Couscous is paired with roasted corn and tomato and peppers to create a light Tex-Mex side dish for your Mexican night!

Number Of Ingredients 11

1 T and 1 t olive oil (divided)
1/4 c yellow onion (diced)
1 garlic clove (diced)
1/2 c frozen corn (fresh is fine too, whatever you have)
1 c uncooked couscous
1 t salt
1 t cumin
1 t coriander
1/2 c can diced tomatoes with chilies
1 c chicken broth
1 T cilantro (fresh chopped)

Steps:

  • heat a small pan over high heat and add 1 t of oil
  • once hot add frozen corn and cook, stirring occasionally till dark brown in color
  • heat a med sauce pan over med heat
  • add 1 T of oil
  • saute yellow onion and garlic for 2-3 min
  • add in couscous and cook for 1 min
  • stir in cooked corn, tomatoes, salt, cumin, and coriander
  • stir in chicken broth and bring to a boil
  • reduce heat to a simmer, cover and cook for 12 min
  • fluff with a fork and top with cilantro
  • enjoy!

1 (5 1/2 ounce) box of near east original couscous or 3/4 cup uncooked couscous
1 1/2 cups low-fat beef broth
2 teaspoons olive oil
1 1/2 teaspoons cumin
1/2 teaspoon coriander
1/2 teaspoon oregano
1 tablespoon dried onion flakes
1/2 teaspoon cayenne
1/2 teaspoon cilantro

Steps:

  • Bring beef broth, olive oil and spices to a boil.
  • Add couscous, stir, remove from heat and cover.
  • Let stand 5 minutes, fluff and serve.
  • You can also add drained, cooked black beans if you wish.
  • Unfortunately, corn is not allowed on the South Beach Diet.

PAM® Original No-Stick Cooking Spray
1 pkg (20 oz each) lean ground turkey (93% lean)4
1/4 cup Egg Beaters® Original
1/3 cup dry unseasoned bread crumbs
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
2 tablespoons (1/2 of 1.25-oz pkg) 30% less sodium taco seasoning mix
1/4 cup finely shredded Mexican blend cheese

Steps:

  • 1. Preheat oven to 400 degrees F. Spray 12 regular muffin cups with cooking spray.
  • 2. Mix turkey, Egg Beaters, bread crumbs, drained tomatoes plus 1/4 cup reserved liquid and taco seasoning in medium bowl. Form into 12 balls (1/4 cup each) and place in muffin cups. Top each with 1 teaspoon cheese.
  • 3. Bake 18 to 20 minutes or until browned and cooked through (170 degrees F).
