Low-Carb Mediterranean Chicken And Tomato By Kevin Curry Recipe by Tasty image

Kevin Curry of @fitmencook shows us how to make one of his favorite keto-friendly dishes. Sear off chicken thighs and then stir up a creamy sun-dried tomato sauce, all in the same pan! Feel free to customize this recipe to your own liking by swapping out the chicken thighs for chicken breasts or shrimp and using light coconut milk instead of heavy cream.

Number Of Ingredients 13

1 ½ lb boneless skinless chicken thighs
1 teaspoon sea salt, divided
½ teaspoon ground black pepper, divided
1 tablespoon olive oil
1 tablespoon garlic, minced
2 teaspoons dried thyme
1 teaspoon dried rosemary
½ cup chicken stock
⅓ cup sun-dried tomato, chopped
1 cup heavy cream
½ cup grated parmesan cheese
2 tablespoons fresh parsley, for garnish
steam cauliflower rice, for serving

Steps:

  • Preheat the oven to 350°F (180°C).
  • Season the chicken thighs on both sides with ½ teaspoon salt and ¼ teaspoon black pepper.
  • Heat a 10-inch cast iron skillet over high heat. Once the skillet is hot, add the olive oil and the chicken thighs. Cook for 3-4 minutes, or until the edges are seared. Remove the chicken from the skillet and transfer to a clean plate.
  • Reduce the heat to medium-low. Add the garlic thyme, and rosemary to the pan and sauté for 2-3 minutes, until fragrant.
  • Pour in the chicken stock, then add the sun-dried tomatoes and heavy cream. Season with the remaining ½ teaspoon salt and ¼ teaspoon pepper. Bring to a simmer and cook for 1-2 minutes, to let the flavors meld, then add the Parmesan cheese and stir until melted.
  • Return the chicken thighs to the skillet, nestling into the sauce. Drizzle some of the sauce over the chicken.
  • Transfer the skillet to the oven and bake for 15 minutes until the chicken is cooked through.
  • Remove from the oven and let sit for 5 minutes, until cooled slightly and the sauce thickens.
  • Garnish with the parsley, then serve the chicken over cauliflower rice with more sauce spooned on top.
  • Enjoy!

I picked this basic Sri Lankan curry up from some friends of the family and adapted it to suit our tastes. An easy and delicious introduction to South Asian cuisine, this curry is not spicy, but bursting with flavors and easy enough that anyone can make it! If you prefer your curry spicy, simply add your favorite form of heat either during the cooking process or at the table. Cooks up great from frozen in the slow cooker or crock pot too. Enjoy!!

6 - chicken thighs, bone in
7 tablespoon(s) larich's roasted curry powder
4 tablespoon(s) vegetable oil
2 large shallots - chopped
1 medium onion chopped
3 clove(s) garlic - chopped
2 can(s) crushed tomatoes (28 oz)
1 - bay leaf
1 1/2 tablespoon(s) salt
1 1/2 tablespoon(s) sugar
1/2 teaspoon(s) ground black peeper
4 cup(s) cauliflower - bite sized pieces
1 package(s) frozen petite peas
2 medium potatoes -cubed
2 tablespoon(s) ground fresh chile paste (i use sambal oelek)

Steps:

  • Heat curry powder in the bottom of a dry soup pot over medium until fragrant, stirring occasionally to prevent burning - about 3 mins
  • add oil, onions, garlic and shallots and mix well. Should form a paste like consistency..Cook for 3-4 minutes
  • Add Chicken thighs and brown over medium heat for 5-7 minutes turning as required
  • Stir in crushes tomatoes, Salt, Sugar, Bay Leaf,Chile paste and pepper. Mix well and simmer for 60 minutes
  • Add cauliflower and potatoes, simmer for 30 minutes longer
  • Stir in peas for last 5 mins and serve over rice. Enjoy!!

1 tablespoon garam masala
½ tablespoon ground ginger
2 tablespoons white wine vinegar
oil, for frying
1 red chili, chopped
2 cups tomato, chopped
½ cup water
salt, to taste
pepper, to taste
rice, to serve
fresh coriander, to serve, chopped

Steps:

  • Cut the chicken into bite-size pieces.
  • Season the chicken with turmeric, chili powder, cumin, garam masala, ginger, and white wine vinegar, and mix well.
  • Heat oil in a pot over a medium heat. Add the chicken and cook until brown.
  • Add the chili, chopped tomatoes, water, salt, and pepper.
  • Mix well and bring to a boil.
  • Simmer for 1 hour, until the sauce has thickened.
  • Serve with rice and chopped coriander.
  • Enjoy!
