TESSA KIROS CHICKPEA, FETA AND CILANTRO SALAD

Steps:
- Rinse and drain chickpeas and put them in a bowl.
- Heat 3 tablespoons of the olive oil and fry the red onions gently, until it is cooked through and lightly golden. Add the garlic and chili and cook for a few more seconds, until you can smell the garlic. Take care not to brown the garlic. Let cool completely.
- Add feta, scallion, cilantro, parsley and lemon juice to the chickpeas and season with pepper and a pinch more salt, if needed. Add the cooled garlic oil and remaining olive oil and mix very well.

Steps:
- Place the chickpeas in a bowl and add the feta cheese cubes.
- Cut the tomatoes in half if necessary, to make them bite-sized.
- Add tomatoes to the chickpeas and feta cheese mixture. Add the black olives, parsley, and lettuce.
- Combine dressing ingredients in a small bowl.
- Pour over chickpea mixture, toss gently, and chill.
- Serve chilled or at room temperature.
