
5 green onions, cut into 1 ",pieces
2 -3 fresh Thai red chili peppers, sliced (or 1 tsp. dried red pepper flakes, either optional)
2 tablespoons rice wine vinegar
1 teaspoon granulated sugar
2 tablespoons fish sauce
hot steamed rice

Steps:

  • Heat oil in wok and stir-fry onions until limp; add garlic and stir-fry for 2 minutes more.
  • Remove onion and garlic; add chicken and stir-fry; add soy sauce, ginger, 2/3 of mint leaves, mixing into chicken.
  • Add mushrooms, green onions, chilies, onion, garlic, and cook, until chicken is just cooked and tender.
  • Then quickly season with vinegar, sugar, and fish sauce, stirring well; then remove from heat.
  • Taste for seasoning; add 1 tbsp more fish sauce if you prefer.
  • Garnish with remaining mint; serve with hot steamed rice.

  • In a wok, heat 1/2 tablespoon of the oil over high heat. Add the beans and cook, stirring occasionally, until crisp-tender, about 5 minutes. Transfer to a plate.
  • Add the remaining 2 tablespoons of oil to the wok and heat until smoking. Add the scallions, garlic and salt and stir-fry until the garlic is lightly golden, about 45 seconds. Add the chicken in 3 batches, waiting a few seconds between additions, and stir-fry until it barely turns white, about 2 minutes. Add the mushrooms, corn, jalapeños and green beans and stir-fry until the vegetables are crisp-tender, 2 to 3 minutes. Add the oyster sauce mixture and stir-fry until the chicken is cooked through, about 2 minutes longer. Stir in the basil, transfer to a platter and serve.
