No one ever guesses these sweet "apple" slices are made with zucchini. In fact, there isn't a bit of apple in them. What I like about this yummy recipe is that it makes a lot using economical ingredients. -Lynn Hamilton, Naperville, Illinois

4 cups all-purpose flour
2 cups sugar
1/2 teaspoon salt
1-1/2 cups cold butter, cubed
FILLING:
8 cups sliced peeled zucchini
2/3 cup lemon juice
1 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup chopped walnuts
1/2 cup golden raisins

Steps:

  • In a large bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Press half of the crumb mixture into a greased 15x10x1-in. baking pan. Bake at 375° for 10-12 minutes or until lightly browned. Set remaining crumb mixture aside., Meanwhile, in a large saucepan, bring zucchini and lemon juice to a boil. Reduce heat; cover and simmer for 5-6 minutes or until tender. Drain. Stir in the sugar, cinnamon, nutmeg and 1/2 cup reserved crumb mixture. Cook and stir for 2-3 minutes. Stir in walnuts and raisins. , Spread filling evenly over crust. Sprinkle with remaining crumb mixture. Bake for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into squares.

2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter, cubed
1 egg, separated
3 to 4 tablespoons 2% milk
1 cup crushed cornflakes
9 cups thinly sliced peeled tart apples (about 10 medium)
1 cup plus 2 tablespoons sugar, divided
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. , Preheat oven to 350°. Divide dough in half. Roll one portion into a thin 15x10-in. rectangle. This apple dessert is one of my family's favorites. If you're serving a larger group, I've found that it goes a little further when cut into squares rather than slices like a traditional apple pie."

FILLING:
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 cup water
5 cups thinly sliced peeled apples
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
PASTRY:
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup cold shortening
2 large egg yolks, beaten
1/4 cup cold water
1 tablespoon lemon juice
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon whole milk
1 tablespoon butter, melted
1/2 teaspoon vanilla extract

Steps:

  • For filling, combine sugar, cornstarch and water in a saucepan. Mix until well blended. Add apples; heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from the heat. Stir in spices and lemon juices; set aside., For pastry, combine flour and salt. Cut in shortening until mixture is crumbly. Combine egg yolks, water and lemon juice; blend into flour. Mixture will form a ball. Divided in half. , On a lightly floured surface, roll the dough between two pieces of waxed paper to fit the bottom and halfway up the sides of a 13x9-in. baking pan. Spread filling over pastry. Roll remaining pastry to fit pan exactly; place on top of filling. Fold bottom pastry over top and press to seal. Cut a few small slits in top crust. , Bake at 400° for about 40 minutes or until lightly browned. For glaze, combine all ingredients and drizzle over the warm pastry.

CRUST:
5 c all purpose flour
4 tsp granulated sugar
1/2 tsp salt
1/2 tsp baking powder
1 1/2 c cold solid buttery crisco or regular cold butter
2 large egg yolks, reserve whites
ice cold water
FILLING:
8 c sliced peeled zucchini (about 5#)
2/3 c fresh lemon juice
3/4 c brown sugar, firmly packed
1/4 c granulated sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cream of tartar
3 Tbsp all purpose flour
2/3 c chopped walnuts
1/2 c golden raisins, optional
DRIZZLE:
1 c powdered sugar
2 Tbsp milk

Steps:

  • 1. Preheat oven to 375^. Crust: Combine dry ingredients, cut in cold shortening. Place egg yolks in a measuring cup and stir with fork until blended. Stir in enough cold water to make just a cupful. Sprinkle gradually over dry ingredients; toss with fork to make soft dough. Roll out 1/2 the dough and line a jelly roll pan (15x10-inch)with this 1/2 on bottom and up sides and lip. Set aside.
  • 2. Filling: In a large saucepan, bring zucchini and lemon juice to a boil. Reduce heat; cover and simmer for 5-6 minutes or until tender. Drain. Stir in the sugars, cinnamon, nutmeg cream of tartar and flour. Cook and stir for 2-3 minutes. Stir in nuts and raisins if using.
  • 3. Spread filling evenly over crust. Dot top with a little butter. Top with remaining crust. Seal and crimp edges. Brush with a little milk and sprinkle top with sugar and cut vents for steam or prick top all over with a fork.
  • 4. Bake in oven for about 25-30 minutes or until golden brown, Cool on wire rack. Combine drizzle ingredients and drizzle over top when cool. Cut into squares.

18 saltines, halved
1-1/2 cups sugar
1-1/4 cups water
2 tablespoons lemon juice

From my favourite church cookbook, where all the recipes are tried and true! **Like most of the reviews state, if you don't want to fight with the pastry to make it fit a cookie sheet - make 1.5x the dough recipe or use a smaller pan.

2 1/2 cups flour
1 teaspoon salt
1 cup shortening
1 large egg yolk, slightly beaten, plus (save white)
milk, to make 2/3 cup liquid
5 -6 apples, pared and sliced
1 cup white sugar
2 teaspoons cinnamon
1 cup icing sugar
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • Mix flour and salt and cut in shortening. Add egg and milk mixture and mix till it forms a ball. Divide dough in half. Roll first half in 17 x 12 inch rectangle. Place in cookie sheet and bring pastry up sides.
  • Cover pastry with apples and sprinkle with sugar and cinnamon (homemade chunky applesauce also works well).
  • Roll out second half of dough and place on top of apples. Moisten edges with milk and pinch together.
  • Beat egg white until stiff and brush on crust. Bake at 400°F for 1 hour.
  • Mix glaze ingredients together and brush on crust.
  • This square freezes beautifully.

  • Lightly grease 15 x 10 jelly-roll pan.
  • Prepare Struesel Topping: in medium bowl, with hand, mix all topping ingredients until mixture comes together.

  • Prepare Shortbread Crust: in large bowl, combine flour, sugar, and salt.

  • Remove skillet from heat.
  • Spoon hot apple mixture over warm crust.
  • Break struesel topping into 1/2-inch chunks, and scatter over apple mixture.
  • Bake 30 minutes or until struesel is golden.
  • Cool completely in pan on wire rack.
  • When cool, cut lengthwise into 3 strips, then cut each strip crosswise into 6 pieces.
  • Use wide metal spatula to lift and serve squares.
