TENNESSEE ICEBOX COOKIES

3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
16 tablespoons (2 sticks) unsalted butter, softened
2 1/2 cups firmly packed light brown sugar
1 tablespoon vanilla extract
2 large eggs
4 ounces (about 1 cup) coarsely chopped slivered almonds
3 or 4 cookie sheets or jelly roll pans lined with parchment or foil (you will need to cool and reuse them)

Steps:

  • In a bowl, combine the flour, baking soda, and salt; stir will to mix. In the bowl of a standing electric mixer fitted with the paddle attachment, beat the butter and brown sugar together on medium speed until well mixed, about 1 minute, then beat in the vanilla. Beat in the eggs, 1 at a time, beating smooth after each addition. Scrape the bowl and beater well and beat in the flour mixture followed immediately by the almonds.
  • Scrape the dough onto a lightly floured work surface and shape and squeeze it into two rough cylinders, each about 10 inches long and 2 inches in diameter. Roll a piece of parchment or waxed paper around each piece of dough and tighten by pressing it in with the side of a cookie sheet or a piece of stiff cardboard. Chill the dough until firm. Or, at this stage, it can be double-wrapped in plastic, frozen, and kept for up to several weeks.
  • When you are ready to bake the cookies, set the racks in the upper and lower thirds of the oven and preheat to 350 degrees. Slice the cookies 1/4-inch thick, rotating the roll of dough often as you slice so it doesn't become squashed from the weight of the knife. Arrange the cookies on the prepared pans about 1-inch apart in all directions and bake them for about 12 to 15 minutes, until they have puffed somewhat and have become dull and are firm to the touch. Slide the papers from the pans onto racks. After the cookies have cooled, store them between sheets of parchment or waxed paper in a tin or plastic container with a tight-fitting cover.

I was only 11 years old when my mom got this recipe from a church member of ours in Pasadena, TX. It is very similar to the NO BAKE CHOCOLATE OATMEAL COOKIES or BOILED OATMEAL COOKIES. However, it has a few different ingredients and directions and can be made into several variations.

2 c sugar
4 Tbsp cocoa
1 stick butter
1/2 c milk
2 c oats, quick cooking (1 minute)
1 1/2 tsp vanilla extract
3/4 c pecans, coarsely chopped or any variation below
VARIATIONS:
3/4 c coconut, flaked or
3/4 c raisins or
1/2 c pecans & 1/4 cup coconut (combined) or
3/4 c any combination of coconut, raisins and pecans or
1/2 c peanut butter
plain- oatmeal and chocolate-no other additions

Steps:

  • 1. In heavy 2qt-4qt saucepan, mix sugar, cocoa, butter and milk well. Bring to a boil. Start timing, once the mixture begins to boil. Boil on medium heat for at least 4 minutes, stirring frequently.
  • 2. Remove from heat, add oatmeal, vanilla and your choice of pecans or variation of other ingredients. (coconut, raisins, coconut/pecans, peanut butter or leave plain)
  • 3. Stir until well blended and oats all are dark.
  • 4. Drop QUICKLY by spoonfuls onto wax or parchment paper to set.
  • 5. Mrs. Bonnie (whose recipe this is) would make 3 separate batches. One with pecans. one with raisins and one with coconut. I started making them with 1/2 pecans and 1/2 coconut. A friend makes them plain- just oatmeal and chocolate.

I am not sure why these are called Tennessee Cookies. This is a recipe from Nick Malgieri's book, "Cookies Unlimited." The dough for these brown sugar based cookies can be made ahead and used just like purchased cookie dough logs. Prep time does not include chilling the dough.

3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sweet unsalted butter, at room temperature
2 1/2 cups light brown sugar, packed
1 tablespoon vanilla extract
2 large eggs
1 cup slivered almonds, coarsely chopped

Steps:

  • PLAN AHEAD: Dough requires chilling.
  • Combine flour, baking soda, and salt.
  • Beat butter and brown sugar together using an electric mixer until well mixed, just a minute or so.
  • Add vanilla to the butter mixture and beat well.
  • Add eggs to the butter mixture, one at a time, beating to combine well with each addition.
  • You will porbably need to keep scraping down the sides of your bowl with a spatula.
  • Add the flour mixture and beat until combined.
  • Next,beat in the chopped nuts.
  • Place batter onto a floured work surface and divide dough into two equal portions.
  • Shape each portion into a long dough log, about 10 inches long.
  • Roll up each log in parchment paper/waxed paper- you want them to look like rolls of purchased slice'n bake cookie dough.
  • Set logs into a plastic zip-top type bag and chill until firm.
  • (You can freeze this dough up to three weeks, if desired.).
  • TO BAKE: Preheat oven to 350 degrees F.
  • Line baking sheets with parchment paper or foil.
  • Slice cookie logs into 1/4 inch thick rounds using a sharp knife.
  • Set onto baking sheets about 1 inch apart and bake for 12-15 minutes, or until puffed slightly and firm to the touch.
  • These will remain very light in color- do not try to make these turn brown or you'll have burnt cookies.
  • As each batch comes out of the oven, simply slide the paper or foil off of the cookie sheet and let the cookies cool.

BASIC DROP COOKIES

1 1/2 teaspoons coarse salt
1 1/4 teaspoons baking soda
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar (or use dark-brown sugar for deeper flavor and color)
1/2 cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups desired add-ins (semisweet chocolate chips or chunks; coarsely chopped pecans, walnuts, or peanuts; raisins, dried cranberries, dried sour cherries, or chopped dried fruit such as apricots, dates, or figs)

Steps:

  • Prepare oven and pans Heat oven to 350°F, with one rack in center and one rack in bottom third. Line two large cookie sheets with parchment paper.
  • Combine dry ingredients In a bowl, whisk together flour, salt, and baking soda.
  • Cream butter and sugars Place butter and both sugars in a mixing bowl. Mash and stir with a wooden spoon until mixture is very light and fluffy (this can take up to 6 minutes, or 2 to 3 minutes if you're using an electric mixer). Add eggs one at a time, beating until thoroughly incorporated after each. Stir in vanilla.
  • Add dry ingredients and mix-ins Add dry ingredients in three additions, stirring until completely incorporated after each. Stir in desired add-ins. (Or, if making several types of cookies, first divide dough into equal parts and then stir in appropriate amounts of add-ins: 1 rounded cup for dough split in half, 3/4 cup for dough divided into thirds.)
  • Bake and cool Using a 1 1/2-inch ice-cream scoop, drop dough onto prepared baking sheets, about 2 inches apart Bake, rotating sheets top to bottom and back to front halfway through, until golden brown at edges and set in center, 13 to 15 minutes. Let cool on sheets 5 minutes, then transfer to a wire rack to cool completely. Cookies can be stored in an airtight container at room temperature up to 1 week, or frozen up to 1 month.
  • Drop-Cookie Tips
  • If your cookies turn out dense and hard, you might be using ingredients that are too cold and not creaming them enough. If your cookies spread too much in the oven and are too thin, on the other hand, you might be overdoing the creaming step or using ingredients that are too warm. It's worth the time to chill your dough before baking; this will help to control how much it spreads in the oven as it bakes.
  • Sifting Chopped Nuts
  • Before incorporating chopped nuts into doughs or batters, sift out the fine dust in a sieve. This will keep the particles from clouding the color or imparting a grainy texture.

1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature

2-1/2 cups all-purpose flour

2 cups halved pretzel sticks
1 cup coarsely chopped dry roasted peanuts
1 cup semisweet chocolate chunks
1 cup raisins

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. Stir in pretzels, peanuts, chocolate chunks and raisins. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until edges are golden brown, 10-14 minutes. Cool 2 minutes before removing to wire racks.
