COWBOY MEATLOAF AND POTATO CASSEROLE
Steps:
- Preheat the oven to 375 degrees Fahrenheit. Grease a 9-inch square baking dish with baking spray.
- In a large bowl, stir together the ground beef, onions, bread crumbs, barbecue sauce, beaten egg, and chili powder just until well-combined. Press the meat mixture into the bottom of the greased baking dish.
- Bake it for 20 to 25 minutes, or until cooked through. Test for doneness with a meat thermometer. It should read 160 degrees Fahrenheit.
- While baking, microwave the potatoes according to package instructions in a medium, microwave-safe bowl. Mix in the butter, milk, parsley, and garlic powder until well-combined. Gently mix in the bacon bits and French-fried onions.
- Remove the dish from the oven and turn on the broiler. Top the meat mixture with the potato mix, followed by the shredded cheese.
- Place the baking dish 4 inches from the heat. Broil for 3 to 5 minutes or until the cheese melts. Let the cowboy meatloaf rest for 10 to 15 minutes before slicing. Serve and enjoy!

TEXAS ROADHOUSE ROADKILL COPYCAT
This is one of our favorite meals at Texas Roadhouse. One of the most obvious standout flavors present when you are eating it is its strong seasoning. You really can't be timid with the salt when you're making this recipe or you will be disappointed.

- 1. In bowl mix fresh ground beef with Worcestershire sauce, seasoning salt, A-1 sauce, pepper, and egg. Preheat oven to 400 degrees F
- 2. When thoroughly mixed, loosely shape into 3 football shaped patties. Sear both sides in medium high preheated stove top skillet. They will quickly brown. When brown, flip over and sear the other side.
- 3. Take from skillet and place on an aluminum foil covered broiler pan to save clean up. Place in 400 degree oven for 12 minutes for medium well.
- 4. Clean and Slice button mushrooms and onions and place in olive oil coated skillet or on griddle. Cook onions first, then increase surface heat and add mushrooms. Season with salt, pepper and garlic powder, saute until mushrooms just start to soften. Remove from heat.
- 5. Cover chopped steaks with onion mushroom mixture and place slice of Monterrey Jack cheese over each one. Return for 1-2 minutes in hot oven. Remove and enjoy!

Steps:
- Preheat oven to 350 decgrees.
- In food processor, pulse celery, carrot, bell pepper, garlic and shallots until finely chopped.
- Saute mixture in olive oil over medium heat until soft. Cool.
- Mix all ingredients except parsley and 1 up ketchup until just combined.
- On lightly greased tray, for loaf about 5 inches wide by 2 inches high.
- Evenly coat top and sides with remaining ketckup and sprinkle with chopped parsley.
- Bake until done.

- Preheat oven to 425 degrees
- In a bowl, thoroughly combine the ground beef and pork. In a separate bowl, beat the eggs. Stir in the milk and oats. Pour into the meats. Mix thoroughly.
- Add Worcestershire sauce, tomatoes, celery, onion, green pepper, salt, pepper, herbs and garlic. Mix well.
- Form into oval loaf in a roasting pan. Sprinkle with salt and pepper to taste and lay the bacon lengthwise on top. Bake 50 minutes.
