1 ⅓ cups warm water
2 ¼ teaspoons yeast
1 teaspoon sugar
3 ½ cups all-purpose flour
1 teaspoon sea salt
1 tablespoon olive oil, plus 1 additional teaspoon
10 slices deli ham
12 slices provolone cheese
1 teaspoon olive oil
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450ºF (230ºC), and line a sheet tray with parchment paper.
  • In a large bowl, mix the warm water, sugar, and yeast. Let sit for 5 minutes, or until the mixture becomes cloudy and slightly foamy.
  • Add the flour, salt, and 1 tablespoon of oil to the bowl with the yeast mixture and stir until combined.
  • Turn out onto a lightly floured surface and knead for 3-5 minutes.
  • Wipe the large bowl clean and lightly coat with remaining oil. Place the dough into the bowl and cover with plastic wrap and a dish towel
  • Set in a warm place for 20 minutes, or until the dough has nearly doubled in size.
  • Once risen, turn dough out onto a lightly floured surface and stretch the dough into a 12x22-inch (30x56 cm) rectangle.
  • Layer the ham and provolone in the center of the rectangle, lengthwise, leaving 1-2 inches (2 ½-5 cm) on the top and bottom.
  • Slice the dough in half through the center, lengthwise.
  • Fold each piece's center edge towards the outer edge and pat down, creating a long roll-up.
  • Slice each roll into 4-5 equal pieces. Pinch the edges closed on all the pieces and place on sheet tray.
  • Brush the tops with olive oil and sprinkle with Parmesan.
  • Bake for 15-20 minutes, or until light golden brown.
  • Serve immediately or allow to cool, then freeze in an airtight container up to 1-2 months.
  • To reheat, microwave for 45 seconds to 1 minute.

2 sheets puff pastry, thawed
1 cup shredded cheddar cheese
1 cup deli ham, diced
¼ cup mayonnaise
2 tablespoons mustard
2 tablespoons honey
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Place the puff pastry sheets on top of each other on a parchment paper-lined baking sheet. Use a large bowl or plate to cut around the outside, and remove the excess dough.
  • Remove the top piece of puff pastry and sprinkle half of the cheese on the bottom piece, followed by ham and the rest of the cheese. Place the other round of puff pastry on top.
  • Place a mason jar, or glass in the middle of the puff pastry circle. Cut the dough up to the cup, creating strips all the way around.
  • Twist each strip twice, so that it's still attached to the center.
  • Bake for 35-40 minutes or until the crust is golden brown.
  • Mix the mayonnaise, mustard, honey, salt, pepper, and garlic powder together until well combined.
  • Serve the ham and cheese twists with the dip.

4 white fish fillets, skinless
oil, for brushing
4 slices ham
2 ounces sharp cheddar cheese, grated
2 scallions, sliced at an angle
salt and pepper

Steps:

  • Preheat the broiler to high and lightly oil a large shallow heatproof dish. Arrange the fillets in the dish, slightly spaced apart, season with salt and pepper and brush them with a little oil. Broil for 2 minutes.
  • Remove the dish from the broiler, turn the fish over and top each fillet with a scrunched slice of ham. Mix together the cheese and scallions, scatter over the fish.
  • Return to the broiler for 5 minutes until the fish flakes easily when prodded with a knife.
  • Serve with green vegetables - broccoli or stir-fried cabbage would be good.

4 oz cheddar cheese
9 oz ham
15 white breads
butter, or vegetable oil to fry
ice, for ice bath

Steps:

  • Fill a small pot two-thirds full with water and bring to a boil.
  • With a paring knife, poke a small hole into the wider end of the egg. With a spoon, gently lower eggs into the boiling water and boil for precisely 5 minutes.
  • Cut the cheddar cheese into strips, 4 inches (10 cm) long, ¼ inch (½ cm) thick.
  • Roll out a piece of white bread until flat and dense.
  • Place a slice of ham on the bread, then top with a strip of cheddar. Roll up the bread (like a jelly roll) until cheese and ham are entirely covered.
  • Fry the bread rolls for about 4 minutes in a buttered sauté pan over medium-high heat. Turn halfway through when rolls are lightly browned.
  • When eggs are done, carefully transfer them to a bowl of ice water.
  • Meanwhile, use an egg carton to cut out egg holders for each egg.
  • Take eggs out of ice water. Serve with the ham and cheese dunkers.

¼ cup zucchini, sliced
1 cup tomato, chopped

1 cup heavy cream
10 slices ham slice, 1/2 inch (2 cm) piece
15 slices cheese slice, 1/2 inch (2 cm) piece

Steps:

  • Preheat oven to 350°F (177°C).
  • On a floured surface, trim the pie crusts to fit a 9x9-inch (23x23-cm) square pan.
  • Overlap the pie crusts slightly and use a rolling pin to roll out until smooth.
  • Place the large pie crust onto the parchment paper-lined square pan, so that the edges hang over the sides of the pan
  • Line the asparagus stalks along the edge of the pan.
  • Cover the asparagus border with pie the crust, trimming any excess.
  • Place a parchment paper square at the base of the pie crust and add dried beans.
  • Bake the pie crust for 40 minutes.
  • In a bowl, whisk the eggs.
  • Add in the asparagus, zucchini, tomatoes, mozzarella, pepper, salt, and heavy cream, whisking to combine.
  • Pour the mixture into the baked pie crust and bake for another 40 minutes.
  • On a sheet of parchment paper, assemble the ham and cheese lattice.
  • Lay the lattice on top of the quiche.
  • Bake for another 20 minutes.
  • Remove the parchment paper and cut the quiche into 9 servings.

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Unroll cans of dough, separate into triangles.
  • On a large cookie sheet, place a bowl in the center (about 5 inches [12cm] in diameter). Arrange the triangles in a ring around the bowl, dough should overlap.
  • Layer cheese, pepperoncinis, basil, salami, ham, prosciutto, and provolone on each triangle closest to the ring.

6 tablespoons brown sugar

1 cup breadcrumb
3 cups broccoli floret
4 tablespoons olive oil

Steps:

  • Preheat oven to 400°F (200°C)
  • Cut about ¾ of the way through the chicken horizontally, making sure not to cut through the other side. Flip the chicken open and flat.
  • Lay a sheet of plastic wrap on top of the chicken and pound it flatter using a pot or a pan. Remove the plastic wrap.
  • Season with the salt, pepper, and garlic powder, rubbing the seasoning in evenly. Lay 2-3 slices of ham over the chicken, followed by 4 slices of provolone cheese.
  • Carefully roll the chicken up.
  • Transfer the flour, eggs, and breadcrumbs into 3 separate bowls.
  • Dip the chicken roll into the flour, tapping off any excess, and then into the egg, followed by the breadcrumbs. Place on a baking sheet
  • Add the broccoli to the baking sheet, mixing it with the olive oil, salt, and pepper. Make sure to save a little oil to drizzle on top of the chicken.
  • Bake for 20 minutes.
  • Slice, then serve!
