FRITTATA WITH PEAS, HERBS AND FETA OR PARMESAN



Frittata With Peas, Herbs and Feta or Parmesan image

This frittata is just one good reason to stock peas in your freezer. My favorite herbs to use are tarragon and chives.

Number Of Ingredients 7

4 eggs
1 tablespoon milk
Salt and freshly ground pepper to taste
1/3 cup fresh peas, steamed or cooked in salted boiling water for 4 to 5 minutes, or 1/3 cup thawed frozen peas
2 to 3 tablespoons chopped fresh herbs, like chives, tarragon or parsley
1 tablespoon, tightly packed, freshly grated Parmesan, or 1 ounce feta, crumbled
2 teaspoons extra virgin olive oil

Steps:

  • Beat the eggs and milk in a bowl with salt and pepper to taste. Stir in the peas, chopped herbs, and Parmesan or feta.
  • Heat the olive oil over medium-high heat in a heavy, 8-inch nonstick omelet pan. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture, scraping in every last bit with a heat-proof rubber spatula. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Once a few layers of egg have cooked during the first couple of minutes of cooking, turn the heat down to low, cover and cook 7 to 10 minutes, until the frittata is puffed and just about set. From time to time remove the lid and loosen the bottom of the omelet with a wooden or heat-proof rubber spatula, tilting the pan, so that the bottom doesn't burn. It will however turn golden.
  • If the frittata is still runny on the top, wearing oven mitts, slide the frittata out onto a plate or even better, a saucepan lid that has a handle, reverse the pan over the plate or lid, and holding the two together, flip the plate or lid so that the frittata goes back into the pan on its not-quite-cooked side. Finish for no longer than a minute, then reverse onto a platter. Allow to cool to room temperature, and serve, or chill. Cut into 4 wedges to serve. The wedges pack well and are very portable.

Tarragon Frittata image

Tarragon is a very fragrant herb; many recipes call for it. It just has a way with eggs. Frittatas can be enjoyed any time of day, not just for breakfast. For the goat cheese, I like Montrachet. If your omelete making skills are a little rusty, just try your best. It will taste good anyway.

5 large eggs
2 tablespoons fresh tarragon, chopped
1 tablespoon fresh chives, chopped
1 tablespoon parsley, chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter (1/4 stick)
1 1/4 cups fresh goat cheese, crumbled (about 4 oz.)

Steps:

  • Whisk eggs, herbs, salt and pepper in medium bowl to blend.
  • Melt 1 tablespoons butter in 9 or 10-inch diameter, nonstick skillet over medium heat.
  • Add half of egg mixture to skillet and cook until very soft set, tilting skillet, running rubber spatula around edges and allowing uncooked egg portion to flow underneath, about 2 minutes.
  • Sprinkle half of goat cheese over. Cover and cook until omelet is set, about 2 minutes.
  • Tilt skillet and slide out omelet onto plate, folding omelet in half.
  • Cover to keep warm.
  • Repeat for second omelet with remaining butter, egg mixture and goat cheese.
  • Serve immediately.

Tarragon enhances the sweetness of the carrots and leeks in this bright frittata.

Number Of Ingredients 9

2 tablespoons extra virgin olive oil
1 1/2 cups finely sliced or diced carrot
1 1/2 cups finely sliced leeks
Salt
freshly ground pepper to taste
2 garlic cloves, minced
8 eggs
2 tablespoons milk
1/4 cup finely chopped tarragon

Steps:

  • Heat 1 tablespoon of the oil over medium heat in a 10-inch heavy nonstick skillet. Add the carrots and leeks. Cook, stirring often, until tender, five to eight minutes. Stir in the garlic, season to taste with salt and pepper. Cook, stirring, for 30 seconds to one minute, and remove from the heat.
  • Beat the eggs and milk together in a large bowl. Stir in salt to taste (about 1/2 teaspoon), pepper, the cooked carrots and leeks, and the tarragon.
  • Clean and dry the pan, and return to the burner, set on medium-high. Heat the remaining tablespoon of olive oil in the skillet. Drop a bit of egg into the pan, and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Tilt the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with a spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
  • Turn the heat to low, cover and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid, tilt the pan and loosen the bottom of the frittata with a wooden spatula so that it doesn't burn. The bottom should turn a golden color. The eggs should be just about set; cook a few minutes longer if they're not.
  • Meanwhile, heat the broiler. Uncover the pan and place under the broiler, not too close to the heat, for one to three minutes, watching very carefully to make sure the top doesn't burn (at most, it should brown very slightly and puff under the broiler). Remove from the heat, shake the pan to make sure the frittata isn't sticking, and allow it to cool for at least five minutes and for as long as 15 minutes. Loosen the edges with a wooden or plastic spatula. Carefully slide from the pan onto a large round platter. Cut into wedges or into smaller bite-size diamonds. Serve hot, warm, at room temperature or cold.

2 Tbsp. KRAFT Zesty Italian Dressing
2 green onion, sliced
4 cups tightly packed baby spinach leaves
1/2 cup fresh herbs (basil, thyme, parsley), chopped
1 clove garlic, minced
6 eggs
1/4 cup KRAFT Grated Parmesan Cheese
1/4 tsp. pepper
1 small shallot, thinly sliced

Steps:

  • Heat oven to 350ºF.
  • Heat dressing in large skillet on medium heat. Add onions; cook and stir 2 to 3 min. or until tender. Stir in spinach, herbs and garlic. Cook and stir 1 min. or until spinach is wilted.
  • Beat eggs with whisk in large bowl. Stir in cheese, pepper and spinach mixture. Spoon into 4 (5-oz.) ramekins sprayed with cooking spray. Sprinkle with shallots.
  • Bake 25 to 30 min. or until golden brown.

This egg dish is true to my Italian heritage. Italians make frittatas with many combinations of ingredients. I'm a creative cook, so I came up with this simple recipe based on how I remember my grandma making this dish. Even at that, I'm not sure I make it the same each time. -T. 1/4 cup chopped onion
1/4 cup chopped green pepper
2 garlic cloves, minced
2 tablespoons olive oil
4 eggs
Salt and pepper to taste
1/2 cup cubed fully cooked ham
1/4 cup grated Parmesan cheese

Steps:

  • In a 6-in. broiler-proof skillet, saute the onion, green pepper and garlic in oil. Reduce heat to medium. In a bowl, beat eggs, salt and pepper. ½ cup artichoke hearts, drained and chopped
½ cup chopped cherry tomatoes
1 (4.5 ounce) can sliced mushrooms, drained
6 eggs
⅓ cup milk
2 green onions, chopped

1 teaspoon dried basil
1 teaspoon onion powder
1 teaspoon salt
ground black pepper to taste
⅓ cup grated Parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a shallow 2-quart baking dish.
  • Heat a skillet over medium heat; cook and stir salami, artichokes, tomatoes, and mushrooms until heated through, about 4 minutes. Transfer salami mixture to baking dish.

1 teaspoon olive oil
1 tablespoon onion, minced
3 eggs, lightly beaten, can use 3/4 cup liquid egg substitute
1/4 cup parmesan cheese, grated, can use Romano, divided
1/2 teaspoon oregano
1 dash black pepper
1 cup spinach, cooked, chopped, and well drained

Steps:

  • Heat the oils in an omelette pan that is ovenproof. Add the onion and cook until clear and tender.
  • In a bowl, combine the eggs with half of the cheese, the oregano, pepper and spinach and mix well.
  • Pour this egg mixture into the skillet with the onion and cook over very low heat until the edges are lightly browned.
  • Sprinkle the remaining cheese over the top and place under the broiler until the cheese is lightly browned.
  • To serve, cut into wedges.
