SAUSAGE AND GNOCCHI SOUP
This easy gnocchi soup calls for canned tomatoes, packaged gnocchi and sausage with Italian flavors for a favorite soup you'll be making for years to come.

Steps:
- In a large dutch oven or stock pot, heat the oil over medium high. Add the sausage, fennel seeds, and red pepper flakes and brown, breaking the sausage apart with wooden spoon. Add the onion and garlic and cook, stirring often, for about 5 minutes or until softened.
- Add the chicken stock, water, tomatoes, Italian seasoning, kosher salt and pepper. Bring to a boil then simmer for 10 minutes. Add the gnocchi and cook until they float to the top, about 5 minutes. Turn off the heat, stir in the spinach and taste for seasoning. Serve hot with a sprinkling of Parmesan cheese.

GUSSIED-UP RAMEN

- Add 2 cups of water to a small pot over high heat. Add the seasoning packet from the instant ramen, along with the ginger, chili paste, mushrooms and garlic. Bring to a boil.
- Add the ramen noodles, green beans and chicken and cook until the noodles are softened and the chicken is heated through, about 3 minutes. Remove from the heat and stir in the spinach and butter. Stir until the butter has melted and the spinach has wilted, about 30 seconds. Transfer to a large bowl.
- Garnish the edge of the bowl with the hoisin sauce, bean sprouts and carrots. Drizzle over the sesame oil and enjoy.
TEX MEX CHICKEN TACO SOUP

- Saute onions, green bell peppers, and garlic in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup. Simmer on low for another 10 minutes. Serve with tortilla chips and grated Monterey jack cheese.

CREAMY GNOCCHI WITH CHORIZO AND PEPPERS

- Heat the vegetable oil in a large skillet over medium-high heat. Add the chorizo, scallions, garlic and orange, red and yellow peppers and cook, stirring occasionally, until the chorizo is browned and has turned the oil red, 6 to 8 minutes.
- Add the tomato paste, Cajun seasoning, salt and pepper, then stir and cook for 1 minute more. Stir in the chicken broth, heavy cream and Worcestershire sauce. Next, add the gnocchi and bring to a simmer. Simmer the mixture until the gnocchi has softened and cooked, 3 to 5 minutes. Stir in the Parmesan and sprinkle with basil leaves to serve.
GNOCCHI WITH CHORIZO AND CORN

- Bring a large pot of salted water to a boil.
- Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the chorizo, garlic and onion and cook until the chorizo is cooked through, 5 to 8 minutes. Drain any excess grease if needed.
- Add the roasted bell peppers, corn and green chiles. Stir to combine. Add the cream and stock and bring to a boil. Allow the sauce to thicken slightly while you cook the gnocchi.
- Drop the gnocchi into the boiling water and stir. Cook briefly, about 1 minute; the gnocchi will float to the top when ready. Using a slotted spoon, transfer the gnocchi to the sauce, then toss to combine.
- Remove the skillet from the heat and add the cheese and butter. Continue to toss until the cheese has melted and everything has come together. Serve garnished with sliced green onions.
