2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon paprika
1 garlic clove, minced
1/2 teaspoon salt
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch strips
1 package (14 ounces) coleslaw mix
2/3 cup mayonnaise
12 whole wheat pita pocket halves

Steps:

  • In a large bowl, mix oil, thyme, paprika, garlic and 1/4 teaspoon salt until blended. Add chicken; toss to coat. Let stand 10 minutes., Meanwhile, in a large bowl, combine coleslaw mix, mayonnaise and remaining salt; spoon into pita halves. Place chicken on an ungreased baking sheet. Broil 3-4 in. from heat 3-4 minutes on each side or until no longer pink. Fill pitas with chicken strips.

1 lb boneless skinless chicken breast, cut in strips
1/4 cup teriyaki sauce
1 teaspoon garlic, minced
4 whole pita bread rounds, cut in half
8 whole romaine lettuce leaves
2 medium tomatoes, thinly sliced
bean sprouts

Steps:

  • n small bowl, combine chicken strips, teriyaki sauce and garlic.
  • Coat large nonstick skillet with cooking spray.
  • Heat over medium high heat until hot.
  • Add chicken mixture and cook 8 to 10 minutes or until chicken is no longer pink inside.
  • Remove from heat and keep warm.
  • Fill each pita half with lettuce, tomato, chicken and bean sprouts.

TERIYAKI SAUCE
1 cup water
1/4 cup tamari sauce
1/4 cup brown sugar
2 cloves garlic minced
1 tablespoon fresh grated ginger
2 tablespoons cornstarch
1/4 cup cold water
CHICKEN PITAS
1 pound boneless skinless chicken breast half cut in strips
1/4 cup teriyaki sauce
1 teaspoon minced garlic
4 whole pita bread rounds cut in half
8 chopped lettuce leaves
2 medium tomatoes thinly sliced
alfalfa sprouts

Steps:

  • TERIYAKI SAUCE Combine 1 cup water, tamari, brown sugar, garlic, and ginger in a saucepan and bring to a boil, stirring constantly. Dissolve cornstarch in ¼ cup of cold water and add to sauce. Stir constantly to allow the sauce to thicken. If the sauce is too thick, add a little more water or tamari to thin it. CHICKEN PITAS In a small bowl, combine chicken strips, teriyaki sauce, and garlic. Coat a large nonstick skillet with cooking spray. Heat over medium-high heat until hot. Add chicken mixture and cook 8 to 10 minutes or until chicken is no longer pink inside. Remove from heat and keep warm. Fill each pita half with lettuce, tomato, chicken, and alfalfa sprouts. If desired, add additional teriyaki sauce.

2 (4 ounce) boneless skinless chicken breast halves
1/2 cup bean sprouts
1/4 cup diced water chestnut
1/4 cup sliced green onion
1 tablespoon rice vinegar
1 tablespoon minced garlic
1 tablespoon low sodium soy sauce
1 teaspoon sesame oil or 1 teaspoon peanut oil
1 (7 inch) whole wheat pita bread, cut in half crosswise
2 leaves lettuce leaves

Steps:

  • Place chicken in a medium saucepan; add chicken stock to cover. Bring to a boil. Reduce heat to medium, and cook, uncovered, 15 minutes or until chicken is done. Remove from liquid. Let chicken cool to touch. Chop chicken into bite-size pieces.
  • Combine chicken, sprouts, water chestnuts,green onions, and garlic. Combine vinegar, soy sauce, and oil; pour over chicken mixture, tossing gently.
  • Line each pita half with 1 lettuce leaf; spoon chicken mixture evenly into pita halves.
