In a modern world of Cinnamon Hot Pockets and Pecan Pie Pringles, apple-picking is one of the few agricultural rituals we can all still get our hands into. This cake - a classic from 1973 - is a godsend to anyone who has overloaded at the pick-your-own orchard or overbought at the farmers' market. Like many simple cakes, this one uses neutral oil that lets the fruit flavor come through, rather than show-offy butter.

3 cups flour, plus more for dusting pan
1 1/2 cups vegetable oil
2 cups sugar
3 eggs
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
3 cups peeled, cored and thickly sliced tart apples, like Honeycrisp or Granny Smith
1 cup chopped walnuts
1 cup raisins
Vanilla ice cream (optional)

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 9-inch tube pan. Beat the oil and sugar together in a mixer (fitted with a paddle attachment) while assembling the remaining ingredients. After about 5 minutes, add the eggs and beat until the mixture is creamy.
  • Sift together 3 cups of flour, the salt, cinnamon and baking soda. Stir into the batter. Add the vanilla, apples, walnuts and raisins and stir until combined.
  • Transfer the mixture to the prepared pan. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan before turning out. Serve at room temperature with vanilla ice cream, if desired.

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 1/2 cups peanut, vegetable, or corn oil
2 cups sugar
3 large eggs
1 teaspoon vanilla extract
3 cups peeled, cored, and thickly sliced apples
1 cup chopped walnuts
1 cup raisins
Vanilla ice cream for serving (optional)

Steps:

  • 1. Heat the oven to 350 degrees. Butter and flour a 9-inch tube pan. Sift together the flour, salt, cinnamon, and baking soda.
  • 2. Beat the oil and sugar together in a mixer with a paddle (or in a bowl with a hand mixer) for 5 minutes. Add the eggs and beat until the mixture is creamy. Stir in the dry ingredients. Add the vanilla, apples, walnuts, and raisins and stir until combined.
  • 3. Turn the batter into the prepared pan. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan before turning out.
  • 4. Serve with vanilla ice cream, if desired.
  • Cooking notes:
  • If mixing the batter in a mixer, use a paddle attachment and turn the speed to low once you add the flour mixture, or the texture of the cake will be tough. Even better, mix the rest by hand.
  • The recipe called for Red Delicious or McIntosh apples, but I'd recommend a variety that's brighter in flavor and firmer in texture, such as a Honeycrisp, Macoun, or Granny Smith.
  • The apple slices can be halved if you want a more uniform texture.
  • This cake can be eaten at any time of day, including breakfast. If you serve it for dessert, the recipe suggested a scoop of vanilla ice cream on the side. I prefer to whip 1/2 cup of heavy cream to soft peaks, then fold in crème fraîche to taste.

Though quite straightforward, this recipe for Norwegian apple cake from Nevada Berg's cookbook "North Wild Kitchen" did raise a question. A whole tablespoon of cinnamon? Really? But it was not at all excessive, giving the cake autumnal fragrance and flavor along with a nicely burnished surface. What this recipe also offers is great flexibility. Though it calls for an 8-inch springform, it also worked in a 9-inch and a 10-inch, the latter providing a little less cake in proportion to topping (though no change in cooking time). Larger pans require more fruit. And on that score, in place of apples the recipe works well with fresh figs and peaches. Small purple plums, pears, apricots and even bananas are some other options to consider.

4 tart apples, like Granny Smith
1 cup/227 grams (2 sticks) salted butter, softened, plus more for greasing the pan
2 cups/255 grams all-purpose flour
1 1/2 teaspoons baking powder
1 1/4 cups/250 grams granulated sugar
3 large eggs, at room temperature
1/2 cup/4 ounces whole milk
1/3 cup/32 grams sliced almonds
2 tablespoons dark brown sugar
1 tablespoon cinnamon
Whipped cream or vanilla ice cream for serving

Steps:

  • Peel and core apples; slice 1/2-inch thick. Set aside. Use some of the butter to grease an 8-inch springform cake pan. Dust with a little flour. Heat oven to 350 degrees.
  • Sift or whisk flour with baking powder. Set aside. In the bowl of a standing mixer, beat granulated sugar with 3/4 cup (1 1/2 sticks) of the butter for several minutes, until light and fluffy. Beat in eggs, one at a time, then beat mixture about 3 minutes until creamy. Gradually add flour mixture in three batches, alternating with milk, mixing well after each addition. Transfer batter to pan.
  • Arrange the apple slices on top of batter in tight overlapping concentric circles, gently pressing them in a bit. Scatter almonds on top. Dust with brown sugar and cinnamon. Dot with remaining butter. Place in the oven and bake about 1 hour, until a cake tester comes out clean, the top has browned and feels fairly firm to the touch.
  • Allow to cool in the pan until just warm. Remove sides of pan and serve with whipped cream or ice cream. If cake has cooled completely it can be warmed before serving.

This recipe, which originally appeared in the NY Times in 1973, was recently reprinted...and with good reason! One of my coworkers brought it in after Thanksgiving and it was absolutely delicious. It looks pretty easy to make too.

The name of this cake is somewhat deceiving, since most apple cakes are easier than pie (which is actually never that easy if you're making it from scratch). In any case, it's a simple, excellent cake with a tender crumb, subtle spicing and soft pockets of fruit. Serve it plain, or with a dollop of ice cream, whipped cream or crème fraîche.

1 cup/125 grams unbleached all-purpose flour, more as needed
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
2 ounces/57 grams unsalted butter (1/2 stick), softened
1 cup/200 grams granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 large egg
2 cups diced apples (from about 2 apples)
1/2 cup/57 grams toasted pecans, chopped (optional)

Steps:

  • Heat oven to 350 degrees. In a large bowl, whisk together flour, baking soda and salt.
  • In a mixer bowl fitted with the paddle attachment, cream butter, sugar, vanilla, cinnamon and nutmeg. Add the egg and mix until smooth.

8 ounces (2 sticks) unsalted butter, more for greasing pan
1 1/3 cups plus 1 tablespoon sugar
1/8 teaspoon salt
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
4 Gala or other flavorful apples, peeled, cored and each cut into 8 slices
1/2 teaspoon Calvados or apple brandy
1 teaspoon freshly grated ginger
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch springform pan, and set aside.
  • In bowl of an electric mixer fitted with a whisk attachment, combine remaining 8 ounces butter, 1 1/3 cups sugar and the salt. Mix until blended. Add eggs and whisk until smooth. Using a rubber spatula, gently fold in the flour and baking powder until thoroughly mixed. Fold in a few of the apples, and spread batter evenly in pan.
  • In large bowl, toss remaining apples with Calvados, ginger and cinnamon. Arrange apple slices in closely fitting concentric circles on top of dough; all the slices may not be needed. Sprinkle remaining 1 tablespoon sugar over apples.
  • Bake until a toothpick inserted into center of cake dough comes out clean and apples are golden and tender, about an hour and 15 minutes. Serve warm or at room temperature.

1 pound apples
5 tablespoons butter
5 tablespoons Calvados
3 eggs, separated
1 cup sugar
3 tablespoons vegetable oil
1/2 cup heavy cream
1 package yeast
1 cup all-purpose flour

Steps:

  • Peel apples and dice.
  • In a pan, saute apples in butter until golden. Add Calvados and flambe.
  • In a bowl, rapidly whisk egg yolks, sugar, oil and cream. When blended well, about five minutes, add yeast and flour slowly and continue to whisk until they are well mixed.
  • In a separate bowl, beat egg whites until they peak.
  • Add apples and egg whites to the first bowl. Fold gently.
  • Preheat oven to 390 degrees. Butter a cake mold and pour in batter. Bake for one hour.
